Time P1DT1h35m

Yield 1 cake or 3 (9-inch) layers

Number Of Ingredients 13

2 cups granulated sugar
1 1/2 cups vegetable oil
4 fresh whole eggs
2 cups pastry flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups raw finely ground carrots
4 ounces finely chopped walnuts
1 1/2 pounds powdered sugar
12 ounces room temperature cream cheese
1 tablespoon vanilla extract
2 ounces room temperature margarine

Steps:

  • For the cake:
  • Preheat oven to 300 degrees F.
  • In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. Fold dry ingredients into wet mixture and blend well. Fold in carrots and chopped nuts until well blended. Distribute batter evenly into 3 (9-inch) cake layer pans, which have been generously greased. There will be approximately 1 pound 5 ounces of batter per pan. Place in preheated oven and bake for 50 to 60 minutes. Cool layers in pans, for approximately 1 hour. Store layers in pans, inverted, in closed cupboard to prevent drying. Layers must be a minimum of 1 day old.
  • To remove layers from baking pan, turn upside down, tap edge of pan on a hard surface. Center a 9-inch cake circle on top of revolving cake stand. Remove paper from bottom of layer cake.
  • For the frosting:
  • In a suitable bowl of large mixer, place powdered sugar, cream cheese, vanilla, and margarine. Beat at second speed until thoroughly blended. Hold refrigerated and use as needed.
  • For the assembly:
  • Place first layer, bottom side down, at center of cake stand. With a spatula, evenly spread approximately 3 1/2 ounces of frosting on the layer. Center second layer on top of first layer with topside down. Again with a spatula, evenly spread approximately 3 1/2 ounces of frosting on the layer. Center third layer on top of second layer with topside down. Using both hands, press firmly but gently, all layers together to get one firm cake. With spatula, spread remainder of frosting to cover top and sides of cake. Refrigerated until needed. Display on counter or cake stand with a plastic cover.

CARROT CAKE FOR TWO

Carrot Cake for Two image

If you avoid baking a cake because there aren't enough people in your home to help you eat it, then we have the solution: Make just one slice. We've scaled down a regular recipe so you won't be stuck with leftovers.

Provided by Food Network Kitchen

Categories     dessert

Time 2h55m

Yield 2 servings

Number Of Ingredients 16

Cooking spray
1/4 cup pecans
2/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Pinch freshly grated nutmeg
1/2 cup granulated sugar
1 large egg, at room temperature
1/4 cup vegetable oil
1/2 teaspoon pure vanilla extract
5 ounces carrots (about 3 small), finely grated (about 1 cup)
8 ounces cream cheese, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup confectioners' sugar
1/2 teaspoon pure vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a 9-by-2-inch round cake pan with parchment, and lightly coat with cooking spray. Toast the pecans on a small baking sheet until lightly browned and fragrant, about 8 minutes. Let cool, then coarsely chop.
  • Whisk together the flour, baking powder, cinnamon, salt and nutmeg in a medium bowl. Make a big well in the center so you can see the bottom of the bowl. Working within the well, add the sugar and egg and beat with a fork until well combined, then add the oil and vanilla and beat with the fork. Stir the dry and wet ingredients together with the fork until just combined. Fold in the carrots and pecans.
  • Transfer the batter to the prepared pan, and bake until a toothpick comes out clean, 20 to 25 minutes. Let the cake cool in the pan on a cooling rack for 20 minutes, then turn it out of the pan, remove the parchment and let cool completely, right-side up, on the rack, about 1 hour.
  • For the frosting: Process the cream cheese and butter in a food processor until completely combined and smooth, stopping once or twice to scrape the bottom and side of the bowl. Add the confectioners' sugar and vanilla, and process until just combined. Transfer to a small bowl.
  • To assemble: Cut the cake into 4 even wedges, as if you were cutting up a pie. Frost the top of each wedge with about 3 tablespoons of frosting (an offset spatula helps spread the frosting evenly). Stack the frosted wedges directly on top of each other on a serving plate, resulting in a 4-layer slice of cake with frosting between the layers and on top. Completely cover the curved back side of the cake with the remaining frosting, and leave the 2 remaining sides open. Refrigerate for at least 30 minutes. Cut the wedge in half, and serve.

