3/4 cup chopped peeled fresh peaches
1 small sweet red pepper, chopped
1 jalapeno pepper, seeded and chopped
2 tablespoons finely chopped red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 garlic clove, minced
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
1 tablespoon brown sugar
1 tablespoon Caribbean jerk seasoning
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1/2 teaspoon seasoned salt
1 pork tenderloin (1 pound)

Steps:

  • In a small bowl, combine the first nine ingredients; set aside. In another small bowl, combine the oil, brown sugar, jerk seasoning, thyme, rosemary and seasoned salt. Rub over pork., Grill, covered, over medium heat for 9-11 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before slicing. Serve with salsa.

¾ cup fresh peaches, peeled and diced
1 small red bell pepper, chopped
2 tablespoons finely chopped red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 clove garlic, minced

⅛ teaspoon ground black pepper
2 tablespoons olive oil
1 tablespoon brown sugar

Steps:

  • Combine peaches, bell pepper, red onion, cilantro, lime juice, garlic, salt, and pepper in a bowl. Set peach salsa aside.
  • Combine olive oil, brown sugar, Caribbean jerk seasoning, thyme, rosemary, and seasoned salt in a second small bowl. Rub tenderloin with the spice mixture.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place tenderloin on hot grill and cook covered for 9 to 11 minutes. Turn and grill until tenderloin is slightly pink in the center, 9 to 11 minutes more. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove from heat, cover, and let sit for 5 minutes before slicing. Serve with peach salsa.

1/4 cup canola oil
4 pounds boneless pork loin

Steps:

  • Preheat oven to 350 degrees F.
  • Mix jerk seasoning with the oil in a small bowl (this will thin it and cut the heat). Trim any excess fat from the pork loin, leaving a thin-layered wide strip down the center of the top. 2 garlic cloves, minced
1 teaspoon allspice
1 teaspoon thyme
1/2 teaspoon cayenne

2 limes, juice of

3 -4 lbs pork loin, trimmed
1 teaspoon ground dried chile (optional)

Steps:

  • Preheat oven to 350°F.
  • In a food processor, grind the peanuts and garlic, and pulse to the consistency of coffee grounds. (If you can't get the prepared peanuts, use peanuts and add in 1 tsp of dried ground chile, red or green, but hot!).
  • In a mixing bowl, combine the nut mixture with the remaining ingredients, except the pork.
  • Stir well, then coat the pork with this mixture.
  • Heat a wide, ovenproof pan over medium-high heat and put a little oil inches
  • When hot, sear the nut encrusted pork loin for 2 - 3 minutes on 2 sides.
  • Put this pan with the pork in the oven and roast for 1 hour 20 minutes, or until done.
  • Remove, and rest for 10 minutes.
  • Slice the pork into thin medallions.
  • Spoon some Vanilla Yams in the center of each plate, then place 4 slices of pork on top of that.
  • Ladle 1/4 cup Curried Mango Sauce across the pork.
  • Serve with a spicy chutney on the side.

2 teaspoons ground cumin
1/4 teaspoon cayenne, or more, to taste
Kosher salt
1 1/2 pounds pork loin roast
4 tablespoons vegetable oil
1 sweet onion, roughly chopped
2 cloves garlic, smashed
2 tablespoons freshly grated ginger
1 bunch fresh cilantro leaves
1 lime, zested
2 tablespoons olive oil
1/4 cup plain bread crumbs
Kosher salt
1 1/2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together the cinnamon, cumin, cayenne, and salt, to taste. Rub the mixture all over the outside of the pork. In a large saute pan, heat the oil over medium-high heat and brown the pork roast on all sides, just until golden. Remove the pork to a sheet tray, fat side up.
  • Meanwhile, make the herb crust: In a food processor, combine the onions, garlic, ginger, cilantro, and lime zest. In the same saute pan in which the pork was browned, add the olive oil and the onion mixture and cook until softened. Stir in the bread crumbs and cook another 1 to 2 minutes. Season with salt, to taste. Spread the mustard on top of the fatty layer of pork and then press the herb crust into it. Bake until the internal temperature reaches 160 degrees F on an instant-read thermometer, about 30 minutes. Remove to a cutting board and allow to rest, covered for 5 to 10 minutes. Slice the roast, arrange on a serving platter and serve.

  • Preheat oven to 375 degrees Fahrenheit.
  • Trim fat from tenderloin.
  • Sprinkle with fresh ground black pepper to taste.
  • Line a baking dish with parchment paper or aluminim foil.
  • Mix the soy sauce, peanut butter, red pepper and minced garlic together.

  • Bake uncovered for 30 minutes.

1 pork boneless double center loin roast, 2 to 2 1/2 pounds
1 cup orange juice
1/2 cup lime juice
1 1/2 teaspoons ground cumin

1 medium green bell pepper, cut into eighths
1 medium onion, cut into fourths
4 garlic cloves, crushed
Salt and pepper to taste

  • Remove fat from pork. Pierce pork deeply all over with meat fork or skewer. Place pork in heavy resealable plastic food-storage bag.   • Pour marinade into 1 1/2-quart saucepan. Stir in sugar and 1/2 teaspoon salt. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, stirring occasionally, until mixture thickens slightly. Serve sauce with pork.

2 (3/4 lb) pork tenderloin, trimmed of visible fat
vegetable oil cooking spray
1 cup apple cider or 1 cup apple juice
1 large onion, sliced
1 tablespoon barbecue sauce
1 teaspoon minced garlic (1 medium clove)
1/8 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes (use cayenne pepper for extra heat)
1/8 teaspoon ground cloves
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground thyme
sourdough French baguettes or roll

Steps:

  • Coat a Dutch oven with cooking spray; place oven on medium-high heat until hot.
  • Add tenderloins and cook about 10 minutes or until browned.
  • Turn occasionally.
  • Combine the apple cider or juice with the remaining ingredients in a bowl.
  • Pour over the tenderloins.
  • Insert a meat thermometer into the thickest portion of the tenderloin.
  • Bring to a boil.
  • Reduce heat and simmer covered, for about 40 minutes or until thermometer reads 160°F.
  • Occasionally, baste with the pan juices.
  • When done, remove tenderloins to a cutting board and allow to stand for at least 10 minutes before slicing.
  • While the tenderloins are resting, heat the juices to boiling and cook until they are reduced to a thick syrupy sauce (about 10 minutes).
  • Slice the tenderloins diagonally across the grain into thin slices.
  • Serve on a baguette or roll sliced in half lengthwise.
  • Top the sliced pork with the"sauce".
