1/2 cup salted butter (no substitutions)
1/4 teaspoon salt
1 cup brown sugar (well packed)
2/3 cup heavy whipping cream, unwhipped (35% cream, no less! can use a little more cream)
2 -4 teaspoons vanilla extract (optional)

Steps:

  • In a small saucepan melt butter with salt.
  • Add the brown sugar; whisk until combined and thickened (about 2 minutes).
  • Whisk in the whipping cream, until thoroughly blended (2 more minutes).
  • Mix in vanilla (if using) until combined.
  • NOTE; this sauce will thicken up more when refrigerated.

1 tablespoon cornstarch
1/3 cup half-and-half cream
2 tablespoons water
2 tablespoons light corn syrup

1/2 teaspoon vanilla extract
Ice cream

Steps:

  • In a small saucepan, combine brown sugar and cornstarch. Stir in the cream, water and corn syrup until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Stir in butter and vanilla until butter is melted. Serve warm or cold over ice cream. Refrigerate leftovers.

3/4 cup sweetened condensed milk
2 tablespoons instant espresso powder
1 1/2 cups plus 1 tablespoon heavy cream
Pinch of salt
1/3 cup jarred dulce de leche, plus more for topping
1/3 cup toffee bits

Steps:

  • Whisk the condensed milk, espresso powder, 1 tablespoon heavy cream and the salt in a large bowl until smooth. (The espresso powder may look speckled.)
  • Beat the remaining 1 1/2 cups heavy cream in a separate large bowl with a mixer on medium-high speed until stiff peaks form, 1 to 2 minutes. Fold about half of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold in the remaining whipped cream until no white streaks remain.
  • Dot the mixture with the dulce de leche and sprinkle with all but a few teaspoons of the toffee bits; drag a rubber spatula through the mixture to lightly swirl.
  • Spoon the mixture into a freezer-safe 9-by-5-inch loaf pan or 2-quart baking dish. Dot with more dulce de leche and sprinkle with the remaining toffee bits; drag a rubber spatula through the top to lightly swirl. Cover with plastic wrap and freeze until firm and scoopable, at least 6 hours or overnight.

Our whole family has a sweet tooth, so this caramel-drizzled mix of popcorn, almonds and cereal goes quickly. My "off-limits" batches are divided into plastic bags, tied with ribbon and shared with all the snackers on my Christmas list.

9 cups popped popcorn
9 cups Crispix cereal
1 cup slivered almonds
1 cup butter, cubed
1/2 cup light corn syrup
2 cups packed brown sugar
1/2 teaspoon baking soda

Steps:

  • In a very large heat-proof bowl, combine the popcorn, cereal and almonds; set aside. In a large heavy-duty saucepan, melt butter; stir in corn syrup and brown sugar. Cook and stir over medium heat until mixture comes to a boil. Reduce heat to medium-low. Cook 5 minutes longer, stirring occasionally. , Remove from the heat. Stir in baking soda. (Mixture will foam up and get lighter in color.) Carefully pour over popcorn mixture; stir to coat evenly., Transfer to two 15x10x1-in. baking pans coated with cooking spray. Bake at 250° for 45 minutes, stirring every 15 minutes. Spread on waxed paper to cool. Store in airtight containers.

1 cup quick-cooking oats
1 cup chopped pecans
1 cup packed brown sugar
1 cup butter, melted
1-1/2 cups caramel ice cream topping
2 quarts vanilla ice cream, softened

Steps:

  • In a large bowl, combine the flour, oats, pecans and brown sugar. Add butter; mix well. Spread in a thin layer in a 15x10x1-in. baking pan. Bake at 400° for 15 minutes or until golden, stirring occasionally. Crumble while warm; cool., Press half of crumb mixture into a 13x9-in. dish. Drizzle with half of caramel sauce; spread with ice cream. Top with remaining caramel sauce and crumb mixture. Cover and freeze until firm. Remove from the freezer 10 minutes before serving.

3/4 cup quick-cooking oats
1 cup chopped pecans
1/4 cup all-purpose flour
1/4 cup firmly packed brown sugar
1/4 cup butter, melted
2 cups firmly packed brown sugar
3 cups milk
1 (12 ounce) can evaporated milk
1/2 teaspoon salt
4 egg yolks
4 cups whipping cream
1 (14 ounce) can sweetened condensed milk
2 tablespoons vanilla extract
1 (20 ounce) bottle caramel topping

Steps:

  • Preheat oven to 350°F.
  • Stir together first 5 ingredients; spread in a thin layer on a baking sheet.
  • Bake for 15 minutes.
  • Cool completely on a wire rack.
  • Process in a food processor until finely chopped; set aside.
  • Stir together 2 cups brown sugar and next 3 ingredients in a large saucepan over low heat.
  • Simmer, stirring often for 1 minute (do not boil).
  • Beat egg yolks until thick and lemon-colored.
  • Gradually stir 1 cup hot brown sugar mixture into yolks.
  • Add egg yolk mixture to remaining hot mixture; cook, stirring constantly, over low heat 2 minutes or until mixture begins to thicken.
  • Remove pan from heat; stir in cream, condensed milk, and vanilla.
  • Let cool to room temperature.
  • Pour mixture into freezer container of a 6-quart hand-turned or electric freezer and freeze accordint to manufacturer-s instructions for 5 to 7 minutes or until partially frozen.
  • Layer top of ice cream evenly with oat mixture and caramel topping.
  • Freeze again for 10 to 15 minutes longer until mixture is frozen.
  • Eat now if you like, or if you like it firmer, put mixture in freezer-safe container and freeze 8 hours or overnight.

Steps:

  • Make the caramel crunch: Line a rimmed baking sheet with a nonstick baking mat; set aside. In a small saucepan, combine sugar and 1 1/2 tablespoons water; mixture should look like wet sand. Place saucepan over medium-high heat and cook until sugar is dark amber in color. Immediately pour caramel onto prepared baking sheet; let cool completely.
  • Crack cooled caramel into large pieces and place in a resealable plastic bag. Crush into tiny pieces using a rolling pin; you should have a scant 1/2 cup of caramel crunch.

This luxurious ice cream is the ideal balance of sweet yet salty and rich yet light. It's custard-based, which means you have to separate a lot of eggs (six), but the thick and silky results are worth a little bit of fuss. For something a little lighter, use more milk and less cream, as long as the dairy adds up to three cups. You can also cut down on egg yolks for a thinner base, but don't go below three. Despite the rumors, making caramel is not hard, but it can be a little tricky. If this is your first time, make sure you have enough sugar for a second batch in the event your first is a bust. Also, remove the cooking caramel from the heat just before you think you need to to prevent burning.

1 ¼ cups granulated sugar
2 cups heavy cream
1 cup whole milk
1/8 teaspoon fine sea salt
6 large egg yolks
1/4 teaspoon flaky sea salt (such as Maldon)

Steps:

  • In a medium pot over medium heat, melt 3/4 cup sugar with 3 tablespoons water, swirling skillet frequently, until sugar turns mahogany brown in color (it should be almost but not quite black).
  • Add heavy cream, milk, remaining 1/2 cup sugar and the salt; simmer mixture until caramel melts and cream mixture is completely smooth. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.
  • Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
  • Churn in an ice cream machine according to manufacturer's instructions. Sprinkle flaky sea salt into base during the last 2 minutes of churning. Serve directly from the machine for soft serve, or store in freezer until needed.
