  • Caramel Grapes These are like a mini caramel covered apple! I found some gigantic grapes at the store and remembered seeing this on Pinterest. My kids and I made them as a snack. I bought some caramel dip and heated it a little to make it easier to coat the grapes and then we rolled them in nut topping.

25 green grapes
25 toothpicks
1 small jar of caramel topping
3/4 c crushed peanuts

Steps:

  • 1. Wash grapes and lay on paper towels to dry. Meanwhile crush peanuts;set aside
  • 2. When grapes are dried, place a toothpick at the top of each one. Dip in warm caramel then in crushed peanuts. Set on a nice serving plate or in a air tight container. These are sure to be gone in minutes.
  • 3. Note: if you have a peanut allergy, crush your favorite cereal instead.

1 pinch cream of tartar
10 fluid ounces water
1/2 lb grapes, washed,dried and divided into pairs

Steps:

  • Dissolve the sugar and cream of tartar in the water in a heavy-based saucepan.
  • Boil until the mixture reaches 150°C/300°F or until a drop will harden in cold water.
  • Remove from the heat and quickly dip the pairs of grapes into the syrup, holding them with a fork or small tongs.
  • Place them on a greased sheet to harden, and then put them into paper petit four cases to serve.

½ cup confectioners' sugar
2 tablespoons vanilla extract
5 cups green seedless grapes
1 cup butter
1 cup brown sugar

Steps:

  • In a large bowl, mix together sour cream, confectioner's sugar and vanilla. Stir in grapes. Set aside.
  • In a medium saucepan, combine butter and brown sugar. Stir constantly and cook over medium heat until mixture starts to thicken. It does not need to boil.
  • Pour brown sugar and butter over grape mixture and stir until well blended. Chill for at least 2 hours before serving.

½ cup finely chopped toffee bits

25 green seedless California grapes
½ cup finely chopped salted peanuts

  • Chocolate Toffee Grapes Put toothpicks into the grapes, set aside. Line a baking sheet with wax paper or parchment. In a small double boiler, melt the chocolate and oil together over medium-low heat, stirring until melted, about 5 minutes (or in the microwave on high power 30 seconds, stirring once). 2 sticks (16 tablespoons) unsalted butter, cold
1 cup all-purpose flour, plus more for dusting
1/4 cup granulated sugar
Pinch kosher salt
Zest of 1 lemon
1 large egg yolk
Nonstick cooking spray, for the ring molds
1 1/2 sticks (12 tablespoons) unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
4 large eggs
1 bunch small red grapes, stems removed
2 tablespoons turbinado sugar
1 1/2 cups vin santo
Juice of 1/2 lemon
1/4 cup heavy cream
3 tablespoons unsalted butter
1 cup mascarpone
2 tablespoons vin cotto, in a squeeze bottle
Fresh thyme leaves, for garnish
Powdered sugar, for dusting

Steps:

  • For the dough: To the bowl of a food processor, add the butter, flour, granulated sugar, salt and lemon zest. Pulse until it resembles coarse sand. Add the egg yolk and a tablespoon of water. Pulse until the mixture forms a crumbly dough, but holds its shape when pinched. (If too crumbly, add a little bit more water.)
  • Turn the dough out onto a clean work surface. Knead very lightly until the dough comes together. Pat into a disc, then roll into a 1/4-inch-thick circle, turning the dough regularly and flouring as needed to ensure it doesn't stick.
  • Spray six 4-inch ring molds with the nonstick spray. Cut out 4 dough rounds slightly larger than 4 inches, then transfer a piece of dough to the center of each ring mold, bringing it up the edges to make a rustic tart crust. Slide a spatula underneath to transfer to a half-sheet tray lined with parchment paper. Place in the fridge to chill for 30 minutes.
  • For the filling: Preheat the oven to 350 degrees F.
  • Brown the butter in a medium skillet over medium-high heat, cooking until it is light brown in color and smells nutty. Transfer the browned butter to the bowl of a stand mixer fitted with a paddle attachment. Add the granulated sugar and vanilla extract. Turn on the mixer and gradually add the flour. Add 3 eggs, one at a time. Scrape down the sides and mix to combine.
  • Remove the dough from the fridge. Fill the tarts evenly with the filling and top with the grapes. Make an egg wash by beating the remaining egg in a bowl with a bit of water and brush the crusts. Sprinkle with the turbinado sugar. Transfer to the oven and bake for 20 minutes.
  • To finish: Add the vin santo and lemon juice to a medium saute pan. Turn on the heat to medium-low and reduce until thick and caramel-like, 5 to 6 minutes. Carefully add the heavy cream and swirl the pan to incorporate. Allow the mixture to come back to a boil, then lower the heat add the butter one pat at a time.
  • Spoon the mascarpone into quenelles (little oblong dollops) and place on a sheet tray lined with parchment. Place in the fridge to chill for 10 to 15 minutes.
  • To plate: Spoon a bit of vin santo caramel on the bottom of a plate and dot with the vin cotto. Place the crostata down and top with a mascarpone quenelle. Garnish with thyme leaves and powdered sugar. Repeat to make 5 more servings.
