SHRIMP CEVICHE

1 pound high-quality medium raw shrimp, peeled, deveined, tail removed, cut into thin pieces
1 cup freshly squeezed lime juice
1 cup peeled, seeded and finely chopped cucumber
1 cup seeded and finely chopped tomato
1/2 cup chopped fresh cilantro
1/2 cup finely chopped red onion
1 serrano chile pepper, deveined, seeded and minced
Kosher salt, for seasoning
Saltine crackers
Bottled hot sauce
Lime wedges, optional

Steps:

  • Place the shrimp in a large mixing bowl. Add 1/2 cup lime juice and let stand for 15 minutes so the shrimp can "cook" in the lime juice (any less and it won't cook, any more and it toughens).
  • Meanwhile, in a separate large mixing bowl, mix the remaining 1/2 cup lime juice, cucumbers, tomatoes, cilantro, red onions and serrano chile to incorporate evenly. Transfer the mixed vegetables into the shrimp bowl and mix well to incorporate. Season the ceviche with some salt. Serve with saltine crackers, bottled hot sauce and lime wedges if desired.

SHRIMP AND MANGO CEVICHE

Nothing reminds me of a summer day beachside like fresh ceviche. The shrimp "cooks" in a citrus bath, then gets tossed with a colorful assortment of veggies. The roasted jalapeño adds a smoky heat that makes this dish sing.

1 cup fresh lime juice (8 to 9 limes)
Juice of 1 orange
1 pound jumbo shrimp, peeled, deveined and cut into 1/4-inch dice
1 jalapeño
1/4 cup fresh cilantro, chopped
1/4 cup green olives, chopped
1 mango, diced
1 tomato, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 small red onion, diced
2 cloves garlic, grated
1/3 cup olive oil
1 avocado, diced
Kosher salt and freshly ground black pepper

Steps:

  • Stir together the lime juice and orange juice in a medium bowl. Add the shrimp, cover with plastic wrap and refrigerate until the shrimp are firm and opaque, 1 hour to 1 hour 30 minutes.
  • Meanwhile, preheat the broiler. Broil the jalapeño until the skin is blackened all over, 2 to 3 minutes per side. Set aside to cool.
  • Toss together the cilantro, olives, mango, tomatoes, bell peppers, onions and garlic in a large bowl.
  • When the jalapeño is cool, carefully peel away the blackened skin, wiping away any remaining skin with a paper towel. Seed and finely dice the jalapeño and add it to the bowl. Stir in the shrimp, oil and 1/2 cup of the citrus marinade. Mix in the avocado and season with salt and pepper.

SHRIMP AND MAHI MAHI CITRUS CEVICHE

12 ounces large shrimp, shelled, deveined, halved and diced
Kosher salt
12 ounces boneless, skinless mahi mahi fillets (or other firm white fish)
6 ribs celery
1/4 cup lime juice
Juice of 1 orange
2 teaspoons ground cumin
1/8 teaspoon cayenne pepper
Freshly cracked black pepper
2 tablespoons finely chopped fresh cilantro
4 cups canola oil, for frying
Three 6-inch corn tortillas, sliced into strips
Kosher salt
1 lime, cut into wedges

Steps:

  • For the ceviche: Place the shrimp into a pot of salted water. Place over medium heat and cook until just starting to turn opaque, 2 to 3 minutes. Drain before adding to the rest of the ceviche.
  • Meanwhile, dice the mahi mahi into 1/4-inch pieces and set aside in a large nonreactive bowl.
  • Peel the celery and place in a food processor with the lime juice and orange juice. Puree until smooth and set aside. Add the celery puree to the fish and sprinkle with the cumin, cayenne and some salt and black pepper. Add the shrimp and stir well to incorporate. Cover and chill the ceviche in the fridge for 15 to 20 minutes. The shrimp will turn pink and the fish will turn white when cooked. Toss with the cilantro just before serving.
  • For the tortilla strips: In a large cast-iron pot over medium-high heat (or in countertop fryer), bring the oil to 325 degrees F. Add the tortilla strips and fry until golden brown, 3 to 4 minutes. Remove to towel-lined dish and drain. Season with salt.
  • To plate: Spoon the ceviche into a serving bowl and garnish with the tortilla strips and lime wedges.

