2 russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon pepper

2 tablespoons fresh cilantro, minced
½ cup fresh orange juice
¼ cup fresh lime juice
½ lb flank steak
1 tablespoon canola oil

1 tomato, diced

cotija cheese, grated

Steps:

  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Cut the potatoes into wedges. In a large bowl, combine the potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated.
  • Place the fries on the baking sheet and bake for 30-35 minutes, or until the fries are crispy and golden brown.
  • In a medium bowl, combine the salt, pepper, chili powder, oregano, garlic, cilantro, orange juice, and lime juice. Add the flank steak and marinate for 20 minutes.
  • Heat a cast-iron skillet with the canola oil over medium heat. Cook the steak for 3 minutes on both sides for medium-cooked steak. Remove the steak and let it rest for 10 minutes.
  • After 10 minutes dice the steak.
  • In an ovenproof skillet, place the baked french fries, Pepper Jack cheese, and diced carne asada, then broil until the cheese is melted.
  • Before serving, top with sour cream, guacamole, diced tomatoes, cilantro, and grated cotija cheese.

1/4 cup lime juice
1/4 cup orange juice
1/4 cup olive oil
4 teaspoons minced garlic
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 1/2 pounds skirt steak
1 (16 - 20- ounce) bag frozen seasoned fries, baked according to package directions
3 tablespoons butter
3 tablespoons all purpose flour
1 1/4 cup milk
1/2 teaspoon garlic salt
8 ounces sharp cheddar cheese, grated (not pre-grated)
Avocado
Pico de Gallo
Sour Cream
Cilantro
Sliced Jalapeno

Steps:

  • Combine the lime juice, orange juice, olive oil, garlic, salt, black pepper, cumin, and oregano in a small mixing bowl. Place the steak in a zip-top bag or a shallow container and pour the marinade over top. Allow the steak to marinate 6 hours or overnight.
  • When you're ready to cook the meat, preheat your grill to medium-hight heat and grill the steak for 3-4 minutes on each side or until the steak reaches 125°F - 130°F for medium rare. Cook longer if you prefer it more well done. Alternately you can cook the steak in a cast iron skillet. Preheat skillet to medium-high. Add the steak to the skillet and cook for 4 minutes on each side, or until desired doneness.
  • Transfer the meat to a plate, cover with foil, and set aside.
  • Cook the fries in the oven according the directions on the package.
  • While the fries are cooking, melt the butter into a medium saucepan over medium heat. When the butter is melted, add in the flour and whisk constantly for 2 minutes, cooking the flour. Slowly add in the milk and garlic salt, whisking constantly for 3-4 minutes, until the sauce is thickened.
  • Add in the cheese in two portions, whisking constantly until melted and smooth. Remove the sauce from the heat, and cover until you're ready to assemble the fries. If the cheese sauce gets too thick as it cools, simply place it back on medium-low heat, and stir until warm and smooth.
  • Slice the steak into bite size pieces, making sure to slice against the grain. When the fries are done remove them from the oven. You can make individual servings or serve on the sheet pan.
  • Drizzle the some of the cheese sauce on top of the fries, top with steak, and more cheese sauce.
  • Add avocado, pico de gallo, sour cream, cilantro, and jalapeño as desired.

1/2 cup tequila
1/4 cup lime juice
1/4 cup lemon juice

1 teaspoon Tabasco sauce
1 teaspoon black pepper
2 lbs flank steaks
2 ripe avocados, peeled
2 garlic cloves, chopped
1/2 tomatoes, chopped
1 tablespoon lime juice
1 tablespoon cilantro, chopped
1 -2 teaspoon salt
1 cup sour cream
2 cups Mexican blend cheese

  • Fries:.
  • Heat oil in a fryer to 325 degrees F.
  • Skin potatoes, and cut into uniform sized matchsticks.
  • Place the cut potatoes in a bowl of ice water to release some of the starch and to keep them from browning.
  • Dry the potatoes strips thoroughly to keep them from splattering.
  • Fry the potatoes for 3 minutes until soft but not golden brown, do not over-crowd them.
  • Remove and place on paper towel. Turn heat up to 350, and place back in fryer for 4 minutes, or until golden brown.
  • Let drain on paper towels.
  • Carne Asada:.
  • Mix tequila, juices, garlic, onion, Tabasco, and pepper in a medium bowl.
  • Add steaks to marinade, ensuring they are completely covered.
  • Place in refrigerator 4-6 hours, turning occasionally to ensure they stay submerged in marinade.
  • Remove steaks, and grill about 7 minutes on each side.
  • Cut into 1"x1/2" strips, set aside.
  • Guacamole:.
  • Place all ingredients in a bowl and blend with hand blender until smooth, or mash with a fork.

