Salmon is a delicate fish that does well when lightly smoked and gently seasoned. Cooking it on a plank over a live fire gives it a great smoky flavor while letting it hold its shape.

½ cup unsalted butter
3 cloves garlic, peeled
3 sprigs fresh dill
1 teaspoon salt, or to taste
1 pound salmon filet
1 plank food-safe wood, such as untreated cedar or alder wood
1 lemon, thinly sliced
2 sprigs fresh dill, or more to taste

Steps:

  • Preheat the smoker to 250 degrees F (120 degrees C) according to manufacturer's instructions.
  • Combine butter, garlic, 3 sprigs dill, and salt in a heat-proof dish. Place in the smoker until butter is melted and infused with flavor, at least 20 minutes. Remove from the smoker.
  • Lay salmon on the plank of wood. Brush salmon with the flavored butter. Season with salt and pepper. Place in the smoker and close the door.
  • Cook salmon until easily flaked with a fork, about 40 minutes. Check at 10-minute intervals and baste with butter.
  • Serve garnished with lemon slices, remaining dill, and remaining flavored butter.

This is a dish my brother prepared for me in Seattle. It is by far the best salmon I've ever eaten. I like to serve it with an Asian-inspired rice and roasted asparagus.

3 (12 inch) untreated cedar planks
⅓ cup vegetable oil
1 ½ tablespoons rice vinegar
1 teaspoon sesame oil
⅓ cup soy sauce
¼ cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed

Steps:

  • Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
  • In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
  • Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

3/4 cup packed light brown sugar
1/2 cup kosher salt
Freshly ground pepper
1 pound skin-on center-cut wild salmon fillet
2 slices lemon
3 to 4 sprigs thyme

Steps:

  • Brine the fish: Combine the brown sugar, salt, 1 teaspoon pepper and 4 cups water in a large bowl. Stir until the sugar and salt dissolve. Add the salmon and weigh down with a can or skillet to keep it submerged. Cover and refrigerate at least 2 hours or overnight.
  • Soak the wood chips and cedar plank in water 1 hour, then prepare your grill for smoking.
  • About 30 minutes before smoking, remove the salmon from the refrigerator; drain and pat dry. Place the salmon, skin-side down, on the cedar plank and season with salt and pepper. Top with the lemon slices and thyme sprigs. Let stand at room temperature to dry out, 30 minutes.
  • Once the grill reaches 250 degrees F, place the plank with the salmon on the cooler side of the grill. Close the grill and let smoke until golden and just cooked through, about 20 minutes. If using a gas grill, turn off the flame and let the fish sit 10 more minutes (this is not necessary if using charcoal; it imparts more smoky flavor). Remove from the grill and serve hot or at room temperature.

Smoked salmon is great for the road because it holds up really well and can be prepared ahead of time. It can be served hot, cold or room-temperature. When you smoke something, it will cook it through without making it dry. The pine nut relish is also great at room temperature and adds flavor, acidity and richness to the dish. The celery salad adds freshness and carries acidity, especially with the addition of the Meyer lemon juice.

1 1/2 pounds wild salmon, cut into 6 portions
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley
Zest of 1 Meyer lemon
1 1/2 cups apple cider vinegar
3/4 cup dried currants
2 tablespoons honey
1 tablespoon minced shallots
1 tablespoon mustard seeds
1/4 cup pine nuts, toasted
Kosher salt
4 stalks celery with leaves, peeled and sliced thinly on a bias
1/4 cup fresh cilantro leaves
2 tablespoons olive oil
Juice of 1/2 Meyer lemon
Flaked sea salt and freshly ground black pepper

Steps:

