- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Beat in bananas and vanilla. Combine the flour, baking soda and salt; add to creamed mixture just until moistened. , Fill paper-lined jumbo muffin cups three-fourths full. Bake at 350° until a toothpick inserted in the center comes out clean, 23-28 minutes. Cool for 5 minutes before removing from pan to a wire rack to cool completely. , For icing, in a small saucepan, melt butter over medium heat. Stir in brown sugar and milk; bring to a boil. Cool slightly. Beat in confectioners' sugar until smooth. Transfer to a small resealable plastic bag; cut a small hole in a corner of bag and drizzle over muffins.

Steps:
- Preheat oven to 350F (180C).
- To prepare the bread, combine egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together. Add the bananas and mash together.
- Add flour, baking powder, baking soda and mix lightly to combine. Set aside.
- To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.
- To assemble the muffins, spoon a layer of bread batter into a greased muffin tin. Then spoon a layer of cream cheese filling, then top off with another layer of bread batter.
- Bake for 20-25 minutes. Baking times may vary. Muffins are done when a tooth pick inserted in the center comes out clean.
- Allow muffins to cool for 15 mins.

- Preheat oven to 375. Grease muffin tins (12 holer).
- Mix small bowl ingredients; set aside.
- Mix cream cheese, butter & sugar until well-blended; add egg, beat, then banana & vanilla until well combined; set aside.
- Combine dry ingredients; add to cream-cheese mixture until JUST combined.
- Stir in 1/4-cup of filling ingredients; spoon HALF of batter into muffin tin cups (1 rounded tablespoon); drizzle 1/2 tsp caramel topping (from Other Stuff list) into each muffin cup; top with more batter.
- Finish with 2 slices of banana, a drizzle of melted butter and a sprinkle of the remaining pecan mixture.
- Bake for 18-20 minutes; cool for 5 minutes (well, try to wait that long!); remove from pan.
- Serve warm, drizzled with more caramel topping.

- Heat oven to 200C/180C fan/gas 6. Prepare a muffin tin by thoroughly buttering and lining with cases. In a bowl, mash three bananas, then stir in 50g yogurt. In another bowl, sift in the flours, baking powder, cardamom and a pinch of salt, and stir to combine.
- Add the eggs and sugar to the bowl of a stand mixer, then whisk until pale and frothy - about 3 mins. Slowly pour in the melted butter in a steady stream, then add the vanilla. Turn the speed down, then add the flour mixture, 2 tbsp at a time, alternating with the yogurt and banana mix, until everything is incorporated. Mix in the walnuts for no longer than 20 seconds. Divide the mixture between the muffin cases. Bake for 25-30 mins or until a skewer inserted comes out clean.
- Meanwhile, make the salted caramel by heating the butter, cream and sugar in a non-stick pan until simmering. Remove from the heat, then add the salt - you want enough to pique the sauce, but it shouldn't taste salty.
- Once the muffins are cooked, remove from the oven and leave to cool on a wire rack. Whip the cream to soft peaks, fold through 2 tbsp yogurt and slice the final banana. Spoon or pipe the cream onto the muffins. Top with the sliced banana and drizzle with salted caramel.

- Preheat oven to 375 degrees. Grease a 12-cup standard muffin pan.
- In a small bowl, beat together cream cheese, sugar, and egg. Put bowl in refrigerator while you make the muffin batter.
- In a large bowl, whisk together flour, baking powder and soda, salt, and sugar; set aside.
- In a medium bowl, whisk together bananas, buttermilk, oil, eggs, and vanilla.
- Pour wet ingredients into the large bowl filled with flour mixture then stir with wooden spoon just until the mixture is combined.
- Spoon enough batter into muffins cups so that they are just under halfway full. Add one spoonful of cream cheese mixture into each cup, then top with remaining muffin batter. Muffin cups will end up being almost completely full.

- Combine 1 1/2 cups all-purpose flour, baking soda, baking powder and salt.
