Caribbean Salmon and Rice image

This recipe comes from the blog Caribbean Pot - it uses canned salmon and is a quick fix for lunch or a weeknight dinner.

1 (7 1/2 ounce) can salmon
1 dash salt
1 dash black pepper
1 medium tomatoes
1 clove garlic
1 medium onion
1 teaspoon ketchup
1 green onion (scallion)
hot pepper (optional)
3 sprigs cilantro

Steps:

  • Open the can of salmon and place in a pan over medium heat.
  • With a spoon or fork, break the salmon chunk in pieces (try not to crush).
  • Wash and slice the tomato, green onion, cilantro, garlic and onion. All the ingredients should now be added to the pot with the salmon chunks.
  • Gently stir everything together, including the ketchup, black pepper and salt. I usually don't use salt, but I'm sure you may like it with a bit of salt. Remember, you can add salt last if it's required also.
  • Cover and let simmer for about 5 minutes, or until all the ingredients get a chance to add their touch to the dish.
  • Serve over rice or with bread.

1 cup black rice
1 1/2-inch piece fresh ginger, peeled
1 small clove garlic
2 limes
1 1/2 tablespoons fish sauce
2 bell peppers (1 red, 1 yellow), thinly sliced
1/2 small red onion, thinly sliced
1/2 jalapeno pepper, thinly sliced (seeds removed for less heat)
1 cup fresh cilantro
Kosher salt and freshly ground pepper
1 1/4 pounds skin-on center-cut salmon fillet (in one piece), preferably wild
1/4 cup chopped salted peanuts

Steps:

  • Preheat the broiler. Cook the rice as the label directs; set aside. Meanwhile, finely grate the ginger, garlic and the zest of 1 lime into a large bowl. Stir in the juice of 1 1/2 limes and the fish sauce. Add the bell peppers, red onion, jalapeno, 3/4 cup cilantro and a pinch each of salt and pepper; toss. Let sit, tossing occasionally, until ready to serve. Cut the remaining 1/2 lime into wedges; set aside.
  • Line a baking sheet with foil. Cut the salmon in half lengthwise, then crosswise to make 4 equal squares; season with salt and pepper. Transfer to the prepared baking sheet and broil until just cooked through, 5 to 8 minutes.
  • Divide the rice among four plates. Transfer the salmon to the plates, leaving the skin behind; top with the vegetable mixture. Sprinkle with the remaining 1/4 cup cilantro and the peanuts. Serve with the lime wedges.

Cooking spray
2 salmon filets (about 3 ounces each)
Salt and freshly ground black pepper
2 cups cooked long-grain rice
1 carrot, shredded
1 small onion, chopped
2 eggs
3 1/2 tablespoons unsalted butter
2 tablespoons soy sauce
Sesame seeds, for garnish

Steps:

  • Preheat the oven to 450 degrees F. Spray a baking sheet with cooking spray.
  • Season the salmon with salt and pepper and place it on the prepared baking sheet. Bake the salmon in the oven until cooked through, 10 to 12 minutes. Remove from the oven and keep warm.
  • Heat a large, deep skillet over medium-high heat. Add about 1/2 tablespoon of the butter and crack the eggs into the pan, stirring with a metal spatula to scramble and chop them finely. Remove the eggs from the pan.
  • Add 1 tablespoon of the remaining butter to the same pan and saute the onion and carrot until softened, 3 to 4 minutes. Add the remaining 2 tablespoons butter and the cooked rice. Stir well, mixing the vegetables and rice together. Fry for a few minutes, mixing constantly with the spatula. Add the eggs and mix well. Add the soy sauce and keep stirring. Turn off the heat.
  • Transfer the fried rice to a plate, top with the salmon, sprinkle with sesame seeds and serve.

20-MINUTE INSTANT POT SALMON AND RICE BOWL

5 tablespoons rice vinegar
1 teaspoon sugar
Kosher salt
1 1/2 pounds salmon, skin removed, flesh cut into 2-inch chunks
1 medium carrot, peeled
1 bunch scallions
3 Persian cucumbers
1 bunch radishes or 1 small daikon, peeled
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
3 cups raw greens such as arugula, baby spinach, radish sprouts or shredded Napa cabbage
Toasted white or black sesame seeds or furikake, for topping

Steps:

  • Combine the rice, 2 cups water, 2 tablespoons vinegar, sugar and 1 teaspoon salt in a 6-quart Instant Pot®. Place the salmon on top and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 3 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 8 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Meanwhile, thinly slice the carrot, scallions, cucumbers and radishes or daikon and place in a large bowl. Toss with the remaining 3 tablespoons rice vinegar, soy sauce and sesame oil. Right before serving, toss with the greens. Divide the salmon and rice between four bowls, top with salad and sprinkle with the sesame seeds or furikake.

