1 1/2 tablespoons butter
1 tablespoon oil
1 medium leek, chopped
3 garlic cloves, crushed
8 medium carrots, grated
1/2 cup fresh basil
4 eggs, lightly beaten
300 ml cream
1 teaspoon pepper
6 lasagna sheets
400 g feta, crumbled

Steps:

  • Grease ovenproof dish.
  • Heat butter and oil in pan, add leeks and garlic, cook, stirring until leeks are soft.
  • Add carrots, cook, covered, stirring occasionally, about 10 minutes, or until carrots are soft, cool slightly, stir in basil.
  • Combine eggs, cream and pepper in bowl, mix well.
  • Cover base of prepared dish with half lasagna sheets, top with half the carrot mixture, half the feta and half the egg mixture.
  • Repeat layers, finishing with egg mixture.
  • Bake uncovered in moderate oven about 50 minutes or until firm and browned.

2 pound dried lasagna noodles
Extra-virgin olive oil
2 pounds ground beef
2 pound ground Italian sausage
1 onion, chopped
2 cloves garlic, sliced
3 carrots, chopped
2 stalks celery, chopped
2 tablespoons chopped fresh basil
1/4 cup finely chopped Italian flat-leaf parsley
1 tablespoon chopped oregano leaves
2 tablespoons all-purpose flour
2 cups red wine
2 (28-ounce) cans tomatoes (recommended: San Marzano)
3 tablespoons heavy cream
1 teaspoon ground cinnamon
2 quarts ricotta cheese, (2 containers)
2 eggs, lightly beaten
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper
1 pound mozzarella cheese, shredded
Grated Parmesan and mozzarella, for topping

Steps:

  • Preheat oven to 350 degrees F.
  • Cook the lasagna noodles in plenty of boiling salted water until pliable and barely tender, about 10 minutes. Stir with a wooden spoon to prevent sticking. Drain the noodles thoroughly and coat with olive oil to keep them moist and easy to work with.
  • Coat a large skillet with olive oil, add beef and sausage and brown until no longer pink, about 10 minutes. Season with salt and pepper. In a food processor, combine the onion, carrots, celery, garlic, basil, parsley, an oregano. Process until pureed, add to the pan with the ground meat and stir to combine. Stir in the flour. Add the wine and cook until it has reduced by half. Stir in the tomatoes and add the heavy cream and the cinnamon.
  • In a mixing bowl, combine ricotta and the parmesan. Stir in the eggs and season with salt and pepper.
  • To assemble the lasagna: Coat the bottom of a deep 13 by 9-inch pan with olive oil. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Dollop 1/2 of the ricotta mixture over the pasta, spread to the edges with a spatula. Spread 1/2 of the meat mixture over the ricotta. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of sauce, spread evenly. Repeat with the next layer of noodles, ricotta, sauce, and cheeses. Top last layer with noodles, sauce, shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.

1 tablespoon olive oil

1 (10 ounce) bag baby spinach
hot water to cover
1 (32 ounce) container ricotta cheese
1 cup shredded mozzarella cheese
¼ cup grated Parmesan-Romano cheese blend
1 egg
1 tablespoon Italian seasoning
12 lasagna noodles
6 tablespoons butter
1 cup heavy whipping cream
½ cup milk
4 ounces Neufchatel cheese
1 teaspoon garlic salt
1 teaspoon red pepper flakes
½ cup shredded mozzarella cheese
2 egg yolks
1 cup shredded carrots
1 (16 ounce) can artichoke hearts, drained and chopped
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Slice off the top portion of the garlic head to expose each clove. Place garlic head on a baking sheet. Drizzle olive oil over garlic and season with salt and pepper.
  • Roast garlic in the preheated oven until tender and fragrant, about 40 minutes. Cool garlic until easily handled. Remove garlic cloves from the peels.
  • Place spinach in a bowl. Pour enough hot water over spinach to cover; set aside until wilted. Drain and squeeze liquid from spinach.
  • Mix ricotta cheese, 1 cup mozzarella cheese, Parmesan-Romano cheese blend, egg, and Italian seasoning together in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.
  • Heat butter in a saucepan over medium heat until melted. Stir cream and milk into melted butter until thickened, about 5 minutes. Stir Neufchatel cheese into cream mixture until melted, 2 to 3 minutes. Add roasted garlic cloves, garlic salt, red pepper flakes, salt, and pepper; stir well. Stir 1/2 cup mozzarella cheese into cream mixture; cook until cheese sauce is smooth, 2 to 3 minutes. Stir egg yolks into cheese sauce until fully incorporated. Remove saucepan from heat.
  • Arrange 4 lasagna noodles in the bottom of the prepared baking dish. Layer 1/2 of the carrots, 1/2 of the artichoke hearts, 1/2 of the ricotta mixture, 1/2 of the spinach, 1/2 of the alfredo sauce, 4 lasagna noodles, respectively, over the lasagna noodles. Repeat layering with remaining ingredients, ending with a layer of lasagna noodles topped with 2 cups mozzarella cheese. Cover dish loosely with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove foil and continue baking until cheese is bubbling and lightly browned, about 15 minutes more. Remove lasagna from oven and let rest for 5 minutes before slicing.

