1/2 cup pecans* (See Cook's Note)
1/2 cup almonds* (See Cook's Note)
1/3 cup pistachios* (See Cook's Note)
1/3 cup cashews* (See Cook's Note)
1/3 cup pumpkin seeds* (See Cook's Note)
1 tablespoon maple syrup
1/2 teaspoon curry powder
1/8 teaspoon cayenne (or more to taste)
1/2 teaspoon dried rosemary
1/4 teaspoon salt
Nonstick cooking spray

Steps:

  • Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.

I have made a very similar recipe to this for Christmas one year and everyone loved them. They were so quick and easy to make. I am posting for ZWT9 Caribbean Leg.

350 g mixed nuts
1 free-range egg white
50 g caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
8 cardamom pods, seeds removed and crushed

Steps:

  • Preheat the oven to 200°C/fan180°C/gas 6. In a small bowl, mix the nuts with the egg white.
  • Mix together the sugar and spices, and then scatter over the nuts. Mix together well and spread out on a baking sheet. Bake for 10 minutes.
  • Set aside to cool completely, then serve in bowls.

This is a double batch, 3 cups to serve, 3 cups to gift-away. Buy nuts from bulk bins in market ? they are better priced than nuts on baking aisle.

2 cups walnut halves
1 cup peeled hazelnuts
1 cup whole unsalted cashews
1 cup whole pecan halves
3 tablespoons butter
1 teaspoon ground anise
1 teaspoon ground cinnamon
1 teaspoon coarse black pepper
1/2 teaspoon freshly grated nutmeg, eyeball it
1 cup smoked almonds (recommended: Diamond Smokehouse almonds)

Steps:

  • Heat a large skillet and cook nuts over moderate heat 7 to 8 minutes until golden and well toasted ¿ your nose will know when they are done. Transfer nuts to a plate and return pan to stove top. Add butter to the pan in small pieces. Melt butter and spice it with anise, cinnamon, pepper and nutmeg. Let butter infuse a minute then pour over nuts. Turn off heat. Add smoked nuts to the skillet and turn to combine evenly with butter.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

Aussie Spiced Nuts image

A deliciously different recipe for spiced nuts which I came across this afternoon in the current issue of the Australian magazine 'Woman's Day', and with my usual impatience just had to make this evening, with a few modifications - minus the chilli powder to meet our taste preferences - but I'd certainly make these complete with the chilli powder for friends, and have left the chilli powder in as an ingredient. In making these, I increased the garlic from 1 to 2 cloves, and I minced it rather than crushing it. I used cashews, macadamias and hazelnuts. Why, oh why do I keep buying all these magazines each week? Spot on if you guessed to check out their latest recipes! And it was worth buying this week's just to have found this recipe! These would be demolished very quickly if served with other appetisers and drinks, and they'd be a great addition to salads and stir-fries - if they lasted that long! :) Don't add salt - or add it sparingly - if your nuts are already salted.

1 tablespoon smoked paprika
2 teaspoons maple syrup
1 -2 garlic clove, minced
2 teaspoons flaked sea salt or 2 teaspoons flaked sea salt, to taste
1/2 teaspoon chili powder
1/4 teaspoon fresh ground black pepper or 1/4 teaspoon fresh ground black pepper, to taste
500 g mixed unsalted nuts (peanuts, cashews, macadamias, hazelnuts) or 16 ounces mixed unsalted nuts (peanuts, cashews, macadamias, hazelnuts)

Steps:

  • Preheat the oven to moderate (180°C/350°-375°F/4-5 gasmark); and line an oven tray with baking paper.
  • In a large pan, combine the olive oil, paprika, maple syrup, garlic, salt flakes, chilli and pepper; stir over a low heat until the syrup has melted and the mixture is well-combined; add the nuts and stir until they are evenly coated with the spice mixture; spread on the prepared baking tray.
  • Bake for 10-15 minutes, turning occasionally; remove and set aside to cool before serving.
  • TIP: These Aussie Spiced Nuts can be made 2 days ahead and stored in an airtight container. I cannot advise as to how they'd last beyond the two days as I cannot even imagine them lasting that long!

After about 10 minutes you should start to see a hint of color on the nuts. You will hear the crackle of skins crisping, and begin to smell the aroma. Continue roasting for another 5 minutes, being extra careful not to let them burn. Don't walk away, nuts can burn in an instant.
  • In the same pan, add the oil, sugar and lemon juice. Heat until sizzling, and all the sugar is dissolved.
  • Add the nuts and the rest of the spices back into the pan and continue to roast for a few more minutes, stirring to combine everything. When the nuts have absorbed all the liquids, transfer them to a parchment lined baking sheet and spread them out to cool.
