Nothing fancy to see here - just a healthy, delicious, vegan burrito bowl combo featuring spicy roasted cauliflower, pico de gallo, creamy refried black beans, rice, corn, avocado, and a good lime drench.

1 cup white or brown rice
1 head of cauliflower, chopped into florets
1 tablespoon olive oil
1 tablespoon taco seasoning, divided
1 14-ounce can of black beans, rinsed and drained
1/2 cup water
2 tomatoes, chopped
half of a small onion, chopped
juice of 2 limes + more wedges for serving
1/2 cup chopped fresh cilantro
2 ears of corn, kernels cut off the cob
1 avocado
your favorite hot sauce for topping

Steps:

  • Rice: Cook the rice according to package directions.
  • Heat the oven to 425 degrees. Toss the cauliflower florets with the olive oil and half of the taco seasoning. Sprinkle with salt and pepper. Roast for 20-25 minutes, tossing halfway through to prevent burning.
  • Combine the black beans, water, and remaining taco seasoning in a small saucepan. Bring to a low simmer. Mash the black beans with the back of a spoon until the mixture starts to get creamy. It should continue to thicken as it stays over medium low heat.
  • Toss the tomatoes, onion, limes, and cilantro together to make a pico de gallo. Season with salt.
  • Build a big bowl with rice, refried beans, corn, pico de gallo, avocado, and a lime wedge. Top the bowl with your roasted cauliflower and add your hot sauce if you want!

1 15-ounce can black or pinto beans, (slightly drained)
1/2 tsp ground cumin
1/2 tsp chili powder
~1/8 - 1/4 tsp sea salt ((to taste))
1 Tbsp olive or grape seed oil
3 cloves garlic, minced ((3 cloves yield ~1 1/2 Tbsp))
1/4 cup diced red or white onion
1 medium head cauliflower, grated into "rice" (see method here)
1 pinch sea salt ((plus more to taste))
3 Tbsp lime juice (~ 2 limes)
1 tsp ground cumin ((plus more to taste))
1/2 tsp chili powder
1/3 cup red or green salsa ((plus more for serving // I like Trader Joe's Chunky Salsa))
1/4 cup fresh chopped cilantro ((plus more for serving))
1 Tbsp olive or grape seed oil
1 medium red, green, orange, or yellow bell pepper ((thinly sliced lengthwise))
1/2 medium red onion ((sliced into 1/4-inch rings))
1 pinch sea salt

Steps:

  • Add beans to a small saucepan over medium heat and season with spices to taste. Once bubbling, reduce heat to low and stir occasionally.
  • Prepare cauliflower rice by following these instructions. Then heat a large rimmed skillet over medium heat.
  • Once hot, add oil, garlic, onion, and a pinch each salt and pepper. Sauté for 1 minute, stirring frequently. Then add cauliflower 'rice' and stir to coat.
  • Place the lid on to steam the rice for about 2-4 minutes or until almost tender like rice (al dente in texture), stirring occasionally. Chop up your bell pepper and onion at this time.
  • Remove rice from heat and transfer to a large mixing bowl. Add lime juice, cumin, chili powder, salsa and fresh cilantro. Stir to combine and taste and adjust seasonings accordingly, adding salt, pepper, lime juice, salsa, or more spices as desired. Set aside.
  • Heat the large skillet back over medium-high heat. Once hot, add oil, bell pepper and onion and a pinch of sea salt. Sauté, stirring frequently, until slightly softened and they take on a little color - about 4 minutes.
  • To serve, divide rice, beans, and peppers between serving bowls. Enjoy as is or with corn tortillas, chips, salsa, lime juice, hot sauce, or guacamole (recipe in notes).
  • Best when fresh, though leftovers keep for 2-3 days in the refrigerator.
  • Serve with desired toppings (listed above) or as is. I recommend avocado, lime juice, hot sauce, and cilantro.

Cauliflower can shine in many forms. This recipe shows how simple it is to turn the florets into a healthy, low-carb meal or side dish--our version has only about 1/4 of the carbohydrates in rice. With the olive oil and browned onions, the cauliflower has enough flavor to satisfy by itself, and it can also be a base for stir fries, beans and rice or anything else you would eat with rice.