3 tbsp olive oil
2 celery sticks, finely chopped
1 onion, finely chopped
1 carrot (about 100g), finely chopped
3 garlic cloves, crushed
140g cubetti di pancetta
500g beef mince (we used 10% fat)
500g pork mince or British veal mince
200ml milk
2 x 400g cans chopped tomatoes
2 bay leaves
1 rosemary sprig
2 thyme sprigs
2 tsp dried oregano
2 beef stock cubes
500ml red wine
about 400g dried pasta sheets
50g parmesan, finely grated
1.5l milk
1 onion, thickly sliced
3 bay leaves
3 cloves
100g butter
100g plain flour
good grating of nutmeg

Steps:

  • First, make the béchamel sauce. Put the milk, onion, bay leaves and cloves into a large saucepan and bring very gently just up to the boil. Turn off the heat and set aside for 1 hr to infuse.
  • For the meat sauce, put the oil, celery, onion, carrot, garlic and pancetta in another large saucepan. Gently cook together until the veg is soft but not coloured.
  • Tip in the beef and pork mince, the milk and chopped tomatoes. Using a wooden spoon, stir together and break up and mash the lumps of mince against the sides of the pan. When the mince is mostly broken down, stir in all the herbs, the stock cubes and the red wine, and bring to a simmer. Cover and cook for 1 hr, stirring occasionally to stop the bottom catching.
  • Uncover and gently simmer for another 30 mins-1 hr until the meat is tender and saucy. Taste and season.
  • To finish the béchamel sauce, strain the milk through a fine sieve into one or two jugs. Melt the butter in the same pan then, using a wooden spoon, mix in the flour and cook for 2 mins.
  • Stir in the strained milk, a little at a time - the mix will thicken at first to a doughy paste, but keep going, adding milk gradually to avoid lumps. Bring to a gentle simmer, stirring constantly (if you have lumps, give it a quick whisk). Gently bubble for a few minutes until thickened. Season with salt, pepper and a good grating of nutmeg.
  • Heat the oven to 180C/160C fan/gas 4. Spread a spoonful of the meat sauce over the base of a roughly 3.5-litre baking dish. Cover with a single layer of dried pasta sheets, snapping them to fit if needed, then top with a quarter of the béchamel. Spoon over a third of the meat sauce and scatter over a little of the parmesan.
  • Repeat the layers - pasta, béchamel, meat and parmesan - two more times to use all the meat sauce. Add a final layer of pasta, the last of the béchamel and remaining parmesan. Sit the dish on a baking tray to catch spills and bake for 1 hr until bubbling, browned and crisp on top.

2 medium onions, chopped
4 garlic cloves, minced
1 (28 ounce) can whole tomatoes, snipped to pieces in the can with kitchen shears
1 (16 ounce) bag frozen peas and carrots, thawed
2 tablespoons fresh thyme, chopped
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon grated nutmeg
32 ounces ricotta cheese (regular or lowfat, do not use fat free)
2 large eggs, at room temperature
1/2 teaspoon finely grated lemon zest
9 no-boil lasagna noodles
1 lb pencil-thin asparagus spear

Steps:

  • Position oven rack in center of oven; preheat oven to 350°.
  • Make the sauce: heat a large pan over medium heat, add in butter and olive oil; when butter has almost melted, add the onion; cook, stirring often, until translucent, about 3 minutes.
  • Add in garlic; cook, stirring constantly, until aromatic, about 15 seconds.
  • Pour in the tomatoes and their juice along with the peas and carrots; stir well and bring mixture to a simmer.
  • Stir in the thyme, salt, pepper, and nutmeg; simmer just to blend the flavors and boil off a lot of the liquid, about 10 minutes.
  • You don't want sauce as thick as ragu-more like a loose tomato sauce but beware of a watery sauce.
  • Remove pan from heat and set aside.
  • Cheese filling: whisk the ricotta, eggs, and lemon zest in a big bowl; do not beat-the ricotta should not turn watery.
  • Prepare asparagus: trim off any beige or woody ends; shave off the outer skin to ensure that the spears will be tender after they are baked.
  • If you asparagus is not pencil thin, shave down the spears with a vegetable peeler.
  • Assemble the lasagna in a 13 x 9 inch baking pan as follows: 1 cup tomato sauce spread across the bottom of the pan; 3 no-boil noodles; 1 ½ cups tomato sauce; half the cheese filling (use a rubber spatula to spread it evenly); half the asparagus spears (lay them tip to root in alternating directions); 3 more no-boil noodles; 1 ½ cups tomato sauce, the remaining cheese filling, the remaining asparagus spears, the remaining noodles, and finally the remaining tomato sauce.
  • Cover pan with a layer of parchment paper, then a layer of foil.
  • Bake for 35 minutes, then uncover the pan and continue baking until bubbling and gooey, about 10 minutes.
  • Let rest for 5-10 minutes before serving.