CARROT SNACKING CAKE WITH CREAM CHEESE FROSTING

Carrot Snacking Cake with Cream Cheese Frosting image

This one-bowl, one-layer carrot cake is a perfect "mix-and-bake" dessert. It's full of flavor from the shredded carrots, cinnamon and vanilla, and the nuts add texture. The cake is super-moist because it uses oil, and the fresh carrots add moisture too. You don't need any fancy equipment--you can simply mix all of the ingredients together in a bowl with a whisk or spoon (and a fork is the perfect makeshift whisk!). The frosting is super creamy and simple, and you can jazz things up and serve the iced cake from a cake stand, if you want to be fancy.

Time 2h

Yield 9 servings

Number Of Ingredients 19

1/2 cup chopped pecans or walnuts, optional
Nonstick baking spray with flour, optional
2 large eggs
1/2 cup vegetable oil
1/4 cup milk
1 cup granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon fine salt
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 1/2 cups shredded carrots
1/2 cup raisins
4 ounces full-fat cream cheese, softened
2 cups confectioners' sugar
1 tablespoon milk
1/4 teaspoon pure vanilla extract, optional
Dash fine salt

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Spread the nuts in an even layer on a baking sheet. Cook until toasted, 8 to 10 minutes. Give them a shake halfway through so they don't burn.
  • Meanwhile, prepare your baking pan. A square 8-inch cake pan or a 9-inch round cake pan both work great. You can spray the pan with nonstick baking spray with flour or line the bottom with parchment paper and then grease the pan and the paper.
  • In a large bowl, whisk the eggs and oil together until combined. Add the milk, sugar, vanilla and salt and whisk until combined. Sift the flour, baking soda, baking powder and cinnamon into the bowl and stir or fold until combined. Add the carrots, raisins and toasted nuts if using and stir or fold until combined.
  • Pour the batter into the prepared pan and bake until your house smells like carrot cake and a toothpick inserted into the center comes out clean, 35 to 40 minutes. Remove from the oven and cool on a wire rack 15 to 20 minutes. Remove the cake from the pan and cool on the rack completely.
  • While the cake is baking, make the frosting: Add the softened cream cheese to a large bowl and whisk it until it is smooth (if the cream cheese isn't softened, zap it in the microwave for 5 or 10 seconds).
  • Add the confectioners' sugar, milk, vanilla, if using, and salt and whisk until smooth. If the frosting is a little too thick, add a tiny bit more milk. If it's too thin, you can add more confectioners' sugar.
  • Once your cake has cooled (if it's warm it will melt the frosting), spread the frosting evenly over the cake. Tada! Enjoy!

HEALTHY CARROT CAKE OATMEAL SNACK CAKE

Healthy Carrot Cake Oatmeal Snack Cake image

This healthy snack cake has all of the same irresistible components as traditional carrot cake--cozy spices, sweet carrots, and a comforting texture--but it's much easier to make! (And it's secretly healthy enough for breakfast, too!) Leftovers will keep for at least one week if stored in an airtight container in the refrigerator.

Yield 1 cake, 16 squares

Number Of Ingredients 14

1 ½ cups (150g) instant oats (measured like this and gluten-free, if necessary)
1 ¼ cups (150g) whole wheat or gluten-free* flour (measured like this)
1 ½ tsp baking powder
½ tsp baking soda
2 ½ tsp ground cinnamon
¾ tsp ground nutmeg
¼ tsp salt
½ tbsp (7g) coconut oil or unsalted butter, melted and cooled slightly
2 large egg whites, room temperature
2 tsp vanilla extract
¾ cup (180g) plain nonfat Greek yogurt
6 tbsp (90mL) pure maple syrup
½ cup (120mL) nonfat milk
2 cups (180g) freshly grated carrots (peeled first!)

Steps:

  • Preheat the oven to 350°F, and coat a 9"-square pan with nonstick cooking spray.
  • In a medium bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Add in Greek yogurt, stirring until no large lumps of yogurt remain. Stir in the maple syrup. Alternate between adding the oat mixture and milk, beginning and ending with the oat mixture, and stirring just until incorporated. (For best results, add the oat mixture in 3 equal parts.) Gently stir in the carrots.
  • Spread the batter into the prepared pan. Bake at 350°F for 24-28 minutes or until the center feels firm to the touch and a toothpick inserted into the center comes out clean. Cool completely to room temperature in the pan before slicing and serving.

(Check out my post all about how to line baking pans with parchment paper for tips. If using a round cake pan, be sure to also butter and flour the pan by first coating the interior of the pan with a thin layer of butter, making sure to coat the entire bottom, into the edge, and up the sides. Sprinkle some flour into the pan and shake it over the sink so that all of the butter is covered by a dusting of flour. Dump out any excess flour.) Set the prepared pan aside.
