Steps:
- Slice the oranges down the middle and squeeze the juice. Mash a head of garlic in a morteros (a thick bowl with a mashing paddle used in Latino cooking). Add a little salt to the garlic (more than a pinch, less than a teaspoon). Add the sour orange juice to the mixture. Add oregano and pepper, to taste. Brush the Mojo Sauce on the food as it is cooking.

- Place garlic in a mortar and pestle. Add 1/2 teaspoon of salt and work into a smooth paste.
- In a small bowl, whisk together garlic, sour orange juice, oil, oregano, cumin. Season with salt and pepper to taste.

MOJO SAUCE MARINADE
Steps:
- Start by taking apart the garlic head into cloves and remove the papery skin. Next, place the garlic cloves and white onion into a food processor or blender and blend into a finely chopped mixture.
- Then, pour the garlic and white onion mixture into a mixing bowl with remaining ingredients. Mix everything well with a whisk or spoon and let the marinade sit for 45 minutes before using or storing inside the refrigerator.

- Heat oil in a small saucepan over medium. Stir in garlic, cumin, and oregano, then immediately remove from heat. Let cool 10-15 minutes. Stir in chile, lime juice, orange juice, and salt.

- Sauce can be made 1 week ahead. Transfer to an airtight container and chill.
CARIBBEAN GARLIC SAUCE

- With a wooden spoon, blend the garlic and salt together. In a saucepan, heat the garlic mixture, pepper, onion, cumin and oil. Saute on low until the onion is translucent. Add the orange juice and lime juice and heat to a simmer. Serve over chunks of boiled yucca.
CUBAN YUCA CON MOJO
Yuca con mojo is a side dish of tender, creamy cassava, drizzled with a citrus garlic sauce (mojo). It is one of the most traditional dishes of Cuban food.

- Add frozen cassava to a large pot, cover with water, and bring to a boil over high heat. Cook for 8 minutes and check for doneness. (Prick with a fork and it should be soft, but firm.) Drain the water and cut cassava in chunks of 1 to 2 inches.
- Make a paste with the garlic and the salt using a small food processor, or a mortar and pestle.
- Mix the garlic and salt paste with the sour orange juice.
- In a small saucepan with a lid, heat the lard or vegetable oil on high. Once it is hot, add the onions and let them cook for about 20 seconds. Add the sour orange juice mixture, close the lid, and turn off the heat. Let stand for a few seconds.
- Arrange cassava chunks on the serving platter, drizzle the hot mojo over the cassava, and serve.

- Juice the limes into a mixing bowl and add the remaining ingredients. Stir well. Transfer to a tightly sealed jar and store in the refrigerator for up to 4 days.
