2 teaspoons plus 1 cup butter, divided
1-1/4 cups sugar
1-1/4 cups packed brown sugar
1 cup dark corn syrup
2 cups heavy whipping cream, divided
2 pounds chopped pecans
1 teaspoon vanilla extract

Steps:

  • Line a 13-in. x 9-in. pan with foil; grease the foil with 2 teaspoons butter and set aside., In a large heavy saucepan, combine the sugars, corn syrup, 1 cup cream and the remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Slowly stir in the remaining cream. Cook, without stirring, until a candy thermometer reads 245° (firm-ball stage)., Remove from the heat; stir in pecans and vanilla. Pour into prepared pan (do not scrape saucepan). Let stand until firm. Using foil, lift candy out of pan. Discard foil; cut candy into 1-in. squares. Wrap individually in waxed paper; twist ends.

1 (14 ounce) package individually wrapped caramels, unwrapped
3 tablespoons butter
2 tablespoons water
2 cups chopped pecans
1 pound dark chocolate, broken into small pieces

Steps:

  • Place caramels, butter, and water in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, until smooth, about 3 minutes. Stir in pecans.
  • Drop caramel pecan mixture by spoonfuls onto parchment paper. Place in freezer for 15 to 20 minutes.
  • Place chocolate in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until melted and smooth, 1 to 2 minutes. Dip each caramel cluster into chocolate using a fondue fork until coated; place on parchment paper to dry. Chill until firm, if necessary.

1/2 cup light brown sugar
2 tablespoons water
2 cups halved pecans

Steps:

  • In a nonstick skillet over medium high heat, melt together brown sugar and water until rapidly bubbling. Add pecans, stirring thoroughly to coat. Cook, stirring, for 3-4 minutes, until fragrant and most of the liquid has evaporated. (But not so long at the sugars burn.)
  • Spread pecans into a single layer onto a parchment-lined baking sheet, and use a fork to separate them. Let stand at room temperature for about an hour, until fully cooled, set, and dry. (Pecans will be only very slightly tacky to the touch.)
  • Break apart any pecan clusters and store in an airtight container at room temperature for up to a week, in the refrigerator for a couple of weeks, or in the freezer for up to 2 months.

8 medium apples, washed and well dried
1 1/2 sticks (12 tablespoons) unsalted butter
2 cups packed dark brown sugar
One 14-ounce can sweetened condensed milk
1/2 cup light corn syrup
1/4 cup honey
1/2 teaspoon ground cinnamon
Pinch salt
Suggested toppings: chopped nuts, crushed pretzels, sprinkles, mini chocolate chips, mini candy-coated chocolates, toasted coconut flakes

Steps:

  • Line a baking sheet with a silicone baking mat or wax paper. Place the ice pop sticks into the stem ends of the apples and place on the prepared baking sheet.
  • In a heavy medium pot over medium heat, melt the butter and then stir in the brown sugar until completely combined. Whisk in the sweetened condensed milk, corn syrup, honey, cinnamon and salt until smooth.
  • Bring the mixture to a simmer and cook, stirring occasionally with a rubber spatula, until the temperature registers 238 degrees F on a candy thermometer. Remove from the heat and let the caramel cool for about 2 minutes.
  • Holding an ice pop stick, carefully dip an apple in the caramel up to the stem, then roll in the desired toppings and place on the prepared baking sheet. Repeat with the remaining apples. Chill the apples until the caramel and toppings are set, at least 1 hour and up to overnight.

My favorite part of the caramel roll is the pecans on top so I created this recipe by combining a couple of different recipes to curb my craving. I'm not a huge fan of sweet rolls so this gives me what I want without wasting the rolls. I will often half this because it gives me plenty since they are addicting!

3 cups pecan halves
1/2 cup butter or 1/2 cup margarine
1 1/2 cups packed light brown sugar
4 tablespoons corn syrup

Steps:

  • Preheat oven to 250°F.
  • Pour pecan halves into greased 9x13" pan and place into oven for 5 minutes.
  • Melt butter in medium saucepan over medium heat.
  • Stir in brown sugar and corn syrup and cook until sugar is dissolved (this takes at least 3-4 minutes).
  • Remove pecans from oven and pour into saucepan/caramel mixture.
  • Stir to coat and pour back into 9x13" pan.
  • Place back into oven for 45-60 minutes stirring every 15 minutes or so.
  • Remove pan and spread pecans onto parchment paper or silpat (I've used wax paper but it sticks at times-if it does put in fridge and remove when cold).
  • Separate pecans as they cool (2 forks work well).
  • I often HALF this because I can't keep out of them!

