Carrots are easy to digest and make a good first food for your little one. Once you've introduced other fruits and vegetables to your baby, you can combine them into one puree. Carrot and apple or carrots and sweet potato make a great choice, for example.

- In a bowl, combine the dry ingredients. Add the oil, eggs and baby food; mix on low speed until well blended. Stir in pineapple and nuts. Pour into 2 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a bowl, beat cream cheese and butter until smooth. Beat in vanilla and confectioners' sugar until mixture reaches spreading consistency. Spread between layers and over top and sides of cake. Garnish with nuts and blossoms if desired. Store in the refrigerator.

- Cake method: Preheat oven to 350ºF.
- Grease and flour a 9x13 baking pan.
- Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
- Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
- Pour the batter into the prepared pan.
- Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool completely; prepare icing in the meantime.

- Icing Method: In a medium bowl, combine final three ingredients.
- Beat until smooth and fluffy.
- Ice completely cooled cake.

- To steam carrots simply add water to the bottom of the steamer, put the steamer basket in place, and add your chopped carrots to the basket. Place the lid on and turn on the burner to medium/high. Once steam begins to build up you want to steam the carrots for about 10 minutes.
- You will need to steam them for about 15 to 20 minutes if you decided not to cut the carrots but left them whole.
- How to Puree CarrotsAdd the carrot slices to the blender. I usually fill mine about 1/3 full at a time and blend in batches to help speed the process up.
- You need to also add a little water at this time. If you want to add back in some of the nutrients that were lost during steaming you can use the water that you used to steam the carrots. Just be sure that you used a good quality filtered or RO water when you steamed them.

- Peel carrots and chop into chunks. Try to make the carrot chunks around the same size so they will finish cooking around the same time. The smaller the chunks, the faster they will cook.
- Fill a pot with about 1 inch of water, add carrots to a steamer basket and place inside of the pot. Bring water to a low boil, cover with lid and steam carrots for 15-20 minutes, or until fork tender. The cook time will depend on the size of your carrots.
- Once carrots are tender remove pot from heat and allow carrots to a cool a bit before transferring to a blender or food processor. Puree carrots in the blender or food processor, adding liquid (breast milk, formula or water) as needed to get the desired consistency. If using water, the water leftover from steaming or boiling the carrots works great.
- Transfer carrot puree into storage containers and store in the fridge for 3 days or freezer for 1 month.
