A luscious, tender Mexican beef stew with very basic ingredients. The oven baking makes the meat extremely tender, and the cumin gives it so much flavor! This is a typical Mexican beef stew, simple, with not a lot of vegetables. Serve folded up in warm tortillas, or on rice or with your favorite cornbread.

2 1/2 lbs chuck roast, trimmed of fat and cut in bite-sized pieces
4 tablespoons flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 -3 jalapeno peppers, seeded and minced
3 cups beef stock
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F.
  • Toss meat pieces with flour, then brown quickly in oil in an ovenproof Dutch oven.
  • Add onion, garlic, jalapeño, beef stock, tomato paste, cumin and chili powder; bring to a simmer on the stove.
  • Cover Dutch oven and place in the preheated oven, baking for about 2 to 2-1/2 hours, until meat is extremely tender.
  • Serve as is, or on rice, or folded into warm tortillas.

1 pound cubed beef blade meat
1 large green bell pepper, seeded and roughly chopped
1 onion, roughly chopped
1 large tomato, chopped
1/4 cup chopped garlic
1-ounce whole cumin seeds
1/2-ounce freshly ground black pepper
1 quart water, plus 1-ounce
1/2 cup blonde roux, made from 1/2 cup flour and 1/2 cup fat

Steps:

  • In a large saute pan over medium heat add the cubed meat and cook until browned. Add the chopped bell pepper, onion, tomato, garlic, cumin, black pepper and 1-ounce water and stir to combine. Add 1 quart water and bring everything to a boil. Turn the heat down and add the roux. Cook the mixture until it thickens and season with salt, to taste. Transfer to a serving bowl or platter and serve.

1 1/2 lbs round steaks
1 tablespoon vegetable oil
3 cups water
1/4 teaspoon dried oregano leaves
1 teaspoon cumin seed
1 teaspoon fresh ground black pepper
1 1/2 teaspoons salt
1 clove garlic, minced
1/2 green bell pepper, diced
1/2 onion, sliced
1 fresh tomato, diced
1/2 cup tomato sauce
1 tablespoon chili powder
1 teaspoon paprika
2 teaspoons all-purpose flour
2 tablespoons vegetable oil

Steps:

  • Cube meat (about 1"), removing all fat and gristle.
  • Sear meat in oil.
  • Add water and cook on medium-low heat for about 30 minutes, stirring occasionally.
  • Toast cumin seeds in a small sauté skillet on medium-high until they begin to smoke slightly.
  • Grind the hot cumin seeds with a mortar and pestle.
  • Add oregano, ground toasted cumin, black pepper, salt and garlic to the meat.
  • Add vegetables (bell pepper, onion and tomato) and continue to cook about 30 minutes.
  • Add tomato sauce, chili powder and paprika.
  • Continue to simmer for another 15-20 minutes.
  • While the meat is simmering, heat 2 tbsp oil in a small sauté pan and add flour over medium-low heat.
  • Stir the flour and oil constantly until the flour turns a light golden brown (roux).
  • Add the roux to the meat and continue to simmer for about another 30 minutes.
  • Serve carne guisada with rice and beans and flour or corn tortillas.
  • Note: can speed the cooking time by using a pressure cooker.

A mexican style beef stew. You can also serve this over rice or noodles, but I prefer it on tortillas like a burrito. This doubles and freezes well.

1 lb stewing beef
1 large onion, chopped
3 garlic cloves, chopped (more or less to taste)
4 cups low sodium beef broth (water can be substituted, adjust seasonings)
1 tablespoon chili powder
1 tablespoon comino
2 teaspoons salt
1 teaspoon black pepper
1/3 cup flour
1/3 cup vegetable oil
flour tortilla
fresh cilantro, stems removed
chopped onion
shredded cheddar cheese
sour cream

Steps:

  • Brown beef well in a large cast iron dutch oven, a heavy stainless steel pot can be used with good results.
  • Add onion and garlic and cook until onions are translucent.
  • Add stock, chili powder, comino, salt, and pepper.
  • Bring to a simmer and cook for 2-3 hours or until beef is very tender.
  • In a separate skillet mix flour and oil together to form a roux.
  • Cook over medium high heat until a dark beige color, about 5 minutes.
  • Be careful not to let it burn.
  • Carefully add roux to stewed beef.
  • Be very careful because it can splatter.
  • Bring back to a simmer and thicken, simmer for 5-10 minutes to allow flavors to meld.
  • Serve like a soft taco on flour tortillas with fresh cilantro, chopped onions, shredded cheese and sour cream for garnish.

