AUTHENTIC HOMEMADE RANCHERO SAUCE RECIPE



Authentic Homemade Ranchero Sauce Recipe image

This is the best ranchero sauce recipe I have ever tasted, with a base of diced tomato, jalapeno and onion, seasoned with a mixture of chili powders and seasonings. Perfect on huevos rancheros or any Mexican or Tex Mex dish.

1 tablespoon olive oil
1 medium yellow onion (chopped)
2 jalapeno peppers (chopped)
4 cloves garlic (chopped)
16 ounce can diced tomatoes
1 cup chicken broth
¼ cup chopped cilantro (or more as desired)
1 tablespoon ancho powder
1 tablespoon guajillo powder
1 tablespoon chipotle powder
1 teaspoon cayenne
1 teaspoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
Juice from 1 lime (optional)

Steps:

  • Heat a large pan to medium-high heat and add the olive oil.
  • Cook the onions and peppers down about 5 minutes to soften.
  • Add the garlic and cook another minute, stirring a bit.
  • Add the tomato and chicken broth. Stir.
  • Stir in the cilantro and seasonings.
  • Bring to a quick boil then reduce the heat and simmer for 20-25 minutes to let the flavors develop. The sauce will thicken up for you.
  • Transfer the mixture to a blender or food processor and pour in the lime juice. I used my stick blender.
  • Process until nice and smooth.
  • Use immediately or store in the refrigerator in a covered glass container.

12 chilies poblanos
1/3 cup canola oil
2 pounds lean ground round beef
1 cup chopped yellow or green onion
1 garlic clove, chopped
2 cups fresh diced tomatoes
1 teaspoon salt
1/2 teaspoon cumin
1 teaspoon ground black pepper
8 eggs, separated
2 cups flour
3 cups cooking oil
Ranchero Sauce, recipe follows
Queso blanco, shredded, for garnish
Chopped cilantro, for garnish
1/3 cup cooking oil
1 onion, chopped
1 garlic clove, chopped
2 bell peppers, green or red
4 tomatoes, diced
1 can chopped tomatoes
Dash cumin

Steps:

  • Roast the poblanos over a gas flame, turning until blistered and slightly charred all over. Put them in a heavy plastic bag and set aside to steam for 10 to 20 minutes. Peel the skin. Carefully make a lengthwise slit in each of the peppers and remove the seeds and membranes. Rinse and drain well using paper towels pat the peppers dry.
  • Heat oil in a large skillet or saucepan, add meat and brown. Add chopped onion, and garlic stirring for one minute. Add tomatoes, salt, cumin and black pepper and cook for 10 to 15 minutes. Stir constantly until meat stuffing is dry. Set aside to cool.
  • Stuff the peppers with the filling and secure with a toothpick.
  • In a bowl beat egg whites until stiff and foamy. Add egg yolks to egg whites and blend.
  • In a separate bowl add flour for dusting peppers and set aside.
  • In a deep skillet heat the oil. Batter and flour dust peppers and drop into hot oil. Fry to a golden brown on both sides. Lay peppers on paper towels to soak up excess grease. Serve chili rellenos topped with Ranchero Sauce, garnished with shredded queso blanco and chopped cilantro.
  • In skillet heat oil until hot. Brown onion, garlic, peppers, and tomatoes for 2 minutes or until transparent. Add the tomatoes and cumin, and simmer for 10 to 15 minutes until sauce is lumpy. Set aside.

3 quarts vegetable oil
1 1/2 cups pancake mix
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground nutmeg
1/2 cup fat-free milk
1/2 teaspoon pure vanilla extract
1 cup granulated sugar
Chocolate Dipping Sauce, recipe follows
1/2 cup hot fudge sauce
1/4 cup heavy cream
1/4 teaspoon ground cinnamon
1/4 teaspoon chili powder
Pinch kosher salt

Steps:

  • Put the vegetable oil in a large, heavy-bottomed stockpot fitted with a deep-frying thermometer. Heat the oil over medium-high heat to 375 degrees F. Place a cooling rack over a paper towel-lined baking sheet.
  • Fit a large piping bag with a small star tip.
  • In a mixing bowl, whisk together the pancake mix, cinnamon, salt and nutmeg. Pour in the milk and vanilla extract. Stir vigorously to form a thick dough. Transfer the dough to the prepared piping bag and squeeze to press the dough down towards the tip.
  • Carefully squeeze about 3 inches of dough into the hot oil. Use a pair of kitchen shears to trim the end of the churro from the piping bag. Repeat this process to create 3 more churros. Fry the churros, turning occasionally, until golden brown and crispy, 2 to 3 minutes. Lift the churros out of the hot oil and allow any excess oil to drip off. Place the churros onto the cooling rack and continue this process until all of the dough has been fried.
  • Place the granulated sugar into a shallow bowl. Dredge the warm churros in the sugar until evenly coated on all sides. Serve with the Chocolate Dipping Sauce.
  • Put the fudge, cream, cinnamon, chili powder and salt in a small saucepot. Cook over medium heat, stirring occasionally, for about 3 minutes. The sauce will thicken as it cools.

I do not remember where this recipe came from, originally it called for beef chuck. I've modified it and now make it with chicken. It's always well received at my house. You can make it mild or hot, depending on the type of salsa you choose. Serve with a salad and some warmed up tortillas.

4 boneless skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 cup chopped onion
1 clove garlic, minced
1 (4 ounce) can green chilies
1 1/2 cups chicken broth
1 (7 ounce) can green chili salsa
1 cup cheddar cheese, cubed
3 cups hot cooked rice

Steps:

  • Saute chicken over medium heat,in olive oil about 5 minutes.
  • Add onions and continue cooking until chicken is done and onions are soft (about 10 more minutes).
  • Add garlic, green chiles and broth.
  • Bring to boiling.
  • Reduce heat and simmer, covered for 30 minutes.
  • Stir in salsa.
  • Bring to a boil.
  • Remove from heat.
  • Gently fold in cubed cheddar cheese.
  • Serve immediately over beds of rice.