2 teaspoons soy sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon ground cumin

1 pound beef flank steak, cut into thin strips
2 cups oil for frying, or as needed
1 (16 ounce) package frozen French fries
2 medium (blank)s ripe avocados
1 (1 ounce) package
½ (8 ounce) package shredded Mexican cheese blend, or to taste
¼ cup sliced green onions, or to taste
¼ cup sour cream, or to taste

Steps:

  • Combine soy sauce, salt, pepper, garlic powder, cumin, chili powder, Cajun seasoning, and lime juice in a glass or ceramic bowl; add steak. Cover and let marinate in the refrigerator for 1 hour, up to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Cook steak on the preheated grill until firm and cooked through, 3 to 5 minutes per side.
  • Deep-fry the French fries in the hot oil until golden brown and crisp, 3 to 5 minutes, working in batches and adding more oil as needed. Transfer to a plate lined with paper towels to drain excess oil.

1 1/2 teaspoons kosher salt
1 1/2 teaspoons paprika
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon sugar
For the fries and steak:
1 (22-ounce) package frozen French fries
12 ounces skirt steak, trimmed if necessary
2 tablespoons vegetable oil
For the cheese sauce and assembly:
4 ounces sharp cheddar (about 1 packed cup)
2 teaspoons cornstarch
1/2 cup evaporated milk
3-5 dashes hot sauce, such as Cholula (optional)
Cubed avocado, sour cream, cilantro leaves, salsa, and/or pico de gallo (for serving; optional)

Steps:

  • Make the seasoned salt:
  • Whisk salt, paprika, garlic powder, pepper, oregano, and sugar in a small bowl.
  • Cook the fries and steak:
  • Spread fries on a rimmed baking sheet, toss with 1 1/2 tsp. seasoned salt, and bake according to package directions, tossing halfway through.
  • Meanwhile, rub steak with remaining seasoned salt. Heat oil in a large (preferably cast iron) skillet over medium-high. Sear steak 2-3 minutes per side for medium rare. Let rest 10 minutes. Thinly slice against the grain, then cut strips into 1" pieces. Transfer fries to a large platter; top with steak.
  • Make the cheese sauce:

Steps:

  • Prepare the carne asada ahead of time before assembling the fries. There is a link provided in the recipe card.
  • Preheat oven to 350° Fahrenheit and spray non-stick cooking spray in a cast iron pan or an oven-safe skillet or baking sheet.
  • Bake or air fry the French fries according to package directions. Top the fries with cheese and bake for 5-7 minutes until the cheese has melted.

1/2 cup olive oil
1/2 cup soy sauce
6 cloves garlic, minced
Juice of 2 limes
1 large handful fresh cilantro, leaves and stems, finely chopped
1 jalapeno, seeded and minced
2 tablespoons red wine vinegar
1 teaspoon freshly ground cumin, seeds lightly toasted
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Lay the skirt steak in a large nonreactive bowl or baking dish.
  • Combine the oil, soy sauce, garlic, lime juice, cilantro, jalapeno, red wine vinegar, cumin, sugar and 1 tablespoon each salt and pepper. Pour the marinade over the steak, making it's well coated. Cover and refrigerate for 4 to 6 hours, or overnight.
  • Preheat a grill or cast-iron skillet to high heat. Remove the steak from the marinade, sprinkle both sides with salt and pepper, and place it on the grill. (If cooking indoors, remove excess marinade, as the garlic may burn and smoke).
  • Grill the steak for just a few minutes per side, depending on thickness, until it is cooked to your preference. You may need to work in batches.
  • Transfer the steak to a cutting board and let rest for 5 minutes. Slice the steak thinly against the grain on a diagonal and serve.

  • Prepare the beer cheese: In a medium saucepan, melt the cream cheese over medium heat, stirring frequently, about 2 minutes. Add the beer in a slow stream, whisking until smooth. Let the foam die down, about 1 minute, then decrease heat to low and add the cheese one handful at a time, whisking until smooth before adding the next. Once you've integrated all the cheese, whisk in the Worcestershire, mustard, garlic powder and paprika. Season to taste with salt, cover and set aside, off heat. (Makes 1 1/4 cups.)
  • Prepare the garnish: In a small bowl, stir together the onion, cilantro and lime juice. Set aside.
  • Make the carne asada: Heat the oil in a large cast-iron skillet or griddle over medium-high. Add the meat, and cook, stirring occasionally, until browned and the sauce reduces to a glaze, 3 to 5 minutes.
  • Arrange cooked fries on a serving platter in an even layer, and drizzle beer cheese on top to taste. Top with the carne asada and onion-cilantro mixture. Serve with lime wedges, and crema, if desired.
