KATHY'S PINEAPPLE-COCONUT OATMEAL COOKIES
I took a basic oatmeal cookie recipe and just changed a few things around. Dried pineapple works best. I wanted a cookie without chocolate, but I'm thinking of adding some chips to the next batch - these were a huge hit with my coworkers!!!!

Steps:
- Preheat oven to 350 degrees.
- Whisk together flour, soda, powder and salt; set aside.
- Cream together butter, sugars, eggs and vanilla - mixing on high until light and fluffy.
- Stir the flour mixture into the creamed mixture, until well combined.
- Stir in oats, pineapple and coconut.
- Using a 2 tablespoon cookie scoop, drop dough 2 inches apart onto a baking sheet (I always use a silpat on my baking sheets - you never have burned cookies with one!).
- Bake 12 minutes on center rack until golden.
- Remove from oven, cool on sheet for about 1 minute, then transfer to a wire rack to cool. Store in airtight container.

COCONUT OAT COOKIES
These chewy cookies have been a family favorite for years. The pecans provide a crunchy contrast to go along with all that chewy goodness!

- Preheat oven to 325°. Cream butter, brown sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine next five ingredients; add to creamed mixture and mix well. Stir in coconut., Shape into 1-in. balls. Place 2-1/2 in. apart on greased baking sheets (cookies will spread). Place pecan half in the center of each cookie and push down slightly. Bake 14-16 minutes.

THICK COCONUT OATMEAL RAISIN COOKIES
These are our all time favourite oatmeal cookies. It started off as a basic oatmeal cookie, and over the years, has evolved into this. They are easy to put together, and they make a big batch. Freeze well too! Another one of those "Can't Eat Just One" cookies.

- Cream butter and sugar until fluffy.
- Add egg and vanilla. Beat well.
- Combine flour, baking soda, salt, oats and coconut. Gradually add to creamed mixture.
- Add water and raisins.
- Drop by teaspoon full onto a parchment lined cookie sheet.
- Bake for 11 - 14 minutes. Cool slightly before removing from sheet.

- Preheat oven to 325F.
- Beat butter and sugars together at High speed until fluffy.
- Add eggs and beat on medium speed until blended.
- Beat in vanilla, baking soda and salt until mixed in fully.
- Add flour and mix at low speed until blended.
- Stir in oats, coconut and chocolate using spoon.
- Arrange in mounds on baking sheets. Pat down if desired.
- Cook 12-14 minutes.
- Cool one minute before transferring to cooling rack.
