I love potatoes in all forms, but this is my all time favorite. I have been making it since I was a teenager, and everyone in the family always requests it when I make dinner. I have shortened the prep time using canned, whole, white potatoes, instead of boiling my own. The results are just as delicious. If you are opposed to canned potatoes, use fresh, boiled potatoes. These potatoes make fantastic leftovers too! This is the first time I have ever given out the recipe. I hope you all enjoy it as much as we do!

3 tablespoons canola oil
2 large Vidalia or other sweet onions, roughly chopped
4 (15 ounce) cans whole new potatoes, drained
3 tablespoons extra-virgin olive oil
¾ teaspoon garlic salt
¼ teaspoon garlic powder
¼ teaspoon dried minced garlic
2 tablespoons paprika
¼ teaspoon black pepper
½ cup butter, at room temperature

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Heat the canola oil in a large skillet over medium heat, then stir in the Vidalia onion. Cook and stir until the onion has softened and turned deep brown, 10 to 15 minutes. While the onions are caramelizing, toss the drained potatoes with the olive oil in a large bowl. Season with garlic salt, garlic powder, dried minced garlic, and black pepper; toss until well coated, then pour into the prepared baking dish, and spread into a single layer.
  • Sprinkle the caramelized onions on top of the potatoes, then dot the top of the dish with the room temperature butter, and sprinkle with paprika. Bake uncovered in the preheated oven until the outsides of the potatoes are crisp, 45 to 55 minutes.

To save time, the caramelized onions can be made ahead of time and refrigerated, then warmed before adding to the potatoes.

3 tablespoons butter
4 onion, sliced and separated into rings
1 tablespoon white wine vinegar
½ teaspoon ground dried thyme
6 large baking potatoes, peeled and cubed
1 tablespoon Dijon mustard
2 tablespoons prepared horseradish, or to taste
salt and cracked black pepper to taste
¼ cup softened butter
¾ cup half-and-half

Steps:

  • Melt 3 tablespoons butter in a large skillet over medium-high heat. Add the onions and cook for 5 minutes. Reduce heat to medium, and continue cooking, stirring frequently, until the onions have softened, and achieved a deep brown color, 15 to 25 minutes. Stir in vinegar and thyme, and cook for 5 minutes more.
  • While the onions are cooking, place cubed potatoes in large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the potatoes can be pierced easily with a fork, about 20 minutes. Drain the potatoes in a colander, and allow to steam for a minute.
  • To finish the dish, transfer the potatoes to a serving bowl, and use a potato masher to mix with Dijon mustard, horseradish, salt and cracked black pepper until smooth. Mix in softened butter, caramelized onions, and half-and-half until onions are distributed evenly.

2 tablespoons butter
2 tablespoons olive oil
6 garlic cloves, sliced

bay leaf

1/3 cup sherry wine
4 cups low sodium nonfat beef broth
1 tablespoon Worcestershire sauce

2 cups leftover mashed potatoes
4 -6 slices toasted bread (I used croissant halves)
1 -1 1/2 cup of grated swiss gruyere
scallion, thinly sliced, for garnish

Steps:

  • Heat the oil and butter in a large pot over medium high heat till it stops sizzling.
  • Add onions and reduce the heat to medium-low.
  • Cook slowly, stirring occasionally, until golden brown and caramelized, about 15 minutes. Add garlic cook 15 minutes. Add pepper, pepper flakes, bay leaf, thyme and sugar.
  • Pour in sherry, deglazing pot and reduce for 1 minute.
  • Add Broth and Worcestershire sauce.
  • Bring to a boil lower heat to a simmer and cook for 10 more minutes.
  • Add mashed potatoes stirring in till creamy smooth and heated throughout. Taste and adjust seasoning. Salt should wait till now because the mashed potatoes, broth and Worcestershire sauce all contain salt.
  • Toast bread in oven and top with your favorite cheese and place on top of soup and serve topped with a garnish of scallions.

6 large baking potatoes, peeled, cut crosswise into thirds (about 4 1/2 pounds)
1 garlic clove, minced very finely
1 large onion, peeled, cut in half crosswise, cut in thin slices
7 tablespoons extra virgin olive oil, divided

Steps:

  • Place potatoes in heavy large pot. Cover with cold water. Boil over medium-high heat until potatoes are tender when pierced with fork, about 40 minutes. Drain, reserving 1 1/2 cups potato cooking liquid. Return potatoes to dry pot. Stir over medium heat until any excess liquid evaporates. Add 4 tablespoons olive oil and mash until almost smooth. Mix in enough potato cooking liquid as needed to moisten. Stir in caramelized onions. Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, adding more reserved cooking water as needed to moisten.).
  • To caramelize onions: Add 3 tablespoons olive oil to a saucepan and add onions. Saute over medium-high heat until onions are starting to caramelize 10-12 minutes. Add the garlic for the last minute of cooking. If you like your onions darker, saute them slightly longer (or if you like them lighter, diminish the saute time).
  • Note: A couple of tablespoonfuls of parmesan stirred into these potatoes is a lovely thing!

  • Heat butter and olive oil in a large skillt over medium heat until butter is melted.
  • Add onions; stir to coat with butter/oil.
  • Cover and cook 10 miutes or until onions have wilted; stirring occasionally.
  • Remove cover, increase heat to medium-high.
  • Sprinkle with sugar; stir to combine.
  • Cook 25-30 minutes or until onions are deep golden brown, stirring frequently

1/4 cup half and half or sour cream
1 medium white onion (1.5 cups chopped)

The most amazing, lusciously creamy and insanely flavorful mashed potatoes recipe you'll ever make!

3 lbs yukon gold or russet potatoes, peeled and chopped into chunks*
2 Tbsp avocado oil
2 large yellow onions, finely chopped
1 bulb garlic
1 1/2 cups buttermilk**
2 cups parmesan cheese, or to taste
3 Tbsp unsalted butter, optional
1 tsp sea salt, to taste

Steps:

  • Add the avocado oil to a large non-stick skillet and heat to medium-high. Add the chopped onions and sprinkle liberally with sea salt. Cover the skillet and cook, stirring occasionally, until the onions leach a lot of their liquid, turn translucent and have softened.
  • Remove the cover from the skillet and reduce the heat to medium or medium-low. Continue cooking, stirring occasionally, until the onions are brown and caramelized, about 50 to 60 minutes total.
  • Cut the top off of the bulb of garlic and place it on a sheet of foil. Drizzle with avocado oil then wrap the bulb in the foil so that it's fully covered. Roast at 400 degrees Fahrenheit for 35 to 45 minutes, or until the garlic cloves are deeply golden-brown. Remove garlic from the oven and set aside until ready to use.
  • Once the garlic is cool enough to handle, turn the bulb upside down over a cutting board and squeeze it to release all of the cloves. The cloves should squeeze out relatively easily. Chop up the cloves into finer pieces.
  • Bring a pot of water to a boil on the stove top. Peel and chop the potatoes into 3-inch chunks (or roughly equal sized chunks) and transfer to the boiling water. Cook at a continuous boil until the potatoes are very soft when poked with a fork, about 15 to 20 minutes. Drain the potatoes into a colander, then transfer them back into the same pot you used for boiling.
  • Add the buttermilk, parmesan cheese, butter, and sea salt to the pot with the hot cooked potatoes and mash using a potato masher until the potatoes reach your desired consistency. Taste the mashed potatoes for flavor and add more sea salt, parmesan cheese, and/or butter to taste.
  • Add the caramelized onions and chopped roasted garlic to the pot and stir well to combine.
  • Serve with your main dish and enjoy!
