1 pinch of saffron
4 cloves of garlic
4 cm piece of ginger
olive oil
1 teaaspoon ground cumin
½ teaspoon ground cinnamon
1 teaspoon ras el hanout
1 tablespoon sun-dried tomato paste
2.5 kg mixed veg, such as aubergines, courgettes, carrots, cherry tomatoes, red onion, butternut squash, mixed-colour peppers
1 x 400 g tin of chickpeas
100 g dried apricots
1 preserved lemon
300 g couscous
½ a bunch of mixed fresh herbs, such as dill, mint, flat-leaf parsley (15g)
20 g flaked almonds

Steps:

  • Put the saffron into a jug, cover with 500ml of boiling water and leave to infuse.
  • Meanwhile, peel and finely slice the garlic and ginger, then place in a large casserole pan over a medium heat with 2 tablespoons of oil, the cumin, cinnamon and ras el hanout.
  • Add the tomato paste, fry for a few minutes, stirring regularly, then pour over the saffron water. Trim and prep the veg, as necessary, then chop into large chunks, adding them to the pan as you go.
  • Tip in the chickpeas (juices and all), roughly chop and add the apricots and preserved lemon, discarding any pips, then season with sea salt and black pepper.
  • Bring to the boil, cover, reduce the heat to low, and simmer for 45 minutes, or until tender, stirring occasionally.
  • When the veg are almost tender, just cover the couscous with boiling water, season with salt and pepper and pop a plate on top. Leave for 10 minutes, then fluff and fork up.
  • Pick the herb leaves and toast the almonds. Serve the tagine and couscous sprinkled with the almonds and herbs. Delicious served with harissa rippled yoghurt.

1 tbsp rapeseed oil
1 large onion , finely chopped
2 garlic cloves , finely chopped
1 tbsp chilli powder
1 tsp ground cumin
2 tsp ground coriander
400g can chopped tomatoes
1 lemon , zest removed with a potato peeler then chopped
2 tbsp tomato purée
12 Kalamata olives , halved
1 tbsp vegetable bouillon powder
4 large carrots , cut into batons
1 small cauliflower , cut into florets
400g can green lentils
⅓ small pack fresh coriander , chopped
200g bulgur wheat

Steps:

  • Heat the oil in a large frying pan add the onion and garlic and stir-fry briefly to soften them a little. Add the spices, then pour in the tomatoes with 1 can of water then stir in the chopped lemon zest, tomato purée, olives and bouillon powder. Add the carrots and cauliflower to the pan then cover and cook for 15 mins until they are just tender. Stir in the lentils with the liquid from the can and the coriander.
  • While the tagine is cooking, cook the bulgur following pack instructions. If you're doing the Healthy Diet Plan, serve half with half of the tagine and chill the remainder for another night.

Make this with any veg you have - just don't skimp on the spices!!Pan-roasting each vegetable to get a bit of colour on them before simmering is worth the effort to get the most flavour out of the vegetables. Because colour = flavour! Serve with couscous.

1 tbsp cardamom powder
1 tbsp coriander powder
1 tbsp cumin powder
1 1/2 tsp ground fennel seeds / fennel powder
1 tsp cayenne ((omit for non-spicy))
2 tsp turmeric
1/4 tsp ground cloves
1/4 tsp ground ginger
5 tbsp olive oil
1/2 red onion (sliced; (sub any type of onion))
1 garlic clove (, finely minced)
800g/1.6lb butternut pumpkin / squash ((1/2 a small), peeled, cut into 2.5cm / 1" cubes)
1 small eggplant (, cut into 2.5cm / 1/2" cubes)
1/2 cauliflower head (, small, cut into bite size florets)
1 capsicum / bell pepper (, cut into 2.5cm / 1" pieces (red or yellow))
2 tomatoes (, seeds removed, cut into 1cm / 1/3" dice)
3 1/2 cups water
2 tsp salt
1/2 tsp black pepper
400g/ 14oz canned chickpeas (, drained)
200g / 60z green beans (, cut into 3.5cm / 1.5" pieces (~2 cups cut))
Zest of 1 lemon
2 tbsp lemon juice
1/2 cup slivered almonds (, toasted)
1/4 cup coriander / cilantro (, roughly chopped)
Plain yogurt
Pinch of paprika or cayenne pepper

