Steps:
- In a large bowl add in the flour, yeast, granulated onion and 2 tablespoon of dried onions, and salt. You need to make sure the bowl is at least 2 times the size as this will easily double in volume. Whisk to combine. Add in the water and mix with a wooden spoon - do NOT use a stand mixer. Mix it until it's combined and forms a 'shaggy' dough. Just make sure that all the flour is incorporated. It will not be a smooth dough - that's how it's supposed to be.
- Cover with plastic wrap and set in a warm place overnight for at least 12 hours but no more than 24.
- When you're ready to bake, preheat your oven. Put the rack in the middle and preheat to 450F. Let this heat up for about 45 minutes.
- Mix the remaining 2 teaspoon of dried, minced onions with 2 teaspoon of hot water. Gently stir and set aside. Place the dough out a lightly floured board and gently shape it into a rectangle ~12×8". Fold one third over and the other third on top (like an envelope). Gently start to roll it with your hands into a log that's ~12×4". Pinch the seams together. For the ends just tuck them under and pinch to seal. *See note if you're not using the Emile Henry Italian Loaf Bread Baker about shaping and baking in a Dutch oven.
- To the Emile Henry Italian Loaf Bread Baker, sprinkle in a tablespoon or two of flour in the bottom to help the dough remove easily after baking. Place the loaf in the baker. Take the re-hydrated dried onion mixture and sprinkle on top of the loaf. Cover and set aside while the oven heats up.
- 425F, put the loaf pan into the oven (covered) and bake for 40 minutes, remove the lid and bake for another 15 or until golden brown and the internal temp reaches 200F.
- Remove from the oven and carefully empty the loaf onto a cooling rack. Allow to cool before slicing.
- Store the bread in the Emile Henry Bread Box. It will stay fresh for ~3-5 days.

- About 12 hours before you’d like to bake your Italian herb Asiago cheese no-knead bread, make the dough. In a large bowl, combine the flour, Italian seasoning, Kosher salt, & active dry yeast. Whisk to combine. Add the Asiago, stirring to combine. Slowly & gradually pour in the lukewarm water, mixing the dough with a wooden spoon until just combined. The dough will look shaggy & will be very sticky at this point – & that’s totally fine! Cover the bowl with a kitchen towel & let rest in a warm, dry place for 12 hours.
- to 450 degrees about 30 minutes before you are ready to bake Italian herb Asiago cheese no-knead bread. Make sure one of the oven’s racks is positioned in the middle of the oven, & place an oven-safe dutch oven (at least 4-quart) on the rack, with its lid on, to heat along with the oven while it preheats. Once the oven is preheated, let the dutch oven sit in the hot oven for 20 minutes longer to really make sure it’s up to temperature – I literally set a cook timer for 20 minutes once the oven is preheated.
- Meanwhile, as the oven preheats, transfer the Italian herb Asiago cheese no-knead bread dough to a large piece of parchment paper. I like to quickly spritz my hands with nonstick cooking spray – it makes it so much easier to handle the dough without it sticking to your hands!
- : Once the dutch oven is up to temperature, very carefully remove it from the oven. Quickly & carefully remove the lid of the dutch oven, place the dough inside (you can just drop the parchment paper right in!), put the lid back on the dutch oven, & place the dutch oven back into the oven. Bake for 30 minutes. After 30 minutes, remove the dutch oven from the oven. Remove the lid and spray the top of the Italian herb asiago cheese no-knead bread generously with olive oil spray. Sprinkle some flaky sea salt over top, as desired. Return the dutch oven to the oven & bake, uncovered, for an additional 20 minutes, or until the loaf is crusty & golden brown (see photos above for reference).

- Start this Asiago bread recipe about 12 hours before you intend to bake it. The dough doesn't need extra work or steps but it does need time for a slow fermentation of the dough to occur.
- In a large mixing bowl, add the flour, yeast, onion powder and salt and then whisk to combine. Gently stir most of the Asiago cheese into the flour mixture and then slowly add in the lukewarm water. Grab your favorite wooden spoon and stir to combine all of your ingredients.
- Your bread dough with be sticky and that's what you want. Cover your bowl with a tea towel and move it to a warm spot in your house to sit undisturbed for the next 12 hours.
- When you are ready to bake your bread, place your oven safe dutch oven (with the lid on, please!) on the middle rack inside of your oven and then preheat to 450 degrees. Let 30 minutes go by to make sure your pot is up to temperature.
