This dish is very fatty and a little salty, but is so delicious and easy to make. You just have to make sure that you have the ingredients ready to begin the cooking. Adding shrimp to this recipe makes an unbelievably tasty surprise. One of my all time favorites.

1 1/2 lbs pork belly
1 onion, roughly diced
2 garlic cloves, minced
1/2 cup sugar
1/4 cup fish sauce
1/4 teaspoon black pepper
1 cup water

Steps:

  • Wash and cut pork belly into 3/4 inch (cubed)pieces.
  • In a dry saucepan, melt sugar on high heat until it becomes golden brown but not candied.
  • Immediately, add pork belly pieces, onions, pepper, and garlic. Stir to get a golden color on the meat.
  • Add fish sauce and water, deglaze, and bring to a boil.
  • Reduce to low heat, cover and simmer for 20-30 minutes (stirring occasionally) until sauce thickens a little. Add a little more fish sauce and black pepper to taste.
  • Serve over white rice.
  • Note: Some vietnamese add whole hard boiled eggs (better if you fry the hard boiled eggs in a little oil until golden brown skin) along with the liquids. Adding shrimp is also delicious.

Stir-fry chunks of pork with shallots, ginger and chilli in a wok then add fish sauce and brown sugar for a sweet, sticky and spicy sauce

1 ½ tbsp groundnut oil
500g pork shoulder steaks , cut into bite-sized chunks
2 shallots , finely chopped
1 tbsp finely grated ginger
1 red chilli , deseeded and finely chopped
75g brown sugar
1 tbsp fish sauce , plus extra to taste
1-2 tsp chilli sauce (we used sriracha)
4 spring onions , halved and shredded lengthways
steamed rice , to serve
pak choi , to serve

Steps:

  • Heat 1 tbsp of the oil in a wok over a high heat and stir-fry the pork in batches until browned all over. Remove with a slotted spoon and set aside.
  • Turn the heat right down and add the remaining oil, then stir in the shallots, ginger and chilli. Cook over a low heat for a couple of mins until just starting to soften. Add the sugar, fish sauce and 200ml water to the pan and stir everything together. Bring to the boil, stirring, so that the sugar dissolves, then return the pork to the pan. Bubble vigorously for 8-10 mins until the sauce thickens to coat the meat and become glossy. Taste and stir in a little more fish sauce, if needed, along with the chilli sauce. Sprinkle with the spring onions and serve with steamed rice and pak choi.

I've been looking for recipes to use up some Asian condiments and came across this one which I plan on making soon. I think this pork will be great as part as an Asian meal with rice ans stir fry vegetables or with rice noodle salad. Recipe source: Gourmet (June 2005)

6 boneless pork chops (1/4 inch thick)
1/2 cup sugar
1/4 cup shallot, chopped
1 tablespoon lime juice
1 tablespoon asian fish sauce
1/2 teaspoon salt

Steps:

  • Pound chops between 2 sheets of plastic wrap or wax paper with a meat pounder (flat side) or rolling pin until meat is 1/8 inch thick.
  • Make several small slits around edge of each chop.
  • Half each chop lengthwise and transfer to bowl.
  • In a saucepan cook sugar over medium heat until it begins to melt, continue cooking stirring until sugar is melted into a golden caramel.
  • Add shallots, lime juice, fish sauce and salt and cook 2 minutes longer or until caramel is dissolved and shallots are softened.
  • Pour sauce over pork, toss.
  • Heat a grill pan over heat until hot, but not smoking.
  • Grill pork in batches, turning once until cooked through (1-3 minutes per side).
  • Discard any remaining caramel sauce.

Tet is for savoring abundance, which explains why this rich, savory braise of pork and eggs in bittersweet caramel sauce is a must-have on many southern Vietnamese Lunar New Year menus. It's an extravagant treat. Pork leg with the skin attached (fresh ham) is the cut of meat traditionally used, but pork shoulder or belly also offers the delicious balance of fat and lean meat. The eggs lend an interesting contrast of chewy white and buttery yolk, while the sauce featuring coconut water is softly sweet. Searing the meat and including peppercorns are modern touches that induce greater complexity. The cook time can be cut nearly in half by making the braise in a pressure cooker. Crunchy pickled bean sprout salad is the traditional accompaniment, along with plenty of rice. Stir-fried greens can be served alongside too.

1/4 cup granulated sugar, plus more as needed
1/8 teaspoon unseasoned rice vinegar or distilled white vinegar
1 1/2 pounds boneless pork shoulder, belly or leg (see Tip)
2 tablespoons canola or other neutral oil
2 1/2 tablespoons fish sauce, plus more as needed
1/2 medium yellow onion, thinly sliced
5 garlic cloves, smashed
1 1/2 teaspoons black peppercorns
2 cups unsweetened coconut water, strained if pulpy
4 large hard-boiled eggs, peeled
2 fresh Thai chiles or 1 serrano chile, thinly sliced (optional)

Steps:

