Searing salmon in a tangy lime and ginger caramel that's spiked with Asian fish sauce is one of my favorite ways to cook the fish. Usually I make this in a skillet, starting it on the stovetop and finishing it in the oven. But it cooks beautifully and very quickly in the pressure cooker, turning wonderfully tender. If you like your salmon slightly rare in the center, seek out thick center-cut fillets. They are less likely to overcook than are thinner pieces. 1 tablespoon coconut oil, melted, or 1 tablespoon extra-virgin olive oil
1/3 cup packed light brown sugar
3 tablespoons Asian fish sauce
1 1/2 tablespoons soy sauce
1 teaspoon grated peeled fresh ginger
Finely grated zest of 1 lime
Juice of 1/2 lime
1/2 teaspoon freshly ground black pepper
4 skinless salmon fillets, preferably center-cut pieces, 6 to 8 ounces each
Sliced scallions (white and green parts), for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Using the sauté function, whisk together the oil, brown sugar, fish sauce, soy sauce, ginger, lime zest and juice, and black pepper in the pressure cooker. Bring to a simmer and then turn off the heat.
  • Place the fish in the pressure cooker, skin-side up (if there is skin still attached, that is). Spoon the sauce over the fish, cover, and cook on low pressure for 1 minute. Let the pressure release naturally for 5 minutes; then release the remaining pressure manually. Check the fish for doneness by cutting into one of the fillets. If you prefer your salmon more well-done, cook it for another minute using the sauté function.
  • Carefully lift the salmon fillets onto a serving platter, flipping them over so the browned caramelized side is facing up. Reduce the sauce on the sauté function until it is thick and syrupy, about 3 minutes. Spoon the sauce over the salmon and garnish it with the scallions and cilantro.

SCRAMBLED EGG WITH SALMON ROE SMORREBROD



Scrambled Egg with Salmon Roe Smorrebrod image

12 extra-large eggs
1/2 stick plus 2 teaspoons lightly salted butter
6 slices dark bread, cut in half
24 thin slices cucumber
3 ounces salmon roe or other fish roe
Fresh dill sprigs for garnish

Steps:

  • Beat the eggs well in a large bowl. In a heavy saute pan, about 8 inches in diameter, melt 2 teaspoons of butter over extremely low heat. Add the beaten eggs, and cook over the lowest possible heat for 45 minutes. Stir occasionally to prevent a skin from forming on the surface. The eggs will thicken very slowly. When they begin to thicken, stir gently with a large spoon to create large flaps in the scrambled eggs. The eggs will be darker in color and thicker than normal scrambled eggs.
  • Spread 1 teaspoon of butter on each of the bread halves. For each smorrebrod, at 2 corners that face each other diagonally, place 2 slices of cucumber. At the other 2 corners, place about 1/4 teaspoon of salmon roe. Cover the rest of the bread with about 1/12 of the egg mixture. Repeat until all smorrebrod are done. Garnish with sprigs of fresh dill.

1 tablespoon vegetable oil, plus more as needed for frying
1 3/4 pounds salmon fillets, skin-on, diced into large cubes
1 red onion, sliced
3 cloves garlic, sliced
3 tablespoons dark soy sauce
1/2 cup light brown sugar
3 tablespoons fish sauce
Freshly cracked black pepper
1 tablespoon fresh lime juice
Lime wedges, for garnish
Serving suggestion: steamed white rice

Steps:

  • In a large frying pan, heat the oil over high heat. Add the salmon in 2 batches, and cook each batch until the fillets are lightly browned, about 3 minutes. Turn them over and cook their second sides for 1 minute, then remove them from the pan.
  • Reduce the heat to medium, and add a little extra oil to the pan, if needed. Add the onion and garlic and cook for 3 minutes, stirring occasionally. Stir in the soy sauce, sugar and fish sauce. Return the salmon to the pan and continue cooking until the sauce is rich, dark and syrupy, about 1 minute. Season the dish liberally with black pepper, and stir in the lime juice. Serve the salmon alongside some steamed rice, and drizzle the dish with the sauce, and garnish with lime wedges.

1 cup cornmeal
1/2 cup flour
1/2 teaspoon baking soda
1 teaspoon salt
2 whole eggs
1 cup milk
2 tablespoons melted butter
1/4 cup vegetable oil
1 cup sour cream
1/4 cup chopped fresh chives
4 ounces salmon roe
Mixed meslcun salad
Whole chives for garnish

Steps:

  • Mix the cornmeal, flour, baking soda and salt. Whisk the eggs, milk, and butter together and combine with the dry ingredients into a batter. Allow the batter to rest, refrigerated, for 30 minutes. Heat the vegetable oil in a large saute pan over medium heat until a little a batter dropped in begins to sizzle. Begin to spoon in batter, 2 to 3 tablespoons at a time to make pancake-like corncakes. Cook in batches, cleaning the pan if it becomes messy and adding additional; oil if necessary. Keep the cakes warm while you finish cooking the remaining batter. Combine the sour cream with the chopped chives and serve several corncakes with a dollop of sour cream and a dollop of salmon roe. Garnish with a small salad and whole chives.

70g unsalted butter, plus extra for the tin
200ml double cream
½ tsp vanilla extract
150g golden granulated sugar
150g golden syrup
1 heaped tsp flaky sea salt
flavourless oil, for the knife
sugar thermometer or digital probe

Steps:

  • Butter and line the base and sides of a 20 x 30cm tin with baking parchment.
  • Pour the cream into a saucepan along with the butter and vanilla, then bring to a simmer. Swirl the pan to melt the butter, then remove from the heat.
  • In a separate pan, melt the sugar and golden syrup together, stirring occasionally. Once the sugar granules have dissolved, bring to the boil and cook until the temperature reaches 155C on a sugar thermometer. Remove from the heat and swiftly whisk through the cream mixture. Return to the heat and cook until the mixture reaches 127C, constantly whisking so it doesn't catch.
  • Pour the caramel into the tin, tilting so it reaches the corners. Leave to set for 15 mins, then sprinkle with the salt. Leave to cool completely at room temperature (preferably overnight). Cut into squares using a very sharp, slightly oiled knife, then wrap each one in a square of baking parchment.
