Ok so yes again another yummy looking recipe from Captain Morgan's Facebook page. I know there are tons of other Sweet Potato Marshmallow Casseroles really the only difference is adding Rum. Oh and maybe Orange Juice.

10 sweet potatoes (Baked)
1 cup brown sugar
1 teaspoon cinnamon
1 teaspoon clove
1 dash nutmeg
1 dash allspice
1/4 cup spiced rum
1/2 cup orange juice
16 ounces mini marshmallows

Steps:

  • Bake Sweet potatoes on 375 for 25-30 min or till tender.
  • Remove pulp with a large spoon & place in a large bowl. Stir potatoes, brown sugar, butter, cinnamon, clove, nutmeg, allspice, orange juice & Spiced Rum.
  • Salt & pepper to taste.
  • Butter casserole pan & layer potato mixture, then marshmallows. as many layers as you can. Finish off with remaining marshmallows.
  • Sprinkle brown sugar on top.
  • Bake at 350 for 20-30 minutes or till golden brown.

5 sweet potatoes, sliced
¼ cup reduced fat margarine
½ cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  • Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  • Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

  • Add sweet potato pieces to large stockpot or dutch oven and cover with water. Add a pinch of salt and bring to a boil. Once boiling, reduce heat and cook at a high simmer for 12-15 minutes, until extremely fork tender. Drain in a colander, shake gently to remove excess liquid, then transfer cooked potatoes back to the pot you boiled them in. Let them sit for a few minutes, and this will help remove any excess liquid in the potatoes.
  • To a food processor, add pecans and vanilla extract, pulsing a few times, until pecans are evenly chopped. Add flour, brown sugar, cinnamon, nutmeg, cloves, and cold cubed butter. Pulse several times, until crumble mixture looks like it has pea-sized crumbs.
  • Remove baked casserole from oven and spread mini marshmallows over the top in a single even layer. Bake for 5-10 minutes, then if desired, broil to toast the marshmallows. Broil only for a minute or two, they'll burn quickly!
