These chaffles are just two ingredients and cook in just a few minutes! Perfect smeared with butter and sugar free syrup.

1 large egg
1/2 cup finely shredded mozzarella

Steps:

  • Plug in the waffle maker to heat.
  • Crack the egg into a small bowl and whisk with a fork. Add the mozzarella and stir to combine.
  • Spray the waffle iron with non-stick spray.
  • Pour half of the egg mixture into the heated waffle iron and cook for 2-3 minutes.
  • Remove waffle carefully and cook remaining batter.
  • Serve warm with butter and sugar-free syrup.

The Best Cheddar and Herb Chaffle image

A chaffle is a low-carb, cheese-and-egg-based waffle that's taken the keto world by storm, thanks to its fluffy texture and crispy edges. We opted to use Cheddar for the cheese and added scallions and parsley for a sweet and savory twist on the popular dish. For the fluffiest chaffle, use only finely shredded cheese--it will blend better with the egg than large shreds.

4 large eggs
2 cups finely shredded mild Cheddar
2 scallions, thinly sliced
1 tablespoon finely chopped fresh parsley
Kosher salt and freshly ground black pepper
Nonstick cooking spray
Unsalted butter, for serving
Sugar-free maple syrup, for serving

Steps:

  • Preheat a waffle iron to medium-high. Whisk the eggs in a large bowl until well beaten and smooth. Whisk in the Cheddar, scallions, parsley, 1/4 teaspoon salt and a few grinds of pepper.
  • Coat the waffle iron with nonstick cooking spray, then ladle a heaping 1/4 cup of batter into each section. Close the lid and cook until well browned and fluffy, 4 to 5 minutes. Use a small offset spatula or tongs to transfer the chaffles to a serving plate. Repeat with the remaining batter.
  • Top each chaffle with a pat of butter and drizzle with maple syrup.

1 jumbo egg
1 Tbsp almond flour or can leave out, I like it as it makes the chaffles more substantial
1 pinch salt
1/2 c cheddar, shredded, or favorite cheese. Don't use already shredded cheese as there is added potato starch to keep from sticking together. Shred fresh, it's best!
Other seasonings, if wish
Fixings for BLT - cooked bacon, lettuce, tomato

Steps:

  • 1. First, you need a mini waffle iron, such as a Dash. They sell for $ 9.99 at Target. I've purchased two to get the sammies out quicker to the family!
  • 2. Place egg, almond flour, and grated cheese in a small bowl.
  • 3. Mix ingredients with a fork until mixed thoroughly.
  • 4. Plug in the Dash. Doesn't take long to get hot. Once hot, spray with non-stick spray and pour in just half of the egg mixture. Close lid and wait for 3-4 minutes, or until desired crispness. Repeat.
  • 5. Each recipe makes 2 chaffles.
  • 6. Build your BLT and enjoy! Use these tasty bread alternatives for toast or sandwiches. So many variations you can try. Just use your imagination and experiment.
