SHORTCUT BEEF CATALAN

Shortcut Beef Catalan image

This Spanish beef and bean stew normally cooks long and slow because tough cuts of meat are used. By substituting ground beef, I've pared cooking time to about 50 minutes. I've also significantly trimmed prep time by using packaged, peeled baby-cut carrots, bottled salsa, and canned cannellini.

Yield Makes 6 servings

Number Of Ingredients 18

1 tablespoon extra-virgin olive oil
6 strips lean bacon, snipped crosswise into julienne strips
1 pound lean ground beef chuck
2 cups fresh or frozen chopped onions (2 medium-large yellow onions)
2 large garlic cloves, minced
One 1-pound packaged peeled baby-cut fresh carrots
2 whole bay leaves
Two 3-inch sprigs fresh thyme or 1/2 teaspoon dried thyme, crumbled
One 3-inch strip orange zest
One 1-inch piece cinnamon stick
2 whole cloves
One 10 1/2-ounce can beef consomme
1 cup dry red wine
One 1-pound jar chunky salsa (not too spicy)
2 tablespoons tomato paste
One 1-pound 3-ounce can cannellini (white kidney beans), drained
3 tablespoons minced Italian (flat-leaf) parsley
Salt and freshly ground black pepper

Steps:

  • Heat oil in medium-size Dutch oven over moderate heat 1 minute. Add bacon and cook, stirring often, until only browned bits remain, about 5 minutes. Lift brown bits to paper toweling to drain. Raise burner heat to high.
  • Pat ground chuck into large flat patty and brown in drippings, allowing about 3 minutes per side; life to plate and reserve.
  • Reduce heat to moderate; add onions, garlic, carrots, bay leaves, thyme, orange zest, cinnamon, and cloves to Dutch oven and cook, stirring frequently, 5 minutes until onions are golden.
  • Add consomme and wine, bring to gentle boil, set lid on askew, and cook 15 minutes. Lay meat patty on top of stew, set lid on askew, and cook 15 minutes more.
  • Break meat into 1 1/2-inch clumps, mix in salsa and tomato paste, and cook uncovered 5 minutes. Add cannellini, parsley, and reserved bacon and bring just to serving temperature. Season to taste with salt and pepper.
  • Remove bay leaves, thyme sprigs, and cinnamon stick, ladle into heated soup plates, and serve.

ITALIAN VEAL STEW WITH POTATOES | SPEZZATINO RECIPE

Italian Veal Stew with Potatoes | Spezzatino recipe image

Veal Stew with Potatoes (Spezzatino) is a classic Italian stew, a winter rustic confort food. Spezzatino recipe is a tasty complete meat recipe: tender veal cubes cooked slowly with the potatoes in stew. The result is a luscious rich creamy stew. Just the aroma, while it's cooking, is enough to make your mouth water! The best veal stew is simmered with vegetables, potatoes, white wine and rosemary until the meat is incredibly tender. You can even use this recipe to make Beef stew, which however needs to be cooked longer then veal.

Time 1h30m

Yield 4

Number Of Ingredients 13

600 g (1,3 pound) of stewing Veal
500 g (1,1 pound ) of potatoes
1 small carrot
1/2 stick of celery
1 small onion
1/2 cup of dry white wine
500 ml (2 cups) of meat or vegetable stock
2 sprigs of rosemary
6 tablespoons of Extra virgin olive oil.
2 tablespoons of all-purpose flour
2 tablespoons of Tomato Paste
1 teaspoon of fine salt
freshly ground black pepper

Steps:

  • With the help of a small food processor, chop the celery, carrot and onion into small pieces and set aside. Then with a sharp knife, cut the veal into 3 cm (1 inch) pieces.
  • Flour the pieces of meat and shake them to remove excess flour. Keep them aside. In a large casserole, make a soffritto with the extra virgin olive oil and the chopped vegetables. Cook over low heat until softened and golden, about 2 minutes.
  • Add the floured pieces of meat. Cook over high heat for 3 minutes, turning them from time to time until browned all over. Then add the dry white wine. Mix and let it evaporate completely over high heat.
  • Add a couple of ladles of hot stock and a pinch of salt. Cover with a lid and reduce the heat. Let the veal stew cook for about 30 minutes over very low heat, taking care to stir it from time to time. While the veal is cooking, peel the potatoes and cut them into fairly regular pieces of about 4 cm (1 1/2 inch).
  • Now add the potatoes. Season with salt, freshly ground black pepper and the rosemary. Then add a ladle of hot stock.
  • Add two tablespoons of tomato paste. Stir and cook for another 45 minutes. During the cooking, don't stir very often or you risk flaking the potatoes. They must be soft, but still intact. Remove the sprig of rosemary before serving. Italian veal stew with potatoes is ready. Serve it hot

VEAL STEW

My aunt gave me this delicious recipe years ago, and it's still my favorite veal dish! This tomato and white wine sauce keeps the meat tender and moist during cooking. Serve over buttered noodles. Hope you enjoy it as much as our family does.

BEEF STEW WITH PRUNES

Beef Stew With Prunes image

Braised dishes like this beef stew may feature green, orange, yellow or red vegetables but their most appetizing color is brown, the shade of brown whose glossy darkness shouts intensity and richness. The key to achieving that glorious color and flavor is sufficient browning of the meat. Don't rush. The good thing is, this savory-sweet stew can almost be ignored while it is cooking and can be made in advance, the night - or even two - before you serve it. Couscous makes a great accompaniment, as does saffron rice, because those bring out the color of the stew. Plain crusty bread is another great option. This is simple cold weather food at its most appealing.

Time 2h

Yield 4 servings

Number Of Ingredients 14

3 tablespoons extra virgin olive oil
2 pounds lean boneless beef, preferably chuck, in 2-inch cubes
Salt and pepper to taste
1 onion, peeled and chopped
3 plum tomatoes, stemmed and chopped (canned are fine)
1 teaspoon sweet paprika, more to taste
1 cinnamon stick
1 bay leaf
1 cup chicken stock
1 cup dry red wine
2 tablespoons sugar
1 cup pitted prunes
1 tablespoon sherry vinegar or other vinegar, or to taste
Chopped parsley leaves for garnish

Steps:

  • Place a deep skillet or casserole that can be covered over medium-high heat, and add oil. Brown meat well on all sides, seasoning with salt and pepper, for 10 minutes; remove with a slotted spoon.
  • In same pot over medium-high heat, sauté onion and tomatoes with a large pinch of salt and some pepper. When they soften, about 5 minutes, stir in paprika, cinnamon, and bay leaf. Return meat to pan, and add stock and wine; bring to a boil, then lower heat, cover, and simmer for 30 minutes. If mixture starts to dry, add a little water or stock.
  • Remove cinnamon and bay leaf, and stir in sugar and prunes. Simmer until prunes and meat are soft, another 30 to 45 minutes. (Dish can be made in advance to this point; let sit for a few hours, or cover and refrigerate for up to a day before reheating and proceeding.) When meat is very tender, uncover pot and add vinegar; if necessary, raise heat so sauce thickens and becomes glossy. Season to taste with salt and pepper, and serve hot, garnished with parsley.
