Made from simple ingredients like brown sugar, butter and pecans, these chewies stir up in just minutes and will become a family favorite.

1 cup salted butter, melted
2 cups light brown sugar
2 teaspoons vanilla
2 eggs (room temperature)
2 cups self-rising flour
1 cup pecans (chopped)
2 teaspoons confectioners sugar (optional, for dusting)

Steps:

  • Line a 9x13 inch baking pan with parchment paper or spray with non-stick spray.
  • Melt butter over medium low heat.
  • Mix brown sugar and flour in large mixing bowl.
  • Pour melted butter into the large mixing bowl and combine. Add vanilla, eggs and pecans, stirring until well combined.
  • Bake in prepared pan at 325 degrees for 30-35 minutes. Cool completely before dusting with confectioners sugar and cutting into bars.

Charleston Chewies are a chewy brown sugar brownie type bar cookie. Traditionally made with pecans, these bars taste like a benne wafer from the addition of sesame seeds instead of pecans.

1/4 cup butter
1/2 cup sesame seeds
1 cup packed light brown sugar
1 egg (, beaten)
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F. Lightly oil an 8-inch square pan with vegetable oil and set aside.
  • In a small saucepan, melt the butter and add the sesame seeds. Cook for 3-5 minutes or until light brown. Remove from the heat and add the brown sugar and stir until smooth.
  • Next, stir in the egg. Stir together the flour and baking powder and stir into the brown sugar mixture.
  • Stir in the vanilla.
  • Pour the batter into the prepared pan and bake for 20 minutes. Remove and allow the pan to cool on a baking rack.
  • When cool, remove the brownies from the pan and lightly dust the top with confectioners' (powdered) sugar.

1/2 teaspoon vanilla extract
1 teaspoon baking powder
3/4 cup all purpose flour
1 beaten egg
1 cup packed light brown sugar
1/4 cup butter
for dusting confectioner's sugar

Steps:

  • Preheat oven to 350 °F. Spray an 8-inch square pan with vegetable oil cooking spray.
  • In a small saucepan, melt the butter. Turn off the heat, add the brown sugar and stir until smooth. Stir in the egg. Stir together the flour and baking powder and stir into the brown sugar mixture. Add the vanilla and pecans. Pour the batter into the prepared pan and bake for 20 minutes. When cool, dust the top with a sifting of confectioners' sugar.

1/4 cup butter, melted
2 cups packed light brown sugar
2 large eggs
1/4 teaspoon salt
2 cups sifted flour (sift before measuring)
1 teaspoon vanilla extract
1 cup pecans

Steps:

  • Combine butter and brown sugar in mixing bowl and beat well.
  • Beat in eggs, one at a time.
  • Add salt and sifted flour, mixing well.
  • Stir in vanilla and pecans.
  • Pour into a greased and floured (or use Bakers' Joy) 9x13-inch cake pan.
  • Bake at 325 degrees for 30 minutes or until cake tests done.
  • Cut into bars.
