2 teaspoons unsweetened apple juice
1 teaspoon water
1 teaspoon rice vinegar
1 teaspoon lemon juice
1 teaspoon olive oil
1/4 teaspoon sugar
1/4 teaspoon Dijon mustard
1/8 teaspoon salt
Spring mix salad greens
Assorted fresh fruit

Steps:

  • In a small bowl, whisk the first eight ingredients. Drizzle over greens and fruit.

2 ounces brown sugar
3 ounces plus 1 ounce apple cider vinegar
1 clove garlic, minced
1 gala apple, peeled, cored and medium diced
1 lemon
4 ounces olive oil
2 ounces canola oil
1 teaspoon fresh thyme
salt

Steps:

  • In a small skillet over medium heat add 3 ounces vinegar and the sugar. Let it reduce until the color turns a dark caramel color and begins to thicken. You will start to see big foamy bubbles on the surface. Add the apples and garlic and sauté until the apples are cooked through, about 5 minutes. Stir occasionally. Remove from heat and put in the blender with 1 ounce of vinegar, thyme, juice of ½ lemon and a pinch of salt. Woosh until blended, then slowly add the oil. Blend until the dressing is emulsified. Taste and season with salt and perhaps a splash more vinegar.

Pork Roast with Caramelized Apple Salad with Maytag Blue and Spicy Orange Vinaigrette image

2 tablespoons olive oil
1 (3 to 4 pound) boneless pork roast
Salt and pepper
1 carrot, peeled and coarsely chopped
1 onion, peeled and coarsely chopped
1 celery stalk, coarsely chopped
4 cloves garlic, coarsely chopped
3 cups water
1 cup white wine
1 bay leaf
6 sprigs parsley
6 black peppercorns
2 tablespoons cold butter
2 cups orange juice
2 tablespoons red wine vinegar
2 tablespoons coarsely chopped red onion
1 jalapeno pepper, coarsely chopped
1 tablespoon ancho chile powder
3/4 cup olive oil
1 tablespoon honey
Salt and pepper to taste
1 1/2 cups Spicy Orange Vinaigrette
2 Granny Smith Apples, peeled, cored and quartered
1 cup watercress
1 cup frisee
Salt and freshly ground pepper
1/4 cup black walnuts
4 ounces Maytag blue cheese, crumbled

Steps:

  • For the Roast: Preheat oven to 325 degrees F. Heat oil in a large Dutch oven over medium-high heat. Season the pork with salt and pepper and sear well on all sides. Drain off the fat, and add the remaining ingredients to the pot. Place in the oven and cook until the internal temperature of the meat registers 150 degrees F, about 2 hours. Remove the meat to a plate and remove the vegetables and herbs with a slotted spoon. Add more water if needed. Bring the cooking liquid to a boil and reduce by half. Whisk in the butter and season with salt and pepper to taste.
  • For the Spicy Orange Vinaigrette: Place orange juice in a small nonreactive pan over high heat and cook until reduced to 1/4 cup. Place reduced orange juice, vinegar, onion, jalapeno and ancho powder in a blender and blend until smooth. With the motor running, slowly add the olive oil until emulsified. Add the honey and salt and pepper to taste.
  • For the Apple Salad: Heat 3/4 cup of the Spicy Orange Vinaigrette in a medium saute pan over medium high heat. Add the apples, cut-side down and saute until golden brown, turn over and saute until just cooked through, 1 to 2 minutes. Place the watercress and frisee in a medium bowl and toss with a few tablespoons of the remaining Spicy Orange Vinaigrette, season with salt and pepper and divide among 4 plates. Arrange 2 apple quarters on each plate, garnish with walnuts and blue cheese and drizzle with some of the remaining vinaigrette.

8 ounces apple juice
6 ounces brown sugar
2 tablespoons cracked black pepper
1 tablespoon cayenne
1 tablespoon ground cinnamon
2 tablespoons salt
1 quart canola oil

Steps:

  • In a standing mixer, using a whisk attachment, mix in cider vinegar, apple juice, brown sugar, cracked black pepper, cayenne, cinnamon and salt. Blend on medium speed until all ingredients are incorporated. Continue mixing on low speed and add oil slowly until emulsification starts. Change speed to medium and add remaining oil.

3 tablespoons butter
5 spicy-sweet crisp apples (Jonagold, Crispin, Honeycrisp)
1 tablespoon granulated sugar
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon lemon zest
1/3 cup apple cider
1/2 teaspoon cornstarch, as needed

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Add the apples to the pan and sprinkle with 1 tablespoon sugar.
  • Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
  • Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest.
  • Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
  • Transfer the apples from the skillet to a serving bowl with a slotted spoon.
  • Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits.
  • Reduce the heat slightly and allow the cider and the pan juices to simmer for 1-3 minutes, until the sauce has reduced and thickened slightly.
  • If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment.
  • Pour the finished sauce over the warm apples and serve immediately.

  • For the Vinaigrette:.

  • Preheat the oven to 425°F. Lay the bacon out onto a sheet pan. Bake for 15-18 minutes, or until crisp. Transfer the bacon to a plate lined with paper towels and set aside. Pour 2 tablespoons of the hot bacon fat into a 12″ skillet. Leave the remaining on the sheet pan.
  • Add the sliced apples to the sheet pan, spreading them in one even layer. Roast the apples in the bacon fat for 10 minutes. Give the apples a flip and roast for another 5 minutes, or until golden. Set aside.
  • Meanwhile, heat the 12″ skillet over medium heat. Add the pecans and toast until golden and fragrant. Season with a pinch of salt. Spoon the pecans out onto a plate lined with paper towels.
  • Add the shallots and a pinch of salt to the skillet. Drizzle a little olive oil in if needed. Sauté for a few minutes until the shallots are caramelized and softened. Add the maple syrup and apple cider vinegar. Whisk to combine. Let simmer for 30 seconds or so. Transfer this mixture to a mixing bowl and let cool for a few minutes. Slowly drizzle in the neutral-flavored oil until emulsified. Season with salt and freshly cracked black pepper to taste (you want the vinaigrette to be very well seasoned).