  • Make the caramel sauce: In a small saucepan over medium heat, stir together the 1/4 cup sugar, vinegar and 1 tablespoon water until the sugar nearly dissolves, 60 to 90 seconds. Cook without stirring until the mixture turns champagne yellow, about 3 minutes, then continue cooking for another 1 to 2 minutes, frequently picking up the pan and swirling it to control the caramelization. When the mixture is a dark tea color (expect faint smoking), turn off the heat and keep the pan on the burner. Let the caramelization continue until the mixture is burgundy in color, 1 to 2 minutes. Slide the pan to a cool burner and add 3 tablespoons water, stirring to dissolve the sugar. Warm over medium heat to loosen, if needed.
  • Cut the pork into chunks about 1-inch thick and 2 to 3 inches long, making sure each piece has both lean meat and fat. Warm the oil in a medium pot over medium-high heat until shimmering. Working in 2 or 3 batches, cook the pork on all sides until lightly browned, about 1 minute per batch, holding the seared meat on a plate. When done, return all the pork and any accumulated juices to the pot, then add the caramel sauce, fish sauce, onion, garlic, peppercorns and coconut water. Bring to a boil over high heat, skim the scum, then adjust the heat to maintain a simmer. Cover and cook until a knife tip inserted 1/4 inch into the pork meets little resistance, about 1 1/4 hours.
  • Use tongs to retrieve the pork and hold in a bowl, loosely covered to prevent drying. If peppercorns cling to the pork, leave them for zing, or knock them off and discard. To quickly filter and remove fat from the cooking liquid, set a mesh strainer over a large heatproof bowl, line with a double layer of paper towels and pour the liquid through. After most of the liquid passes through and a layer of fat remains above the solids, set the strainer aside. (Save the fat for cooking if you like.) You should have about 1 1/2 cups cooking liquid.
  • Return the liquid to the pot, bring to a boil over high heat and cook until reduced to 1 cup, about 5 minutes. Lower the heat to maintain a simmer, then add the pork and eggs. Cook, gently stirring now and then, to heat through and coat with the dark sauce, 3 to 5 minutes. Turn off the heat and let rest 5 minutes, uncovered, to concentrate flavors. Taste and add up to 1 1/2 teaspoons of fish sauce or 1 1/2 teaspoons sugar, or both, as needed for a pleasant savory-sweet finish. Transfer to a shallow bowl for serving. Invite diners to halve the eggs themselves. If you'd like spicy heat, gently smash the chiles in individual dishes for dipping sauce with some sauce from the pot, and use it to dip the pork and egg or to drizzle into the bowls.

I wasn't really sure I understood the true essence of unctuousness, but after eating this caramel pork belly I'm pretty sure I get it now. Each bite was pure pleasure. I'm usually a very fast eater, but I tried to eat as slowly as I possibly could. It was just so unctuous.

1 bunch green onions - white parts chopped, green parts cut into 3 1/2-inch lengths
10 ounces whole pork belly
salt to taste
¼ cup packed brown sugar
2 tablespoons rice vinegar
2 tablespoons fish sauce
1 tablespoon ginger juice
½ teaspoon soy sauce
4 cloves garlic, sliced
4 whole dried red chile peppers
½ cup water

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Lay a large sheet of aluminum foil on a flat work surface. Lay 1/2 the green parts of the green onions down in the center of the foil. Place pork belly, fattiest-side down, on top of the green onions and top pork belly with remaining 1/2 the green parts of the green onions; sprinkle with salt. Fold aluminum foil tightly around pork and green onions. Wrap pork belly again in another sheet of aluminum foil. Place wrapped pork, seam-side up, in a loaf pan.
  • Cook pork belly in preheated oven for 5 1/2 hours. Turn off the oven heat and let cool in the oven for 2 hours. Remove from oven and chill in the refrigerator for 8 hours to overnight.
  • Remove pork from foil and discard green onions. Cut pork into 8 pieces.
  • Cook bacon in a skillet over medium heat until crisp all over, 2 to 4 minutes per side.
  • Whisk brown sugar, rice vinegar, fish sauce, ginger juice, and soy sauce together in a bowl.
  • Remove most of the fat from the skillet and discard. Add 1 tablespoon of the brown sugar glaze and increase heat to medium-high. Cook until pork is glazed on all sides and pieces are caramelized, about 10 minutes. Make a well in the center of the skillet and add chopped white parts of the green onion, garlic, and peppers. Saute until fragrant, about 1 minute.
  • Pour water and remaining brown sugar glaze into skillet; simmer until sauce thickens, 3 to 5 minutes.

Steps:

  • Sauce Whisk all ingredients in small bowl. Let stand at room temp for at least 30 min up to 2 hours Pork Belly and Shrimp Sprinkle sugar over bottom of heavy large skillet NOT nonstick. Place over med heat and cook without stirring until sugar melts, them caramelizes to medium golden color, occasionally swirling pan, about 7 min. Arrange pork belly strips in caramel in single layer. Pour 1/2 C water over. Cook until water evaporates, turning pork occcasionally, 12-14 min. Add 1/2 c more water. Cook until water evaporates again, turning pork occasionally, 12-14 min. Add 1/2 cup water 1 more time. Cook until pork is tender, deep brown, and crisp and water has evaporated again. Remove skillet from heat. Remove pork to plate. Cut eaqchy strip in 1/2 crosswise. Sprinkle lightly w/ salt and generously w/ pepper. Return skillet w/ drippings to med-high heat. Add srhimp, saute until golden turning once, about 2 min. Return pork to skillet. Toss until shrimp are just opaque in center, about 1 min. Mound on plattr. Sprinkle with onions and cilantro. Serve w/ rice and sauce
