JUICY MEATBALL RECIPE
These Flavorful and juicy homemade meatballs are make-ahead and freezer friendly so they're perfect for meal prep. The meatballs can be baked or sauteed and served as appetizers or the main course.

- Combine diced bread in a large bowl with 2/3 cup water. Set aside 5 minutes then mash with a fork. Meanwhile, prepare the remaining ingredients.
- Into the bowl of mashed bread crumbs, add ground beef, ground pork, 1/4 cup parmesan cheese, 1 egg, 3 minced garlic cloves, 2 Tbsp parsley, 1 tsp salt and 1/2 tsp black pepper. Use your hands to stir the mixture together just until well combined. Do not overmix.
- Portion onto a lined baking sheet (about 2 Tbsp per meatball - an ice cream scoop makes it easy). With wet hands, roll meatballs into 1 1/2" diameter balls.
- To Sautee: Heat a large non-stick pan over medium heat. Add 2 Tbsp oil. Once the oil is hot, add meatballs to the skillet, placing them in one at a time and cook in batches to get a good sear. Sautee turning every 2 minutes (total 6-8 minutes), or until evenly browned and the internal temperature reaches 160˚F on an instant-read thermometer. Serve as is or in any recipe that calls for meatballs.
- To Bake Meatballs: Place on a lined baking sheet 2" apart and bake in a fully preheated oven at 400˚F for 20-23 minutes, or until fully cooked and the centers reach 160˚F. If you want a prettier color to your meatballs, broil for the last 2-3 minutes.

SAUCY MEATBALLS
This is one of my adopted Zaar recipes. I suggest using Basic Meatballs recipe #8060 for the meatballs listed in this recipe as it is almost identical to the recipe that I use. I would also suggest serving this over noodles with a salad and crusty rolls for an easy no-fuss meal that will come together quickly.

Steps:
- Prepare the Basic Meatball recipe.
- Combine the cooked meatballs, soup, milk, and nutmeg in a large skillet; heat to boiling, stirring occasionally.
- Reduce the heat; cover and simmer for 15 minutes.
- Stir in the sour cream, cover and heat for 2 to 3 minutes.
- Sprinkle with the parsley and serve.
CATHY'S SAUCY MEATBALLS
This is a meatball recipe that my Mom used to make. We gobbled them up. Usually she served them with mashed potatoes and we used the sauce as gravy, but you could serve them with rice.

- For meatballs: Combine ground beef, cracker or bread crumbs, salt, milk, pepper and onions/herbs. Blend well.
- Make mixture into balls, and brown them on all sides.
- For sauce: Simmer together ketchup, brown sugar, vinegar, water first quantity of water, until hot and sugar is dissolved.
- Thicken smoothly with cornstarch and second quantity of water.
- Add meatballs to sauce and simmer until meatballs are cooked through.

- Heat oven to 180C/fan 160C/gas 4.
- Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
- Add the beaten egg and breadcrumbs, then mix again.
- Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
- Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
- Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

- In a large bowl, combine the eggs, bread crumbs, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 20 minutes or until no longer pink. Drain on paper towels. Transfer to a greased 13-in. x 9-in. baking dish., In a large saucepan, combine the ketchup, jelly and onion. Cook and stir over medium heat for 3-5 minutes or until jelly is melted. Pour over meatballs. Bake, uncovered, 20 minutes longer or until sauce is bubbly.
