1/4 cup onion, diced
1 tablespoon garlic, chopped
1/2 pound mushrooms, sliced
3 tablespoons flour
1/2 cup Marsala wine
1 1/2 cups beef stock
Salt and pepper, to taste

Steps:

  • Add olive oil to heavy hot saucepan. Add onions, garlic, mushrooms, saute until mushrooms are tender. Add flour and cook about 1 minute then deglaze pan with Marsala wine. Add beef stock and cook until thick and flavors are blended.

3 cups fresh wild chanterelle mushrooms, cleaned and quartered
½ cup heavy whipping cream
1 ½ teaspoons all-purpose flour
½ teaspoon cold water, or as needed

½ teaspoon herbes de Provence, or to taste
fresh ground black pepper, to taste

Steps:

  • Melt butter in a pan over medium heat and cook shallots until soft and translucent, about 5 minutes. Add chanterelle mushrooms and cook an additional 2 minutes. Add cream and cook until mushrooms are soft, 5 to 10 minutes.
  • Stir flour and water together and add to mushrooms. Bring to a boil. Season with salt, herbes de Provence, and pepper.

1 package (1/2 ounce) dried chanterelle mushrooms
1/2 cup hot water
1 teaspoon dried parsley flakes
1/2 teaspoon dried marjoram
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried sage leaves
1/2 teaspoon dried savory
1/2 teaspoon garlic powder
3/4 teaspoon salt, divided
1/4 teaspoon pepper
2 pork tenderloins (3/4 pound each)
3 tablespoons canola oil, divided
1/2 pound sliced baby portobello mushrooms
1/2 pound sliced fresh button mushrooms
4 ounces pearl onions, trimmed and peeled
1 cup marsala wine
1 cup chicken broth
2 tablespoons cornstarch
2 tablespoons cold water
Minced fresh parsley, optional

Steps:

  • In a small bowl, combine dried mushrooms and hot water; set aside. In another bowl, combine the dried herbs, garlic powder, 1/4 teaspoon salt and pepper. Sprinkle over pork., In a large skillet, brown tenderloins in 2 tablespoons oil on all sides. Remove from pan and keep warm., In the same skillet, saute the sliced mushrooms and onions in the remaining oil until mushrooms are browned. Add the wine, broth and remaining salt. Drain chanterelle mushrooms; add to the pan. Bring to a boil. Reduce heat; add pork., Cover and cook for 15-20 minutes or until a thermometer reads 145°. Remove pork and let stand for 5 minutes before slicing., Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened., Slice pork and serve with sauce. Garnish with parsley if desired.

A fortunate mistake in forgetting to marinate the chicken in additional ingredients made me come up with this last-minute preparation. It's chanterelle season in Oregon, and I love to use this wild mushroom as often as I can in the fall.

3 tablespoons all-purpose flour
½ teaspoon paprika
2 skinless, boneless chicken breast halves
2 tablespoons butter
½ pound sliced chanterelle mushrooms
4 tablespoons butter
salt and ground black pepper, or to taste
1 cup chicken broth
½ cup dry Marsala wine
1 teaspoon dried tarragon, crushed

Steps:

  • Stir flour and paprika together in a shallow dish. Remove and set aside 1 tablespoon of the flour mixture for later use. Dredge the chicken in the flour mixture to coat evenly.
  • Melt 2 tablespoons butter in a skillet over medium heat; cook and stir chanterelle mushrooms in melted butter until they release their liquid and begin to brown, about 5 minutes. Transfer mushrooms to a bowl and set aside.
  • Melt 4 tablespoons butter in the skillet. Cook the chicken breasts in the melted butter until browned, about 3 minutes per side; season with salt and pepper.
  • Return the cooked mushrooms to the skillet and stir in chicken broth, reserved 1 tablespoon of flour-paprika mixture, Marsala wine, and dried tarragon. Place a cover on the skillet, reduce heat to low, and cook until the sauce is thick, the chicken is no longer pink in the center, and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

