Cut this onion focaccia into squares or tear and share - it's an ideal side dish for a barbecue alongside summer salads and can be made a day ahead

250g '00' flour
250g strong white bread flour
7g sachet fast-action dried yeast
10g fine sea salt
3 tbsp good-quality olive oil , plus extra for drizzling
knob of butter
3 large red onions , sliced
2 tbsp balsamic vinegar

Steps:

  • Mix the flours with the yeast and salt, add 1 tbsp oil, then pour in 320ml lukewarm water and mix well. You want a very soft dough - don't worry if it looks a little wet, this will make a lighter focaccia. Knead for 5 mins if using a stand mixer, or 10 mins by hand, using a dough scraper if you have one and lightly oiling your hands and the surface. Transfer the dough to a lightly oiled bowl, cover with a damp tea towel and leave to rise until it has doubled in size.
  • Meanwhile, melt the butter in a large frying pan with the remaining oil, add the onions and a pinch of salt, and cook gently for 20 mins or until very soft. Pour in the vinegar and cook for a further 10 mins until sticky. Set aside to cool.
  • Oil an A4-sized roasting tin, scrape in the dough and reshape in the tin (see tip, below), gently pushing the dough into the corners. Scatter over the onions, cover with a piece of lightly oiled cling film and leave until puffed up.
  • Meanwhile, heat oven to 220C/200C fan/gas 7. Using your fingers, lightly dimple the dough all over, drizzle with a little oil and sprinkle with sea salt. Bake for 30 mins until golden brown. Can be made the day before and stored in an airtight container.

Steps:

  • Place all ingredients except cheeses and onion topping in your bread machine pan in the order recommended by manufacturer Use dough setting. When dough is finished, grease cookie sheet. Pat dough into twelve-inch circle on sheet. Cover and let rise in warm place about 30 minutes or until almost double. Prepare onion topping. Heat oven to 400º. Make deep depression in dough at one inch intervals with finger or handle of wooden spoon. Spread topping over dough. Sprinkle with cheeses. Bake 15 to 20 minutes or until edge is golden brown. 2 cups bread flour
1 tablespoon sugar

Steps:

  • Measure carefully, placing all dough ingredients in bread machine pan in the order recommended by the manufacturer.
  • Select Dough/Manual cycle. Do not use Delay cycle.

My favorite is smoked turkey, Stilton cheese, watercress, and scallions. Don't forget the beer - this one will make you thirsty. Leftover focaccia is perfect for making croutons. Cut the bread into 1" cubes and saute in garlic oil until brown and crisp. Drain on paper towels. I've found that this bread is a sad reminder of its former glory just one day after making it; though, many have heated up and enjoyed leftovers in the days that follow. 3 cups all-purpose flour
1 1/2 teaspoons coarse salt
1 cup sourdough starter
1 1/2 cups water

Steps:

  • To Make the dough:.
  • Place all ingredients for dough, except for the tablespoon of flour in the machine and run the dough cycle.
  • Add more water if necessary to for a very wet dough that barely holds its shape and does not leave the bottom of the pan. (I've never had to do this).
  • At the end of the cycle, remove the bucket from the bread machine, cover with plastic wrap and refrigerate for 12-18 hours (Note: the recipe as originally written said here to sprinkle a tablespoon of flour over the dough before covering and refrigerating. That might be required if the dough were likely to rise and touch the plastic wrap, but I've never had that happen after making this recipe many, many times [Unless making multiple recipes, I always refrigerate in the bread machine bucket]. If you transfer the dough to a not-so-large bowl and are concerned about it, by all means, sprinkle away).
  • If you don't have a bread machine and want to use a stand mixer:.
  • - Put all the ingredients, starting with the starter, in the bowl of a stand mixer.
  • - Mix on low, starting with the paddle attachment for 20 minutes. Feel free to switch to a dough hook when you feel it's appropriate.
  • - Allow to rise for 90 minutes.
  • - Mix for one minute and then proceed as directed above.
  • To Finish the Focaccia:.
  • Pour the dough into a 9x13" baking pan that has been prepared with olive oil and corn meal.
  • Cover the dough with aluminum foil and refrigerate for 4 hours.
  • Then remove from the fridge and, leaving the dough covered, allow to rise at room temperature for 2 hours.
  • Meanwhile, caramelize the onions (using 1-2 medium onions) with 2 tablespoons olive oil.
  • Preheat the oven to 475°F.
  • After the two-hour rise at room temperature, spread the onions over the dough.
  • Sprinkle the remaining olive oil and the salt over the dough.
  • Bake 20-25 minutes until the top is crusty and a rich golden brown color.
  • Eat hot, warm, or at room temperature.