3 large parsnips , grated
1 sweet potato , grated
1 tbsp thyme leaf , roughly chopped
500g carton passata with onion & garlic
2 tbsp tomato purée
250g ricotta
200g tub crème fraîche
2 medium eggs , beaten
80g pack grated parmesan (or vegetarian alternative)
oil , for greasing
6 dried lasagne sheets

Steps:

  • Mix together the vegetables, thyme, passata, tomato purée and plenty of seasoning. In another bowl, mix the ricotta, crème fraîche, eggs and all but 2 tbsp of the Parmesan until smooth.
  • Assemble the lasagne by putting half the vegetable mixture into the base of a lightly oiled 2-litre gratin dish, followed by a layer of lasagne (broken to fit the dish), then half the ricotta mixture. Repeat the process, finishing with a layer of ricotta mixture and the remaining Parmesan sprinkled over. Wrap with cling film and freeze for up to 3 months.
  • To cook from frozen, heat oven to 190C/170C fan/gas 5. Remove the cling film, cover with foil and put in the middle of the oven for 1 hr. Then increase temperature to 200C/180C/gas 6, remove the foil and cook for another 35-45 mins until golden on top.

9 dried lasagne sheets
1 tbsp sunflower oil
1 onion, finely chopped
700g courgette (about 6), coarsely grated
2 garlic cloves, crushed
250g tub ricotta
50g cheddar
350g jar tomato sauce for pasta

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Put a pan of water on to boil, then cook the lasagne sheets for about 5 mins until softened, but not cooked through. Rinse in cold water, then drizzle with a little oil to stop them sticking together.
  • Meanwhile, heat the oil in a large frying pan, then fry the onion. After 3 mins, add the courgettes and garlic and continue to fry until the courgette has softened and turned bright green. Stir in 2/3 of both the ricotta and the cheddar, then season to taste. Heat the tomato sauce in the microwave for 2 mins on High until hot.
  • In a large baking dish, layer up the lasagne, starting with half the courgette mix, then pasta, then tomato sauce. Repeat, top with blobs of the remaining ricotta, then scatter with the rest of the cheddar. Bake on the top shelf for about 10 mins until the pasta is tender and the cheese is golden.

One of those dinner creations inspired by the contents of my fridge, this is a really nice vegetarian twist on an old favourite. Quantities are a little inexact, and really depend both on the size of your baking dish and your tastes.

6 sheets whole wheat lasagna noodles (either fresh or presoaked -quantity will depend on the size of your lasagne dish)
1 tablespoon butter, melted
2 large carrots, grated
1/2 cup fresh parmesan cheese, grated (plus extra for topping, maybe another 1/2 cp)
1/2 onion, finely chopped
4 tablespoons cottage cheese
1 egg, beaten
2 tablespoons fresh herbs, chopped (I used parsley and mint)
fresh ground black pepper
vegetable salt, to taste
2 tablespoons sour cream
2 -3 tomatoes, sliced
1/2 cup dried breadcrumbs (or you could use fresh)

Steps:

  • Preheat oven to 200C, and brush some of the melted butter inside a lasagne/casserole dish.
  • Mix carrots, cheeses, onion, herbs, seasonings and egg in a bowl.
  • Place half the carrot mix into casserole dish, and top with a layer of the lasagne sheets.
  • Brush the lasagne sheets with the rest of the melted butter. Cover with a single layer of tomato slices, and drizzle the sour cream over the tomato.
  • Cover the tomatoes with another layer of lasagne sheets, followed by the rest of the carrot mix.
  • Top with a single line of tomato slices down the middle of the dish. Combine the extra cheese and the breadcrumbs, and sprinkle them on top.
  • Bake for approximately 35-40 minutes, until golden and crusty on top.