24 pecan halves
3 cups sugar
3/4 cup water
1 teaspoon cream of tartar

Steps:

  • Gently insert an 8-inch wooden skewer into each pecan. Set aside.
  • Prepare an ice bath, and set aside. Combine the sugar, water, and cream of tartar in a medium saucepan, and bring to a boil over medium-high heat. Wash down the sides of the pan with a pastry brush dipped in water to prevent sugar crystals from forming. Cook, without stirring, until the mixture begins to brown. Gently swirl the pan to color evenly. Remove from heat when caramel is a rich amber color, and place pan in ice bath for 5 seconds to stop the cooking.
  • Allow caramel to sit, until slightly thickened, for about 15 minutes. (To test: Dip a wooden spoon into the caramel, and lift it several inches over the pan; if a drip slowly forms and then hardens, the caramel is ready.) When caramel is ready, dip pecans, lifting up and swirling slightly to fully coat. Hold skewer over the pan to allow the drip to lengthen and slightly harden, about 1 minute. If necessary, use a pair of scissors to cut the drip from the caramel remaining in the pan. Place skewers on an inverted baking sheet lined with waxed paper, and allow the caramel to completely harden, about 5 minutes. If desired, stand skewers upright in flower foam or a heavy container until ready to serve. Gently remove skewers before serving.

CARAMEL PECAN DIAMONDS

2 cups flour
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1 stick cold, unsalted butter
2 large eggs
2/3 cup light corn syrup
1 1/4 cups light brown sugar
1/2 stick unsalted butter
1/2 cup heavy cream
2 teaspoons vanilla extract
1 tablespoon dark rum
4 cups chopped pecans

Steps:

  • For the dough, combine the dry ingredients in a mixing bowl and stir well to mix. Cut the butter into 8 to 10 pieces and add to the dry ingredients. Rub the butter in finely; be careful that the mixture remains cool and powdery. Beat the eggs lightly and stir them into the dough with a fork. Continue stirring until the dough masses together. Remove the dough to a floured surface and knead lightly, until the dough is smooth. Form the dough into a rectangle about 1-inch thick and wrap in plastic. Chill the dough until it is firm, about 1 hour.
  • Butter a 10 x 15-inch jelly roll pan. Roll the dough to a rectangle about 12 x 17 inches. Roll the dough onto the rolling pin, then unroll it into the pan. Press the dough well into the bottom and sides of the pan and fold the excess dough into the pan. Make a high fluted edge around the edge of the pan. Chill the dough-lined pan while preparing the filling.
  • Preheat the oven to 350 degrees F. Combine the corn syrup and sugar in a saucepan and mix well. Place on medium heat and stir occasionally, until the syrup comes to a boil. At the boil, add the butter and cream and return to a boil. Simmer the mixture for 3 minutes, stirring occasionally. Remove from heat and stir in the vanilla and rum.
  • Place the chopped pecans in a heatproof mixing bowl. Pour the cooked syrup over the pecans and stir well to mix. Pour the filling on the dough in the pan and spread it evenly with a metal spatula.
  • Bake the pastry on the lowest rack of the oven for about 30 minutes. Turn the pan occasionally to make sure that the dough and the filling bake evenly. Remove the pan from the oven and cool it on a rack to room temperature. Wrap the pan in plastic wrap and chill overnight.
  • To unmold the pastry, run a small, sharp knife between the crust and the sides of the pan. Place the pan on low heat for a few seconds to loosen the pastry. Place a cookie sheet on the top and invert. Remove the pan in which the pastry baked and replace it with a cutting board. Invert, remove the cookie sheet and trim away the edges of the pastry.
  • Cut the pastry into 1 1/2- inch diamonds.

2 dozen pieces assorted fresh fruit, such as figs, kumquats, clementine segments, or grapes, washed and dried
Caramel Coating

Steps:

  • Place several pieces of newspaper or parchment paper on the floor under the working area - the edge of a counter or tabletop works well - to catch any excess caramel as it drips off the fruit. Have ready 24 two-inch pieces of masking tape and 24 six-inch wooden skewers.
  • Insert each skewer perpendicularly into the bottoms of the fruit without going through the other side. Set the fruit aside.
  • Dip the fruit into the caramel coating, and coat completely. Place the skewers on the edge of the counter or tabletop with the fruit stems pointed toward the floor. Using the masking tape, secure skewers. If coating segmented fruit, rest sections on an oiled wire rack set over a baking sheet. Let caramel drip onto the floor, forming tails; let the caramel set completely.
  • Using scissors, cut the tails to the desired lengths; let cool completely. Just before serving, remove the skewers.

