BUTTERY CAYENNE PECANS
The low oven temp and long bake time allow these nuts to take on rich flavor without burning.

Steps:
- Preheat oven to 300°F. Whisk butter, Worcestershire sauce, salt, garlic powder, mustard powder, hot sauce, and cayenne in a medium bowl. Add pecans and toss to coat. Spread out in a single layer in a large cast-iron skillet or on a rimmed baking sheet and roast, tossing occasionally, until pecans are well toasted and spices are fragrant, 25-30 minutes. These are pretty great served warm, or let cool.

- Pecans can be made 2 days ahead. Store tightly wrapped at room temperature.
CAYENNE PECANS

- Preheat oven to 350°. In a microwave, melt butter; stir in Worcestershire sauce, salt and cayenne. Toss pecans with butter mixture; spread evenly in an ungreased 15x10x1-in. pan., Bake until lightly toasted, about 15 minutes, stirring occasionally. Cool in pan on a wire rack. Store cooled nuts in an airtight container.

CAYENNE CANDIED PECANS
This is a recipe that I borrowed from a great friend and chef, Chef James. This recipe is easy and the pecans come out delicious. They have a slight sweetness from the honey, a salty, nutty flavor from the butter and of course the spicy cayenne kick. These are fantastic in salads or just by the handful.

Steps:
- Pre heat oven to 350 degrees.
- To toast the pecans, place evenly on a cookie sheet. Bake for 5-10 minutes at 350 degrees, checking often. They will burn quickly!
- In a 4-quart saucepan, place all ingredients, except pecans, and heat until mixture reaches 250 degrees. Turn off heat and add pecans to saucepan and mix well.
- Spread coated pecans evenly on cookie sheet lined with parchment paper or cooking spray. Bake at 350 degrees for 15 minutes. Check the pecans midway during cooking, give them a mix using a spatula, spread evenly on cookie sheet and continue cooking.
- Cool and enjoy.

MAPLE PEPPER PECANS
I cannot, just cannot, allow myself to have even one of these as I'm setting them out or I know there will be none left for the party. They're best eaten still a little warm (though be careful that they're not hot or everyone will have a burnt mouth) though still very good cold and, as with the olives, make a good present, bunged into a jar and tied with a ribbon or somesuch.

- Melt the butter with the syrup, salt and cayenne pepper in a pan over a gentle heat. Add the pecans and stir to mix, leave them on the heat for 2 to 3 minutes. Spread the pecans on a silicon pad, parchment paper, or piece of foil to cool. Arrange the sticky pecans in bowls to serve.
ROASTED PECANS
Steps:
- Melt unsalted butter, 1 teaspoon salt, and 1/2 teaspoon cayenne. Pour this mixture over 2 cups pecans, tossing to coat them. Bake the nuts on a cookie sheet at 350 degrees for 10 minutes or until nuts are beginning to brown. Remove immediately to drain on paper towels.

Steps:
- Combine the butter and cheeses in a food processor and process until smooth.
- Sift the flour, salt, and cayenne directly into the food processor and process until the mixture begins to form a ball.
- Add the pecans and pulse just until the pecans are mixed.
- The mixture will be very soft.
- Divide the dough into three equal parts and place each on a piece of wax paper.
- Fold the paper over the mixture and roll into logs about 1 inch (3 cm) in diameter.
- Refrigerate until thoroughly chilled, about 1 hour.
- Roll the chilled dough into a more regular round shape if desired.
- Unwrap the logs immediately prior to baking and slice into rounds 1/4 inch (5 mm) thick.
- Place 1/2 inch (1 cm) apart on an ungreased baking sheet and bake in a preheated 350F oven until light golden brown, about 15 minutes.
- Cool on a wire rack and store in an airtight container.
