1 cup water
12 ounces blackberries
1 (1-inch) piece ginger, peeled and sliced into coins
1/2 lemon, juice
1/4 cup sugar
1 tablespoon olive oil
4 (8-ounce) skinless salmon fillets
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saucepot over medium-high heat, combine water, blackberries, ginger and lemon juice. Bring to a boil, reduce to a simmer and cook until berries break down, about 5 minutes. Remove from heat and strain into a bowl, using the back of a spoon to push blackberry pulp through. Return blackberry mixture to the sauce pot, add sugar and bring to a boil. Lower the heat and simmer until reduced by half, about 20 minutes, stirring occasionally to avoid burning. Remove from heat and let cool.
  • Brush a baking sheet with olive oil and set fillets on top. Brush fillets with oil and season with salt and pepper. Once blackberry mixture is cool, brush over salmon fillets and bake for 4 minutes. Brush again with blackberry mixture. Turn oven to broil and broil another 3 minutes.

3 (12 inch) untreated cedar planks
⅓ cup vegetable oil
1 ½ tablespoons rice vinegar
1 teaspoon sesame oil
⅓ cup soy sauce
¼ cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed

Steps:

  • Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
  • In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
  • Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

2 tablespoons grainy mustard
2 tablespoons mild honey or pure maple syrup
1 teaspoon minced rosemary
1 tablespoon grated lemon zest
1 (2-pounds) salmon fillet with skin (1 1/2 inches thick)
Equipment: a cedar grilling plank (about 15 by 6 inches)

Steps:

  • Soak cedar grilling plank in water to cover 2 hours, keeping it immersed.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure . Open vents on bottom and lid of charcoal grill.
  • Stir together mustard, honey, rosemary, zest, and 1/2 teaspoon each of salt and pepper. Spread mixture on flesh side of salmon and let stand at room temperature 15 minutes.
  • Put salmon on plank, skin side down (if salmon is too wide for plank, fold in thinner side to fit). Grill, covered with lid, until salmon is just cooked through and edges are browned, 13 to 15 minutes. Let salmon stand on plank 5 minutes before serving.

The cedar planks can only be used for outdoor grilling and lend a delightful smokiness. The recipe would still be good minus the cedar planks and cooked on a grill pan indoors.

2 c blackberries
2 Tbsp dry white wine
1 Tbsp brown sugar
1 tsp honey
1 tsp chipotle hot pepper sauce or hot sauce
1/4 tsp salt, divided
1/4 tsp fresh ground black pepper, divided
1/4 c finely chopped shallots
1 clove garlic, minced
6 salmon fillets (5 ounces each)

Steps:

  • 1. Soak the planks in water for at least one hour before using.
  • 2. Use a food processor to combine blackberries, wine, brown sugar, and hot sauce. Season with 1/8 teaspoon each of salt and pepper. Strain the sauce and discard any seeds. Stir the shallots and garlic into the sauce and set aside.
  • 3. Preheat an outdoor grill for medium high heat. Place the planks on the grates, close grill, and heat until the planks start to crackle and emit smoke, about 3 minutes. Turn planks over.
  • 4. Season salmon with the remaining salt and pepper. Place on the planks. Cover the grill and cook until the salmon flakes easily with a fork, about 12 to 15 minutes. Serve with sauce.

  • Soak cedar plank in water for several hours.

  • Place salmon on cedar plank and sprinkle with salt and pepper Cover with herb mixture. Set plank on barbecue. Bake for 30 minutes on medium heat, until fish flakes easily with a fork.
  • Cucumber Dill Sauce: Finely chop cucumber, toss with salt and let stand for 15 minutes.
  • Combine yogurt, sour cream, lemon juice, pepper, onion and dill.
  • Drain water from cucumber and add to yogurt mixture. (Sauce can be made ahead of time).
  • Note: The recipe can be cut in half.

2 cedar planks
2 6 ounces salmon fillets (bones and skin removed)
salt and pepper (to taste)
1/2 cup sour cream
1/2 cup plain yogurt
1 garlic clove (grated or chopped finely)
1 tbsp Dijon mustard
1 whole lemon (zested and juiced)
Small bunch of fresh dill (chopped + extra sprigs for garnish)
Lemon slices (for garnish)

Steps:

  • Soak cedar planks in water for at least 2 hours. This will prevent any burning of the wood.
  • To make the sauce, add together the sour cream, yogurt, garlic, Dijon, lemon zest and juice, dill and season with salt and pepper. Mix well and adjust seasoning.
  • When planks are done soaking, place salmon filets on top, skin side down and season with salt and pepper.
  • Reserve about 1/2 cup of yogurt sauce and spoon the rest of the sauce over salmon. Top with additional lemon slices and extra fresh dill.
  • Place planked salmon on heated grill over medium heat and cook for about 10-12 minutes, depending how thick salmon is. The edges of the planks will slightly char and salmon should be tender in the middle.

3 tablespoons dry sherry
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon fresh ginger, finely minced
2 tablespoons butter, melted
1/4 tablespoon fresh ground pepper
lemon slice

Steps:

  • In a shallow glass dish, combine the sherry, soy sauce, sesame oil, butter and ginger.
  • Place the fish in the marinade for 30 minutes.
  • Soak the cedar plank in water for 20-45 minutes
  • Preheat the grill at a medium-low setting (300 degrees).
  • After removing the plank from the liquid, pat dry and coat with olive oil on both sides.
  • Place the plank on the grill with the salmon and shut the lid.
  • Leave for 15-20 mins (note: when using whole salmon, the cooking time will increase to approximately 45-50 mins).
  • Check salmon on the thickest part of the fillet to ensure even cooking. The salmon should have an opaque colour and be flaky to the touch with a fork.
  • Once done, serve with lemon or lime for squeezing over the fish.

3 lbs salmon fillet (skin on or off)
1/2 cup maple syrup
1/4 cup water
2 tbsp white or rice vinegar
1 tbsp cornstarch
1 small garlic clove (grated)
1 tsp salt
1/2 tsp red chili pepper flakes

Steps:

  • Soak cedar plank in water for at least 1 hour. I like to fill up sink with a few inches of water.
  • In a small saucepan, add maple syrup, water, vinegar, cornstarch, garlic, salt and red chili pepper flakes; whisk well.
  • Bring to a boil, reduce heat to low and simmer for 7-10 minutes or until thickened.
  • Reserve 1/2 cup sauce for cedar plank salmon and transfer remainder to a glass jar. Use with meats, seafood, vegetables and for dipping. Highly recommend to make Thai Salmon that everyone will rave about for weeks!
  • Preheat grill to medium-high heat (500 degrees F). Place salmon on pre-soaked cedar plank and brush with half of the reserved 1/2 cup Thai sauce. Place on a grill, cover and cook for 10 minutes.
  • Open the grill, brush salmon with remaining sauce, cover and grill for another 10 minutes or until the thermometer inserted in the deepest spot reads 130 degrees F.
  • Cut into 8 slices and serve warm right off the plank placed on a platter. You can brush salmon with more Thai sauce if desired.

1 cedar plank (6 by 14 inches)
2 salmon fillets (1 1/2 pounds total)
Salt and freshly ground black pepper
6 tablespoons Dijon mustard
6 tablespoons brown sugar

Steps:

  • Soak cedar plank in salted water for 2 hours, then drain. Remove skin from salmon fillet. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
  • Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank.
  • Cook's Note: A direct method to grill the salmon may be used. Soak the cedar plank well. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F. Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill.