1batch white bread dough (see 'Goes well with' recipe below)
5 tbsp olive oil
2 large red onions , sliced
handful rosemary sprigs
1 tsp sea salt flakes

Steps:

  • Make the basic dough, adding 2 tbsp olive oil and only a pinch of salt. While the dough is rising, cook onions in 1 tbsp olive oil for 5 mins until soft, then set aside.
  • When the dough has risen, knock it back and stretch it to fit an oiled Swiss roll tin about 25 x 35cm. Leave the dough to prove for about 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Spread the onions over the dough and scatter with the rosemary. Press your fingers into the dough to make dimples, drizzle the remaining oil over and scatter over the salt, then bake for 30 mins until golden. Leave to cool, then serve cut or torn into squares.

3/4 cup water (70-80 degrees F)
2 tablespoons olive oil
1 teaspoon salt
2 cups bread flour (I use all purpose flour)
1 tablespoon sugar

2 onions, sliced and quartered (medium)
3 garlic cloves, minced
1/4 cup butter
2 teaspoons italian seasoning
1 cup cheddar cheese, shredded
2 tablespoons parmesan cheese, grated

Steps:

  • In bread machine, place dough ingredients in the order suggested by the manufacturer. Select dough setting.
  • After 5 minutes of mixing, check to see if you need to add 1 tbsp water or flour.
  • When dough cycle is complete, place dough onto a lightly greased 12" pizza pan and pat into a 10" circle.
  • Cover and let rise in warm place for 30 minutes or until doubled in size.
  • Meanwhile, in large skillet saute onions and butter for 15 minutes.
  • Add minced garlic and cook 5 minutes more. Stir in Italian seasonings.
  • Using the end of a wooden spoon, make deep indentations 1 " apart in dough.
  • Top with onion mixture and cheeses.
  • Bake at 400F 15-18 minutes or until golden. Serve warm.

This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

2 teaspoons dried yeast
3 cups bread flour
1 teaspoon salt
1 tablespoon sugar

1 tablespoon oil
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
  • (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
  • Then, knead the dough lightly (in the bowl) for about 1 minute.
  • On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
  • Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
  • 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
  • YUM!
  • Bake at 225°C for about 15 minutes or until golden brown!

My family loves this bread & it is so easy to make. I serve it with Italian food. It is adapted from a recipe in Pizza, Focaccia, Flat, & Filled Breads From your Bread Machine. You may substitute herbs in the topping, or use fresh. The original recipe calls for a roasted vegetable topping, but I am going to post that as a separate recipe because the bread alone is great. (Cooking time includes rising times & will vary with your bread machine cycle).

2 teaspoons yeast
2 1/2 cups all-purpose flour
1 teaspoon sugar
1 1/2 teaspoons salt
1 cup lukewarm water
1/3 cup olive oil
1 teaspoon dried basil
1/4 teaspoon coarse salt
1 tablespoon olive oil

Steps:

  • Place the ingredients into the pan in the order recommended by your bread machine.
  • Program the machine for "dough cycle".
  • Check dough about 10 minutes before the end of the 2nd kneading cycle.
  • It should be a smooth, sticky ball.
  • Adjust if needed with more flour or water.
  • When the machine has completed its cycle, transfer the dough to a lightly floured work surface.
  • Roll or pat it into a large rectangle, about 17x12 inches.
  • Transfer the dough onto a large, lightly greased cookie sheet.
  • Let it rest 10 minutes then pat it back to its original shape if it has shrunk.
  • Cover with a towel and let rise for about forty minutes or till puffy.
  • Sprinkle the salt & herbs over the bread.
  • Press into the dough at intervals with your fingers& sprinkle with the olive oil.
  • Bake the focaccia in a preheated 425°F oven for 15 minutes or until the crust is golden brown.
  • Remove from the oven & cool on a wire rack.

1 tablespoon butter
2 medium onions, sliced
1 1/4 cups water
1 tablespoon olive oil
4 cups bread flour
2 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons bread machine yeast or 2 teaspoons active dry yeast

Steps:

  • Melt butter in skillet over medium-low heat. Cook onions in butter 10 to 15 minutes, stirring occasionally, until onions are brown and caramelized. Do not hurry the process. Remove from heat.
  • Place all remaining ingredients in bread machine pan in the order recommended by the manufacturer.
  • Set to basic cycle with medium or light crust. Add onions at beep signal or 5 to 10 minute before end of kneading cycle.
  • Alternatively, use dough cycle. Remove dough at end of cycle, shape as desired, place on cornmeal-sprinkled baking sheet and let rise. Bake for app. 30 to 40 minutes in a 400 deg. oven. Exact time depends on shape.
  • Note: I generally substitute one cup of whole wheat or rye flour for one cup of the bread flour. Rye is particularly excellent.