2 teaspoons olive oil
1/4 cup chopped onion
1/2 cup rice
1 cup water
1 cup fresh spinach or 1 cup swiss chard
4 ounces skinless salmon fillet
1 teaspoon lemon juice

Steps:

  • In a medium saucepan, heat oil over medium-high heat. Add onion and cook, stirring, until tender but not browned, about 3 minutes.
  • Add rice and stir until coated with oil. Stir in water and bring to a boil. Cover, reduce heat, and simmer until most of the water has been absorbed and rice is slightly tender, about 15 minutes.
  • Arrange spinach and salmon on top of rice, cover and continue to cook until spinach is wilted and salmon flakes easily when tested with a fork, about 10 minutes.
  • Transfer to a blender, add lemon juice and puree on high to desired consistency, adding more water if necessary.

2 limes
1 tablespoon jerk seasoning
1 tablespoon thyme
2 cm ginger
1 tablespoon oil
4 salmon fillets
green beans
rice
sweetcorn
tomatoes
coriander

Steps:

  • Mix together the garlic, lime zest, jerk seasoning, thyme, ginger, and oil. Smear over the salmon and leave to marinade for 30 minutes.
  • Place the fish in a lightly oiled fish rack. Barbecue for 3 minutes or so on each side - aim for them to be charred on the outside, but still slightly pink in the centre. Alternatively, grill or griddle for around 5 minutes, or until cooked to your liking.
  • Chargrill the zested lime halves on the cut side until griddle lines appear - it should take 2-3 minutes.
  • Serve the salmon with green beans and rice mixed with corn, chopped cherry tomatoes and coriander. Garnish with the grilled limes and a little extra thyme.

1-2 garlic cloves, grated
2 tbsp low-salt soy sauce
½ tbsp rice wine or sherry vinegar
2 tbsp vegetable oil
1 large carrot, chopped into chunks
175g pack baby corn & mangetout or sugar snap peas, chopped
2 skinless salmon fillets
250g pouch cooked brown basmati rice
2 eggs
hot sauce, to serve

Steps:

  • Mix the ginger, garlic, soy and vinegar, and set aside. Heat a large pan or wok and add 1 tbsp oil, the vegetables and salmon. Fry the salmon for 2 mins each side until it begins to turn opaque. Tip in the rice and stir, flaking the fish into large pieces, then move everything to the side of the pan.
  • Add the remaining oil to the pan, crack in the eggs and stir to roughly scramble them. Once cooked, stir through the rice and pour over the soy marinade. Season and leave to bubble away for a few mins more, so that all the rice is coated in the sauce. Serve in bowls with hot sauce for drizzling.

3 lbs chicken pieces
salt and pepper
2 tablespoons oil
2 tablespoons butter
2 large onions, chopped
1 -2 tablespoon minced garlic
1 large green bell pepper, seeded and chopped
1 teaspoon dried thyme
1 -2 teaspoon dried chili pepper flakes (use only if you prefer extreme spicy)
1 tablespoon brown sugar
1 teaspoon ginger powder (can use more)
1/4-1/2 teaspoon cayenne pepper (or to taste)
4 russet potatoes, cut into large cubes (about 1-1/2-inch)
3 large tomatoes, chopped (or use a 28-ounce can of diced tomatoes, drained)
3/4 cup chicken broth
1 1/2 cups coconut milk

Steps:

  • Season the chicken pieces with seasoning salt or regular salt and pepper.
  • Brown both sides in oil and butter in a skillet; transfer to the crock pot along with the chopped tomatoes and potatoes.
  • In the same skillet saute onions, garlic, brown sugar, cayenne, bell pepper, thyme and chili flakes (if using) until soft (about 4 minutes).
  • Stir in the chicken broth to the skillet and stir with a wooden spoon on low heat scraping up any browned bits in the skillet.
  • Pour the broth/veggie mixture over the chicken and potatoes.
  • Cover crock pot and cook on high heat for about 3-4 hours (adding in the coconut milk and season with salt and pepper the last 40 minutes of cooking).
