CAULIFLOWER WITH CHEESE SAUCE

Cauliflower with Cheese Sauce image

This is an easy recipe for cauliflower cheese but it's pretty versatile. You can use the cheese sauce with any vegetables you have handy. I often put a layer of cooked kale or broccoli on the bottom, then arrange the cooked cauliflower florets on top. You can change the flavor of the sauce by adding different cheeses you might have in your fridge. It takes a bit of elbow work to make the sauce but it's worth it. This is delicious served with roast beef or lamb.

Yield 6

Number Of Ingredients 7

1 head cauliflower, broken into florets
¼ cup butter
¼ cup all-purpose flour
1 ¾ cups 1% milk
2 ounces Parmesan cheese, grated
salt and ground black pepper to taste
2 ounces mature Cheddar cheese, grated

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place cauliflower in a large pot and pour in enough water to cover; bring to a boil and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and transfer to a baking dish.
  • Melt butter in a small saucepan over low heat. Add flour and mix using a whisk or wooden spoon until smooth and mixture pulls away from the side of the saucepan, 2 to 3 minutes. Pour in milk, a little at a time, and whisk continuously until sauce is thickened but still pourable, 3 to 4 minutes.
  • Stir Parmesan cheese into sauce until melted; season with salt and pepper. Pour sauce over all of the cauliflower. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until cheese is golden brown, 20 to 25 minutes.

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 7

Kosher salt
1 head cauliflower (about 2 pounds)
2 tablespoons unsalted butter
1/3 cup panko breadcrumbs
1/4 cup freshly grated Parmesan
1 tablespoon chopped fresh basil
One 8-ounce block white Cheddar cheese, cut into 1/2-inch logs (about 20 pieces)

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Trim the base of the cauliflower so the stem is flat to the head but without cutting off any florets. Blanch the cauliflower until just beginning to soften, 8 to 10 minutes. Remove to a plate to cool slightly.
  • In a small skillet, heat the butter until melted. Add the breadcrumbs and 1/2 teaspoon salt and toast until golden brown, about 3 minutes. Set aside to cool completely. Stir in the Parmesan and basil.
  • Gently begin to create space in between the florets and stuff each space with a log of Cheddar. Continue until all the pieces of cheese are used. Press the toasted breadcrumbs on top of the cauliflower. Place in a small baking dish and bake until the cauliflower is tender all the way through and the breadcrumbs are golden, about 20 minutes.

CAULIFLOWER IN CHEESE SAUCE

Cauliflower in Cheese Sauce image

Posted for ZWT-6, this recipe comes from the Usborne Children's World Cookbook that gramma gave my son when he was first learning to cook. Any strong-flavored cheese will work in this recipe, such as cheddar, but if you are looking for an authentic Dutch flavor, choose either Edam or Gouda. The servings, cook & prep time are estimates.

Categories     Cheese

Time 35m

HOW TO MAKE CAULIFLOWER TORTILLAS - RECIPE WITH 4 INGREDIENTS

How To Make Cauliflower Tortillas - Recipe with 4 Ingredients image

An easy cauliflower tortillas recipe with just 4 ingredients! These cauliflower wraps can bend without breaking. Perfect for low carb quesadillas!

Provided by Maya | Wholesome Yum

Categories     Main Course

Time 40m

Number Of Ingredients 11

1 1/2 lb Cauliflower ((florets only - about one large head))
3 large Egg
3/4 cup Mozzarella cheese ((shredded))
1/2 tsp Sea salt
1/2 tsp Xanthan gum
6 tbsp Mayonnaise
2 tbsp Jalapenos in water ((from a jar, minced, with liquid included - equivalent to 2-3 slices + liquid))
3/4 tsp Paprika
1/2 tsp Garlic powder
Cayenne pepper ((to taste))
1 1/2 cup Cheddar cheese ((shredded))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C). Line two baking sheets with parchment paper.
  • Pulse the cauliflower florets in a food processor until they are the consistency of rice. (Use the grate attachment if you have one.)
  • Transfer to a large bowl and microwave on high for 8-10 minutes (or steam using your favorite method), until cooked. Cool until the cauliflower is cool enough to handle. Transfer to a cheese cloth or towel and squeeze tightly to get rid of as much extra liquid as possible. It should be dense and clumpy.
  • Switch the food processor to the S blade and place the cauliflower back in. Add the eggs, mozzarella and salt. Process until smooth.
  • Sprinkle the xanthan gum on top (do not dump it in one clump). Process until smooth.
  • Drop the cauliflower mixture into six areas on the lined baking sheets. Use a spatula or the back of a spoon to spread into thin circles. Bake for 8-10 minutes, until the edges are dry and the bottom is golden. (If both baking sheets don't fit in the oven side by side, do one at a time.) Carefully flip over, then bake for 4-6 more minutes. Cool for 10 minutes before moving.
  • To make the sauce, whisk all ingredients in a small container. Cover and refrigerate to allow the flavors to develop (you can do this overnight if you have time).
  • Spread a tablespoon of the sauce over each cauliflower tortilla. Sprinkle 1/4 cup of shredded cheddar cheese on top. Fold in half.
  • Heat an oiled pan over medium heat. Place two folded quesadillas in the pan. Fry for a couple of minutes, until browned, then flip and repeat on the other side. Repeat with the remaining quesadillas.