Steps:

  • Combine Tagine Spice Mix ingredients.
  • Preheat oven to 180°C/350°F.
  • Heat 1 tbsp oil in a large, heavy-based pot over medium high heat. Add garlic and onion, cook until onion is wilted (~ 1 1/2 minutes), then remove to a large bowl. Scrape out any remaining garlic bits from pan (so they don't burn).
  • Add pumpkin / squash and cook, stirring, for 3 minutes or until lightly golden on most sides. Remove to same bowl.
  • Add 2 tbsp olive oil. Cook eggplant for 3 minutes until tinged with gold on most sides, remove to same bowl.
  • Add 1 tbsp oil if pot is looking dry. Add capsicum and cauliflower, cook for 2 minutes until the cauliflower is a bit golden on the edges. Remove into bowl.
  • Add tomato and cook for 1 minute. Add Spice Mix, stir for 1 minute.
  • Add all vegetables back to pot. Add water (it should just about cover the vegetables, they will sink), salt and pepper. Stir, bring to simmer on stove, then transfer to oven for 30 minutes. (Alternatively simmer on low stove, but stir gently otherwise veg may breakdown too much.)
  • Remove from oven, add beans and chickpeas. Simmer for 15 minutes uncovered on stove on medium-low to cook the beans and reduce the sauce.
  • Stir through lemon juice and zest. The idea here is that some of the veg (butternut, cauliflower) breaks down a bit to slightly thicken the sauce. It also gets thicker left overnight.
  • For a traditional experience, serve over couscous. Otherwise, try white, brown, or basmati rice, or quinoa. Or, serve just as is like a chunky stew. For a low-carb option try cauliflower rice! I like to top mine with a dollop of yogurt, a sprinkle of almonds, coriander/cilantro and a pinch of paprika or cayenne.

Fragrant North African spices mingle with cauliflower, vegetables and lemon to create this exotic and easy vegetarian meal. We served this dish and the residents' were delighted - I held back on the spices but not entirely! However, the couscous wasn't as well received; we had to opt for orzo but the residents' would have preferred r i c e! I can't fight "cultural appetites" any longer. :)

2 tablespoons extra virgin olive oil
1 large sweet onion, halved and cut in strips
4 garlic cloves, thinly sliced
1 teaspoon ground cumin
1 teaspoon ground ginger
2 slices lemons
2 bay leaves
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
14 1/2 ounces low sodium vegetable broth
2 lbs cauliflower, cored, cut into 2-inch-long florets
6 carrots, peeled, cut into 2-inch-lengths
29 ounces fire-roasted whole tomatoes, undrained (2 - 14.5 oz cans)
15 ounces chickpeas, drained (1 can)
1/2 cup raisins
1 cinnamon stick
2 medium zucchini, cut into 1-inch chunks
1/4 cup toasted slivered almonds
1/4 cup cilantro leaf
freshly cooked couscous, accompaniment (or orzo or rice for the folks' at Ponce Plaza!)

Steps:

  • Heat oil in a large Dutch oven over medium heat; add onion and sauté 6 minutes, or until soft and translucent.
  • Stir in garlic, cumin, ginger, lemon slices, bay leaves, salt and pepper and cook, stirring, until fragrant.
  • Pour in broth; add cauliflower, carrots, tomatoes with their juice, chickpeas, raisins and cinnamon stick.
  • Bring to a boil, breaking up tomatoes into large chunks with a spoon.
  • Reduce heat to low, cover pot and simmer 15 minutes, stirring several times.
  • Add zucchini chunks; cover pot and continue to simmer 10 minutes longer or until tender.
  • To serve, spoon couscous into serving bowls; top with the cauliflower tagine and juices from pot.
  • Sprinkle almonds and cilantro over each serving.