1 shallot, peeled and minced
1 garlic clove, peeled and minced
3/4 lb chanterelle mushroom, chopped

1 1/2 lbs boneless skinless chicken breasts, each breast cut crosswise into 3 pieces
salt & freshly ground black pepper
2 tablespoons olive oil
5 tablespoons butter, divided
3/4 cup onion, chopped
1 lb cremini mushroom, sliced
2 tablespoons garlic, minced
1 cup dry marsala wine
1 cup mascarpone cheese
2 tablespoons Dijon mustard
2 tablespoons fresh Italian parsley, chopped, plus whole sprigs, for garnish
12 ounces dry fettuccine

Steps:

  • Sprinkle the chicken with salt and pepper. Heat the oil in a heavy large skillet over high heat. Add the chicken and cook just until brown, about 4 minutes per side. Transfer the chicken to a plate and cool slightly.
  • While the chicken cools, melt 2 tablespoons of butter to the same skillet over medium-high heat, then add the onion and saute until tender, about 2 minutes. Add the mushrooms and garlic and saute until the mushrooms are tender and the juices evaporate, about 12 minutes. Add the wine and simmer until it is reduced by half, about 4 minutes. Stir in the mascarpone and mustard. Cut the chicken breasts crosswise into 1/3-inch-thick slices. Return the chicken and any accumulated juices to the skillet. Simmer, uncovered, over medium-low heat until the chicken is just cooked through and the sauce thickens slightly, about 2 minutes. Stir in the chopped parsley. Season the sauce, to taste, with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, stirring occasionally, about 8 minutes. Drain. 3 tablespoons unsalted butter, cut into tablespoons, divided
10 ounces white mushrooms, thinly sliced
2 ounces sliced prosciutto, cut into 2-by-1/4 inch strips (not paper thin)
3 tablespoons finely chopped yellow onions
1 tablespoon all-purpose flour
3/4 cup dry marsala (cooking wine)
3/4 cup chicken broth

Steps:

  • Melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the mushroom and cook, stirring occasionally, until browned, about 5 minutes. Add the prosciutto and onion and cook, stirring often, until the onion softens, about 2 minutes more. Sprinkle with flour and stir well. Stir in the marsala and broth and bring to a boil. 60 g butter, melted
125 g plain sweet biscuits, crushed
5 egg yolks
1/2 cup caster sugar
1/2 cup marsala
250 g cream cheese, at room temperature
2 liters vanilla ice cream
60 g butter
1 cup brown sugar
1/4 cup marsala
1/2 cup thickened cream

Steps:

  • Combine butter and biscuit crumbs. Mix well.
  • Press into a springform pan. Refrigerate for 30 minutes.
  • Place egg yolks, sugar into top of double boiler.
  • Beat with electric beater over simmering water until pale and golden. (Don't let any water touch the underside of the double pan).
  • Add marsala, beat constantly until mixture thickens.
  • Let cool to room temperature.
  • Beat cream cheese in a large bowl until smooth.
  • Gradually beat in marsala mixture.
  • Fold in softened ice cream.
  • Pout into springform pan, cover with plastic wrap and freeze overnight.
  • Let stand 15 minutes before serving with sauce.

1/2 lb chanterelle mushroom, sliced

salt and pepper
1 teaspoon chopped fresh chives or 1 teaspoon parsley

Steps:

2/3 cup marsala
2 teaspoons olive oil
4 (6 ounce) boneless skinless chicken breast halves
1/2 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 tablespoon butter
1/4 cup finely chopped shallot
1 tablespoon chopped fresh thyme
1 cup reduced-sodium fat-free chicken broth

Steps:

  • Combine cherries and Marsala in a small microwave-safe bowl. Microwave at high for 45 seconds, and set aside.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 4 minutes on each side or until done. Remove chicken from pan; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover and keep warm.