  • For the salmon: Preheat a smoker for cooking to 225 degrees F and preheat your oven to 425 degrees F.
  • Remove the cedar planks from the water and pat the surfaces dry. Put the cedar planks on a baking sheet. Place the salmon portions skin-side down on the cedar planks. Drizzle with the olive oil and sprinkle with salt and pepper. Evenly top the salmon with the parsley and lemon zest. Place the baking sheet in the smoker and allow the salmon to smoke just until it has been slightly infused with smoke flavor, about 15 minutes. Remove from the smoker and immediately transfer to the oven to finish cooking, about 15 minutes. Remove from the oven and let sit until room temperature, or refrigerate and serve the next day.
  • For the currant and pine nut relish: Combine the vinegar, currants, honey, shallots and mustard seeds in a small pot. Heat the pot over medium-high heat until bubbles begin to form, then lower the heat to maintain a slow simmer. Continue to cook until the currants have plumped and the liquid has reduced and become slightly viscous, 10 to 15 minutes. Remove from the heat and fold in the pine nuts. Season the relish with salt.
  • For the salad: Dress the celery, celery leaves and cilantro in a medium bowl with the olive oil, Meyer lemon juice, flaked salt and pepper. Top the salmon with the celery salad and a spoonful of the currant and pine nut relish and serve.

1 1/4 lb wild salmon
1 Tbsp chili powder
1 tsp black pepper, fine ground
1/2 Tbsp cumin, ground
1/2 Tbsp paprika, smoked
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp cinnamon

Steps:

  • 1. Apply a light coat of EVOO over the Salmon
  • 2. Apply the dry rub to the fish, a light coat will be plenty. I had some left over for another grilling or two.
  • 3. I like to let the fish sit @ room temp for about 45 minutes to one hour before grilling. This is ample time for the dry rub to get into the fish.
  • 4. In regards to the Cedar Plank, I soak it all day in the sink. Keep it totally submerged in water, the longer the better.
  • 5. Preheat the grill to 400 - 450. Place the Salmon on the Cedar Plank and put it on the grill.
  • 6. Cook the Salmon to an internal temp of 130 degrees in the thickest part. This will produce a very moist Salmon. The fish should reach that temp in 25 - 35 minutes based on your grill heat. Don't over cook your fish. Cheers...

Planking is a rather new experience for us. I prepare the food and DH does the rest. This recipe is adapted from kraftfoods.com and is so simple to make. The original recipe called for parsley which I didn't have. I used fresh garden basil and loved it. Serve with rice, fresh bread and a salad for a lovely meal that is sure to impress. Please note: The cooking or prep time does not include the time needed to soak the cedar plank.

1 cedar plank, untreated (14x7x1 inch)
1/2 cup sun-dried tomato vinaigrette dressing
1/4 cup fresh basil, finely chopped
1/4 cup sun-dried tomato, finely chopped (not oil packed)
1 tablespoon oil
1 (2 lb) salmon fillets, cut 1 inch thick
2 cups cooked basmati rice or 2 cups cooked brown rice
basil leaves (to garnish)

Steps:

  • Place the plank in water, weight top and soak for a minimum of 4 hours or overnight.
  • Preheat grill to medium.
  • Mix the dressing, basil and tomatoes; reserve half the dressing for use when serving the fish; set aside.
  • Brush the top of the pre-soaked plank with oil; top with the salmon, skin side down.
  • Place on grill; cover with grill lid and grill 10 minutes.
  • Brush with dressing mixture and continue to grill for an additional 10 minutes or until salmon flakes easily with fork.
  • Remove from plank, remove skin and plate on top of cooked rice.
  • Spoon a tablespoon or so of reserved dressing over fish, garnish with additional basil leaves and serve.

2 cedar planks, soaked in water for 4 to 6 hours
1 tablespoon dry barbecue spice
sea salt
1 large lemon
1 cup fresh dill, chopped
1/2 cup shallot, chopped
2 garlic cloves, chopped
2 green onions, chopped
3 tablespoons cracked black pepper
2 tablespoons olive oil
1 lemon, juice of

Steps:

  • Preheat grill to high.
  • Sprinkle BBQ seasoning on salmon fillets.
  • Combine ingredients for crust mixture and spread generously over the flesh side (not skin side) of each fillet.
  • Season soaked cedar planks with sea salt, and place on grill.
  • Close lid and heat for 3 to 5 minutes, until they start to crackle and smoke.
  • Lift lid carefully and place salmon fillets on hot planks, skinned side down.
  • Close lid and bake planked salmon for 12 to 15 minutes for medium doneness.
  • Squeeze lemon over fillets.
  • Check periodically to ensure the planks are not on fire.
  • Use spray bottle to extinguish any flames.
  • Carefully remove planks from grill and transfer salmon to serving platter.