For the Vegetable Tagine:
2 tablespoons extra virgin olive oil
1 small onion (peeled and chopped, about 1 cup/165 g)
4 large cloves garlic (peeled, smashed, and chopped)
1 1/2 teaspoons cumin
1 teaspoon ginger
1 teaspoon cinnamon
1 large sweet potato (peeled and cut into 1-inch chunks, about 2 cups/350 g)
2 cups/475 ml vegetable stock
4 cups/325 g cauliflower florets
1 (14 1/2-ounce/411 g) can diced tomatoes with juice (or canned whole plum tomatoes, chopped, with their juice)
1 (15-ounce/425 g) can chickpeas (drained)
Sea salt and freshly ground black pepper to taste
For the Couscous:
1 1/2 cups/355 ml water
1 tablespoon extra virgin olive oil
1 1/2 cups/260 g couscous (regular or whole wheat)
Garnish: harissa
Garnish: slivered almonds or whole cashews
Garnish: golden raisins
Garnish: finely chopped parsley

Steps:

  • Gather the ingredients.
  • Warm the olive oil in a large Dutch oven or heavy pot set over medium-high heat.
  • Add the onion and sauté for 5 to 7 minutes, or until it softens and turns translucent.
  • Add the garlic, cumin, ginger, and cinnamon, and sauté for 1 minute, or until the spices are fragrant.
  • Add the sweet potato and sauté to coat with the spices.
  • Pour in the vegetable stock.
  • Add the cauliflower florets, drained chickpeas, and tomatoes. Bring to a boil, then reduce the heat to low.
  • Simmer partially covered, stirring occasionally, until the sweet potatoes are tender, about 25 minutes.
  • Season to taste with salt and pepper.
  • Remove from the heat and allow the tagine to rest while you prepare the couscous.
  • Bring the water and oil to a boil in a medium saucepan.
  • Stir in the couscous.
  • Cover and remove from the heat. Allow the couscous to rest for 5 minutes, or until the water is absorbed.
  • Fluff with a fork.
  • Spoon a mound of couscous into shallow bowls.
  • Surround the couscous with the vegetable tagine, and spoon some of the brothy sauce over each serving.
  • Garnish as desired with harissa, slivered almonds, whole cashews, golden raisins, and parsley.

This Moroccan vegan tagine is full of flavour, quick and easy to make for a midweek meal yet impressive enough to serve at a dinner party. Each serving provides 536 kcal, 19g protein, 72g carbohydrates (of which 22g sugars), 16g fat (of which 2g saturates), 13g fibre and 0.7g salt.

150ml/¼ pint vegetable stock
100g/3½oz dried apricots, roughly chopped
2 large onions, sliced
2 garlic cloves, crushed
2 tbsp olive oil, plus extra to roast the cauliflower
½ tsp ground turmeric
½ tsp ground ginger
½ tsp ground cumin
½ tsp ground coriander
½ tsp salt
600g/1lb 7oz cauliflower florets
200g/7oz couscous, cooked according to packet instructions
2 tbsp roasted flaked almonds
1 tbsp chopped fresh coriander

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Place all the ingredients except the cauliflower in a large saucepan and bring to the boil over a high heat. Reduce the heat to medium-low, cover with a lid and simmer gently, stirring occasionally, for 35 minutes.
  • Meanwhile, place the cauliflower florets in a large roasting tray, drizzle with olive oil and sprinkle with salt. Roast for about 25-30 minutes, until tender and golden.
  • Add the roasted cauliflower to the simmering chickpea tagine and simmer for 5 minutes, then taste and add more salt if necessary. Sprinkle with flaked almonds and coriander and serve with couscous.