PERUVIAN FISH CEVICHE

1 1/4 pounds fish fillets (sea bass, sole, or flounder), cut on the bias into 1-inch dice
1 quart water, boiled and chilled
1 red onion, cut in 1/2 lengthwise and sliced thin
1 aji amarillo, rib and seeds removed, diced
1 clove garlic
Salt and pepper
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
2 teaspoons finely chopped cilantro leaves
2 ears corn, cut in 1/2
1 sweet potato, sliced 1/4-inch thick
2 tablespoons canola oil
1 head butter lettuce
Japanese seaweed, for garnish

Steps:

  • Have grill pre-greased and preheated to medium-high.
  • Place fish in a non-reactive bowl. Add 3 cups of chilled water to fish and rinse gently. Drain water.
  • Add onions to remaining chilled water and let soak.
  • Meanwhile, place aji, garlic, and pinch of salt in a mortar and pestle. Grind to make a paste.
  • Combine fish, lime and lemon juices, aji and garlic paste, salt, pepper, and cilantro. Let marinate for 10 minutes.
  • Brush corn and sweet potato slices with oil and place on grill. Cook about 10 minutes.
  • When ready to serve, divide fish ceviche among 4 lettuce cups and top with onion slices. Serve with grilled corn and sweet potato slices and garnish with Japanese seaweed, if desired.

MEXICAN CEVICHE



Mexican Ceviche image

This dish is a regular served on the beaches of Mexico. Serve it as a seafood appetizer or as a side salad dish. You can alter it to suit your own taste. Make it as spicy or as mild as you wish. My friends all love it. I often use shrimp & fish or shrimp & scallops - when I do this I do not marinate the shrimp as the shrimp tend to get tough. I steam the shrimp and add them a few hours before serving as I mix all the ingredients together. In Mexico when they make this they often add sea water (not recommened). If you are using frozen fish, choose a firm-fleshed fish and make sure it is fully thawed with as much moisture as possible removed.

1 lb sea bass fillets (or use a mixture of fish and shrimp) or 1 lb red snapper fillet (or use a mixture of fish and shrimp)
5 -6 limes (Enough Juice to cover fish)
1 cup diced fresh tomato
1 green pepper, sweet, chopped
4 tablespoons chopped parsley or 4 tablespoons chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
2 jalapeno peppers, chopped (or more to suit your taste)
2 tablespoons white vinegar
1 medium onion, finely chopped
2 tablespoons fresh cilantro, chopped
1 dash Tabasco sauce
lettuce leaf (to line serving bowls)
avocado (optional)
black olives, sliced (for garnish) (optional)

Steps:

  • Dice the fish (approximately 1/2-inch dice if using shrimp use cleaned shrimp).
  • Marinate fish in the lime juice in the fridge overnight (this step cooks the fish).
  • Stir often.
  • Pour off most of the lime juice (just leave it moist).
  • Add remaining ingredients except lettuce, avocado and olive. Do this preferably a few hours before serving & refrigerate.
  • Toss well and arrange in individual serving bowls that are lined with the lettuce leaves.
  • If you wish garnish with sliced avocado and sliced black olives.

1 pound medium shrimp (16/20 per pound), peeled and cleaned
2 pounds meaty white fish, like sea bass, boned, and cut into large dice
1 red onion, minced
1 piece ginger, peeled, minced
1 clove garlic, minced
1/4 habanero or Scotch bonnet, minced (no seeds or ribs)
1 celery rib, minced
Salt and black pepper
5 lemons, juiced
5 limes, juiced
1 bunch cilantro, chopped
2 ears of corn, grill with husk on

Steps:

  • Boil salted water. Have ice water ready on the side. Poach shrimp for just 30 seconds and cool in ice water and drain. Combine with fish and toss with onion, ginger, garlic, hot pepper, celery, salt, and black pepper. Allow to cool in the refrigerator at least 30 minutes up to 2 hours.
  • Add juices and refrigerate 1 hour. Finish with cilantro and corn, check seasoning and serve in a martini glass.

2 tablespoons garlic, chopped

1 tablespoon cilantro leaf, chopped
1 1/2 tablespoons hot sauce
1/2 jalapeno pepper, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup fresh lime juice

Steps:

  • Combine all ingredients in a large bowl. Mix thoroughly. Store in a covered glass or plastic container, lime juice should cover all ingredients; if not, add more lime juice. Refrigerate for 2-3 hours. When done, the seafood should be totally opaque. Stir before serving. Serve with tortilla chips or (my favorite way) chop avocado and place in a dish. Spoon ceviche on top of avocado.

  • Heat four cups of salted water with 1/3 cup of lime juice to medium heat. Once it comes to a boil, add the cleaned and peeled shrimp. Leaving the tails on is optional. Poach for just under a minute or until shrimp turns pink. Remove from water and transfer to a bowl of ice water.
  • To that same poaching liquid, add the fish pieces two at a time and poach for about 3-5 minutes. Transfer to plate and let cool, cover and chill until ready to use. Strain out 1 cup of the seafood broth into a bowl and chill to cool.
  • Once seafood broth has cooled, transfer to the blender. Also add 1 cup of lime juice, celery, jalapenos, half of cilantro, salt and pepper to taste. Blend until smooth. Taste for salt.