1 large head cauliflower, separated into 1-inch florets
3 tablespoons olive oil
1 medium onion, finely diced
Kosher salt
2 tablespoons fresh parsley leaves, finely chopped
Juice of 1/2 lemon

Steps:

  • Trim the cauliflower florets, cutting away as much stem as possible. In 3 batches, break up the florets into a food processor and pulse until the mixture resembles couscous.
  • Heat the oil in a large skillet over medium-high heat. At the first wisp of smoke from the oil, add the onions, and stir to coat. Continue cooking, stirring frequently, until the onions are golden brown at the edges and have softened, about 8 minutes. Add the cauliflower, and stir to combine. Add 1 teaspoon salt, and continue to cook, stirring frequently, until the cauliflower has softened, 3 to 5 minutes. Remove from the heat.
  • Spoon the cauliflower into a large serving bowl, garnish with the parsley, sprinkle with the lemon juice and season to taste with salt. Serve warm.

A base of cauliflower rice and seasoned black beans topped generously with cherry tomato pico de gallo and creamy avocado. Love this easy, healthy dinner!

1 pint cherry tomatoes (about 25 tomatoes, halved (or quartered if large))
1/2 small red onion (finely chopped)
1 jalapeno pepper (diced (keep the seeds for more heat; discard for a milder version))
1 cup fresh cilantro (chopped (about 1/3 cup chopped))
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lime juice (from 2-3 limes, depending on juiciness)
1/2 medium cauliflower (grated)
1 tablespoon olive oil
Pinch salt & freshly ground black pepper
1 15-ounce can black beans
1 tablespoon olive oil
2 cloves garlic (peeled and halved)
1/2 teaspoon ground cumin
Pinch kosher salt & freshly ground black pepper
1/4 cup water (if needed)
Or simply substitute a scoop of these Supremely Delicious Black Beans from Scratch - about 3/4 cup per bowl
1 medium ripe avocado (peeled, pitted, and sliced thin)
Lime wedges
A few cilantro leaves

Steps:

  • Make the pico de gallo. In a medium bowl, stir together all of the pico de gallo ingredients. Taste and add additional salt and pepper if desired. Set aside.
  • Saute the cauliflower rice. Set a large saute pan over medium heat. When hot, add the olive oil. Add the grated cauliflower along with a pinch of salt and pepper. Cook, stirring frequently, until tender, about 3 minutes. I like to give it an extra minute or two until it gets a bit toasty and golden. Set aside.
  • Cook the beans. In a medium saute pan over medium heat, add the oil. Add the garlic cloves and let cook on each side for about 30 seconds. Mash with a fork. Add the drained beans, cumin, and salt and pepper and cook, stirring, until the beans are warmed through. Mash a few with the fork if you like, and if they start to look a little dry, stir in a bit of water if you'd like.
  • Assemble the burrito bowls. Set out two bowls and divide the cauliflower rice between the two. Layer in the beans and top with a generous scoop of pico de gallo. Top with avocado, a lime wedge for squeezing over the top if desired, and a few leaves of cilantro.
  • Serve at once.

1 large red onion, thinly sliced

1 tablespoon cumin seed
1 (15 ounce) can pinto beans, drained and rinsed (or black beans)
1/2 avocado, peeled and diced
3 tablespoons chopped cilantro, chives, and parsley
1/4 cup Greek yogurt (or sour cream)
1/4 cup salsa

Steps:

  • Place cauliflower in the bowl of a food processor. Pulse until cauliflower is very finely chopped and resembles quinoa. Heat a large cast iron skillet over high heat. Add 2 tablespoons olive oil, swirl to coat, and add cauliflower. Season with salt and pepper and cook, stirring only occasionally, until golden brown, about 5-6 minutes. Scrape into two serving bowls and top with lime zest. Return skillet to heat. Add 2 tablespoons olive oil. Add red pepper, onions, and jalapeno or serrano. Season with salt and pepper and cook until softened on medium-high heat, about 4 minutes. Add cumin seeds, toss to coat, and continue to cook until seeds are just toasted, about 30 seconds.
  • Divide mixture between serving bowls. In a small bowl, combine beans, lime juice, and remaining 1 tablespoon olive oil. Season with salt and pepper and divide between serving bowls. Add avocado, herbs, yogurt or sour cream, and salsa to serving bowls, dividing evenly. Serve.
