Just posting so I don't lose track of it. Found on myrecipes.com. You can make the Caramelized Onion-Cranberry Compote a day ahead and store it in an airtight container in the fridge. Let stand at room temperature 30 minutes before serving.

- Melt butter in a large skillet over medium heat; add onions, and sauté 15 to 18 minutes or until golden and tender. Stir in vinegar and remaining ingredients; cook, stirring occasionally, 2 to 4 minutes or until liquid is reduced to about 2 tablespoons.
- Caramelized Onion-Cranberry-Cream Cheese Bites: Spread 16 whole grain crackers each with 1 1/2 teaspoons 1/3-less-fat cream cheese; top each with 1 tablespoons Caramelized Onion-Cranberry Compote. Garnish with fresh cilantro or parsley leaves.

GOAT CHEESE AND CARAMELIZED ONION PHYLLO BITES
This is a quick appetizer I came up with for my cousin who is lactose intolerant. It tastes great and they quickly dissappear at parties.

Steps:
- Preheat oven to 350°F.
- In a medium pan, heat oil or butter over medium heat and add onions. Cook till onions are browned and caramelized.
- Fill the phyllo cups about 1/3 of the way with the caramelized onions, top with the goat cheese and if you'd like a sprinkle of cheddar.
- Bake for 15 to 20 minutes.

- Spray a 24-cup mini muffin tin with non-stick cooking spray. Cut the puff pastry into 24 2-inch squares, spreading out pastry with a rolling pin to increase surface area if necessary. Press pastry squares into muffin cups. Prick the bottom of each pastry with a fork. Place muffin tin in refrigerator until ready to use.
- Heat olive oil in a large skillet over medium to low heat and add the onions. Saute for 15 to 20 minutes, stirring frequently, until the onions are soft and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat. Caramelized onions can be made up to 2 days ahead of time. Store cooled onions in an airtight container in the fridge. Bring to room temperature before using.
- In a food processor or with an electric mixer, blend cream cheese, feta, and garlic clove until smooth. Season to taste with salt and pepper. Place heaping teaspoons of cheese mixture into pastry cups. Top with another teaspoon of caramelized onions. Pastry bites can be assembled a few hours ahead of time, cover with plastic wrap and store in refrigerator.