1 1-pound box dark brown sugar
16 tablespoons unsalted butter, room temperature
1 14-ounce can sweetened condensed milk
2/3 cup dark corn syrup
1/3 cup pure maple syrup
1 1/2 teaspoons vanilla extract
1 teaspoon robust-flavored (dark) molasses
1/4 teaspoon salt
12 chopsticks
12 medium Granny Smith apples
Assorted decorations (such as chopped nuts, dried apricots and dried cranberries, toffee bits, mini M&M's and candy sprinkles)
Melted dark, milk and/or white chocolates
Whipping cream (if necessary)

Steps:

  • Combine first 8 ingredients in heavy 2 1/2-quart saucepan (about 3 inches deep). Stir with wooden spatula or spoon over medium-low heat until sugar dissolves (no crystals are felt when caramel is rubbed between fingers), occasionally brushing down sides of pan with wet pastry brush, about 15 minutes.
  • Attach clip-on candy thermometer to side of pan. Increase heat to medium-high; cook caramel at rolling boil until thermometer registers 236°F, stirring constantly but slowly with clean wooden spatula and occasionally brushing down sides of pan with wet pastry brush, about 12 minutes. Pour caramel into metal bowl (do not scrape pan). Submerge thermometer bulb in caramel; cool, without stirring, to 200°F, about 20 minutes.
  • While caramel cools, line 2 baking sheets with foil; butter foil. Push 1 chopstick into stem end of each apple. Set up decorations and melted chocolates.
  • Holding chopstick, dip 1 apple into 200°F caramel, submerging all but very top of apple. Lift apple out, allowing excess caramel to drip back into bowl. Turn apple caramel side up and hold for several seconds to help set caramel around apple. Place coated apple on prepared foil. Repeat with remaining apples and caramel, spacing apples apart (caramel will pool on foil). If caramel becomes too thick to dip into, add 1 to 2 tablespoons whipping cream and briefly whisk caramel in bowl over low heat to thin.
  • Chill apples on sheets until caramel is partially set, about 15 minutes. Lift 1 apple from foil. Using hand, press pooled caramel around apple; return to foil. Repeat with remaining apples.
  • Firmly press decorations into caramel; return each apple to foil. Or dip caramel-coated apples into melted chocolate, allowing excess to drip off, then roll in nuts or candy. Or drizzle melted chocolate over caramel-coated apples and sprinkle with decorations. Chill until decorations are set, about 1 hour. Cover; chill up to 1 week.

1 1/4 cups flour
2 tablespoons cocoa
1/3 cup sugar
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled,cut into pieces
3 large egg yolks
1/2 teaspoon vanilla extract
1 cup chopped pecans
1 cup sugar
1/4 teaspoon salt
1/4 cup water
1 1/2 cups heavy cream
2 tablespoons unsalted butter, room temp
1 teaspoon vanilla extract
6 ounces bittersweet chocolate, finely chopped
cocoa, for dusting
24 pecan halves
3 cups sugar
3/4 cup water
1 teaspoon cream of tartar

Steps:

  • For the Chocolate Pate Sucree-----------.
  • Place the flour, cocoa, sugar and salt in the bowl of a food processor, pulse several times to combine Add the butter and pulse until the mixture resembles coarse meal, about 10 seconds Add the egg yolks and vanilla and process just until the mixture begins to hold together, no more than 30 seconds Turn dough out onto a lightly floured surface and form a disk.
  • Cover in plastic wrap, refrigerate for 30 minutes or until ready to use.
  • For the Tart----------------.
  • Preheat the oven to 350F degrees.
  • Roll the chocolate pate sucree to 1/8" thick and fit into a 9" fluted tart pan with a removable bottom Dock the bottom of the tart with a fork.
  • Refrigerate the shell for 30 minutes.
  • Place chopped pecans on a baking sheet and toast until slightly darkened and fragrant, about 10 minutes, set aside.
  • Line tart shell with parchment paper, pressing into edges and cover with dried beans or pastry weights.
  • Place on a baking sheet, bake for 20 minutes.
  • Remove paper and beans, continue baking until crust is golden, about 10 minutes.
  • Transfer to a wire rack and cool completely.
  • Make the caramel by placing the sugar, salt and water in a small saucepan.
  • Bring the mixture to a boil over medium high heat.
  • Wash down the sides of the pan with a wet pastry brush to prevent crystals from forming.
  • Cook, gently swirling (do not stir) until the caramel is a rich amber color.
  • Remove from heat and add 1/2 c of cream, butter and vanilla.
  • Stir until smooth.
  • Pour mixture into chocolate tart shell.
  • Sprinkle with toasted pecans and place in the refrigerator while melting the chocolate.
  • Place chocolate in a medium heat-proof bowl.
  • Bring remaining cup of cream to a boil in a small saucepan.
  • Pour over the chocolate, let sit for 5 minutes.
  • Stir until completely smooth.
  • Pour over caramel and pecans.
  • Return tart to refrigerator and chill for at least 1 hour.
  • To serve, dust the op with cocoa powder and garnish with Caramel-Dipped Pecans For Caramel-Dipped Pecans-----------------.