1 onion, minced

1 carrot, peeled and sliced

  • - dissolve the beef bouillon cube (Maggi) in about 3 tbs of hot water.
  • - dissolve the tomato paste in about 1/2 cup of hot water.
  • - marinate the beef cubes for at least 3 hours in the following:.
  • -- garlic, grated onion, oregano, cilantro, parsley, dissolved beef cube and tomato paste.
  • - remove beef pieces, save marinade for later use.
  • - heat oil to high temperature (around 425 degrees F) and brown beef cubes on all sides.
  • - reduce oil temperature to medium and add the carrot, celery, bay leaf and green bell pepper and cook for about 3 minutes.
  • - add the reserved marinade.
  • - cover and simmer for 20 minutes.stir frequently.
  • - Add the rest of the water and taste for salt and pepper and adjust if needed.
  • - Continue to simmer for 30 minutes longer. (beef cubes should be very tender).
  • - serve it hot with boiled white rice.

1 1/2 lbs stew beef chunks (or nicer if you like)
1 (14 ounce) can beef broth
1 (28 ounce) can diced tomatoes with juice
1 (8 ounce) can tomato sauce
1 (7 ounce) can diced green chilies
1 (4 ounce) can of diced jalapenos
1 medium yellow onion
4 garlic cloves
5 russet potatoes
1 tablespoon vegetable oil
1 teaspoon cumin
1 teaspoon salt

Steps:

  • Cut onion into half-rings. Set aside.
  • Dice Garlic and set aside.
  • In a large pot, add Vegetable oil to cover bottom. Heat on high heat.
  • When oil is hot, add cubed beef and quickly stir so that all sides get brown.
  • Allow beef to cook in its own juices.
  • When beef is a bit brown, lower heat to med-high and add onion and garlic. Sauté until onion is tender.
  • Lower heat to medium and add canned tomatoes, tomato sauce, green chilies, and jalapenos.
  • Add beef broth, cumin, and salt. Stir to mix well.
  • Wash and peel potatoes and cut into same size chunks as beef. Add to the pot.
  • Let simmer on low to med-low for 2 hours or until potatoes are done.
  • Serve with warm Flour Tortillas.

There's always something comforting about this meal that makes me feel close to home, and especially close to my family. I make this dish every week for my children, but when I do I eat it all day too.

2 pounds chuck roast or other beef stew meat, cut into 1/2-inch cubes (see Cook's Note)
1/2 cup adobo
2 to 3 tablespoons olive oil
1/2 cup tomato paste
1 cup thick-cut carrot rounds (1 to 2 large carrot)
1 cup peeled and diced potatoes (1 medium potato)
1/4 cup sofrito with recao (culantro)
2 tablespoons sazón con achiote (5 packets)
10 pimento-stuffed olives
3 dried bay leaves
1/2 cup fresh cilantro, chopped
Cooked white rice, for serving

Steps:

  • Place the beef in a medium bowl, sprinkle with the adobo, toss to coat and set aside.
  • Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook, stirring frequently, until seared and mostly browned on all sides, 3 to 5 minutes. Add the tomato paste and cook, stirring constantly to avoid burning, until the meat is coated. Stir in the carrots, potatoes and sofrito until coated. Stir in the sazón until coated. Stir in the olives and bay leaves. Add 4 cups water or enough to fully cover the beef and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the meat is tender, about 1 hour.
  • Remove the stew from the heat and adjust the seasoning if needed. Discard the bay leaves. Stir in the cilantro before serving with white rice.

2 1/2 lbs stew meat, cut in bite-size pieces
6 -7 tablespoons bolner's fiesta brand extra fancy carne guisada seasoning
4 teaspoons cumin powder
2 teaspoons chili powder
2 teaspoons red peppers (or more if spicier is desired)
3 tablespoons coconut oil (may substitute Veg. oil or olive oil)
2 -3 garlic cloves
1 medium onion
2 -3 serrano peppers, seeded and minced (or add more, with seeds if spicier is desired)
3 cups beef stock (or sub other stock)
3 tablespoons tomato paste

Steps:

  • Combine Seasoning, Cumin Powder, Chili Powder and Red Pepper in a bowl and dredge the meat through it.
  • Lightly brown meat in Coconut or Vegetable oil in large sauce pan on stove along with minced fresh garlic and chopped onions.
  • Add minced Serrano Peppers (may want to wear kitchen gloves while mincing).
  • Mix together some of the Beef Stock and Tomato Paste and add to beef along with the rest of the stock.
  • Simmer for about 2 1/2 hours, stirring occasionally, or put on low in crock pot. Test for desired tenderness.
  • Serve with flour tortillas, grated cheese, sour cream and shredded lettuce.
  • May also serve with Spanish rice, and Refried beans.

  • Dredge stew meat in flour.
  • In a large stock pot brown the beef on medium high heat in 2 tbsp of olive oil. remove meat.
  • Add in 2 tbsp of olive oil and cook on medium heat.
  • Add in the onions until translucent.
  • Add the garlic and cook about 1 more minute.
  • Throw in the browned meat and add herbs, spices, water and canned tomatoes.
  • Turn up heat to high and bring to a boil.
  • And turn heat down to low and simmer for 5 hours.
  • I sometimes take a short cut and dredge and brown the meat in a skillet then throw everything in a crock pot and let simmer on low for 6-8 hours depending on how tender you like the meat. You can also cut down on the water quite a bit when using the crock pot and add water as needed.
