CROCKPOT KING RANCH CASSEROLE
This is amazingly good and super easy. If you want to leave the house for the afternoon to come back and have dinner ready to serve, this is the one to try. Bring home a bag of salad and you are set. Real cheese in here, no velveeta. I also use low sodium everything and don't add extra salt. The spiciness makes additional salt unnecessary. Also, if you don't uncover it the last 30 minutes, don't worry about it. It's still just as good. Also good with flour tortillas if you don't have corn on hand.

Steps:
- Stir together first 8 ingredients in a large bowl. Tear tortillas into 1 inch pieces; divide into thirds. Layer one-third of tortilla pieces in a lightly greased 6 quart slow cooker. Top with one-third of chicken mixture and 1 cup of cheese.
- Repeat layers twice.
- Cover and cook on LOW for 3 1/2 hours or until bubbly and edges are golden brown. Uncover and cook on LOW 30 minutes.
- Serve with salad and blue corn chips on the side for a pretty presentation.

The King Ranch Casserole is as much a part of Texas history as the Alamo. So imagine when Crystal-originally from Georgia-marched into Sandy's kitchen with some ideas on how to improve the dish. Yep, you guessed it. Disaster. You just can't mess with Texas. Our recipe hasn't budged from the original, which has been in Sandy's family for as long as she can remember. Our fellow Austinites share the same love for this traditional recipe and have made the King Ranch one of our most popular menu items. Enjoy!

- Preheat the oven to 350°F.
- In a large saucepan set over medium-high heat, combine the cream of chicken soup, cream of mushroom soup, chicken broth, tomatoes, and garlic salt. Stir until warm, about 5 minutes. Remove from the heat and set aside.
- Grease a 9 x 13-inch baking dish with cooking spray. Put half of the tortillas in the bottom of the pan. Layer in half each of the chicken meat and onion, then sprinkle with one-third of the cheese mix. Pour half of the soup mixture over the top, then repeat the layers. Top the casserole with the remaining third of the cheese.
- Bake for 45 minutes or until the cheese has melted and browned slightly.

Steps:
- Slice mushroom and onions and saute with butter until onions are clear and mushrooms are begin to get soft. Add garlic and saute for 1 extra minute.
- Drain Rotel tomatoes and chilies and add into saute with 1 tsp chili powder.
- Stir in cream of chicken soup and rotisserie chicken and heat through. Line 13x9 inch casserole dish with corn tortillas. Pour half of the filling over and top with another layer of tortillas. Finish with the rest of the filling and cheeses.
- Cook at 350 for 20-30 minutes until bubbly.

Steps:
- Boil chicken in broth or stock, I cut the chicken into cubes with kitchen scissors before boiling. Save the stock in case you need to add a bit of liquid to the mixture.
- Combine Rotel, soups, onion, olives, and chicken.
- In a large Pyrex baking dish layer crushed Fritos, cheese, and chicken mixture. Repeat layers until all is used, ending with crushed Fritos.-.
- Heat until bubbly @ 350 degrees.
- When done, cover top Frito layer with cheese, and put back in oven until melted.
