1 tbsp olive oil
1 garlic clove (, finely chopped)
1 small onion (, finely chopped)
800 g / 28 oz crushed tomato
1 cup water ((swirl in tomato can to clean out))
3/4 tsp salt (+ pepper to taste)
Handful basil leaves (, torn, or 1 tsp dried herbs (e.g. Italian mix, oregano, thyme, basil))
250 g / 8 oz frozen chopped spinach (, thawed (Note 1))
500 g / 1 lb ricotta (, full fat please (Note 2))
1/3 cup grated parmesan
1 cup shredded cheese ((Mozzarella, Colby, Cheddar, Tasty, Gruyere, Swiss))
1 egg
1 large garlic clove (, minced)
Grated fresh nutmeg (just a sprinkling) or 1/8 tsp nutmeg powder (optional)
1/2 tsp salt and pepper (, each)
18 - 22 dried cannelloni tubes ((Note 3))
1 - 1 1/2 cups shredded Mozzarella
More basil (, for garnish (optional))

Steps:

  • Heat oil in a large skillet over medium high heat. Add garlic and onion, cook for 2 - 3 minutes until translucent. Add tomato, water, salt and pepper.
  • Stir, reduce heat to medium, simmer for 5 minutes. Optional: add 1/2 cup water and blend sauce until smooth (I do this for guests!).
  • Stir through basil or dried herbs. Set aside.
  • Place spinach in a colander and press out most of the liquid (don't need to thoroughly squeeze dry).
  • Place Spinach in bowl with remaining Filling ingredients. Mix, taste, adjust salt and pepper to taste (different cheeses have different saltiness).
  • Preheat oven to 180C/350F.
  • Choose a baking pan which will comfortably fit about 20 cannelloni - mine is 21 x 26 cm / 8.5 x 10.5".
  • Spread a bit of Sauce on the base.
  • Transfer Filling to a piping bag with a large nozzle (that fits in the tubes), or use a strong ziplock bag. Or do this step using a knife (it's a bit tedious though!).
  • Pipe the filling into the tubes. Place in baking dish.
  • Pour over remaining Sauce, covering all the tubes. Cover with foil, then bake for 25 minutes.
  • Remove foil, scatter over cheese. Return to oven for 10 minutes until cheese is melted.
  • Serve, garnished with extra basil if desired.

It will seem like there's a lot of sauce (and there is) and that it's too thin (and it is!) BUT you need it because the cannelloni sucks up a lot when it's cooking!!! Serves 4 very hungry people, 5 normal people.

1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
1 carrot (, small, finely chopped (optional))
1 celery rib (, finely chopped (optional))
800g / 28oz crushed tomato (, canned)
2 cups (500ml) chicken stock / broth (, low sodium (or vegetable))
1/2 tsp EACH thyme, oregano, salt, pepper
1/4 tsp chilli flakes (, optional)
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
500g / 1lb beef mince (, lean)
250g / 8oz frozen spinach, chopped (, thawed, excess liquid squeezed out (Note 1))
1 beef bouillon cube (, crumbled (Note 2))
1/2 tsp pepper
1 tsp Worcestershire Sauce
21 - 24 cannelloni tubes (220g/7oz) (OR 10 Manicotti tubes (Note 3))
2 cups mozzarella cheese (, freshly grated (or other melting cheese))
Chopped parsley (, garnish (optional))

Steps:

  • Heat oil in a large saucepan or pot over medium high heat. Add garlic and onion, cook 2 minutes. Add carrot and celery, cook 5 minutes.
  • Add remaining Sauce ingredients then stir. Bring to simmer, lower heat to medium, cover with lid and simmer for 10 minutes.
  • Use a stick blender to blitz until smooth (or cool slightly and use blender or food processor). Set aside.
  • Heat oil in a large skillet over high heat. Add onion and garlic, cook 2 minutes.
  • Add beef and cook, breaking it up as you go, until it all changes from red to brown.
  • Stir in spinach, then add crumbled beef cube, Worcestershire sauce, pepper and 1 cup of Cannelloni Sauce. Stir, cook 2 minutes.
  • Remove and cool slightly.
  • Preheat oven to 180°C/350°F.
  • Transfer Beef Filling into a piping bag with a wide nozzle. Stand cannelloni tubes upright in a container, then pipe filling in. (Or do this step with teaspoon/finger/dinner knife!).
  • Spread about 1 1/4 cups Sauce in a 23x33cm / 9x13" dish. Lay the cannelloni on top, then pour over remaining Sauce.
  • Sprinkle with cheese, loosely cover with foil.
  • Bake 25 minutes, remove foil then bake a further 10 minutes until the cheese is bubbly with some golden spots.
  • Remove from oven, sprinkle with parsley if using then serve!

1 onion, chopped
1 garlic clove, crushed
500 g (1 lb 2 oz) minced (ground) beef
250 g (9 oz) frozen spinach, thawed
3 tablespoons tomato paste (concentrated purée)
125 g (4½ oz/½ cup) ricotta cheese
1 egg
½ teaspoon ground oregano
250 ml (9 fl oz/1 cup) milk
1 parsley sprig
5 peppercorns
30 g (1 oz) salted butter
1 tablespoon plain (all-purpose) flour
125 ml (4 fl oz/½ cup) pouring (whipping) cream
425 g (15 oz) tin tomato passata (puréed tomato)
2 tablespoons chopped basil
1 garlic clove, crushed
½ teaspoon sugar
12-15 instant cannelloni tubes
150 g (5½ oz/1 cup) grated mozzarella cheese
60 g (2¼ oz/½ cup) grated parmesan cheese

Steps:

  • 1. Preheat the oven to 180°C (350°F/Gas 4). To make the filling, heat the oil in a frying pan. Add the onion and garlic; stir over low heat until onion is tender. Add the beef and brown well. Add spinach and tomato paste. Cook, stirring, for 1 minute. Remove from the heat. Mix the ricotta, egg and oregano. Stir into the beef mixture. 2. To make the béchamel sauce, put the milk, parsley and peppercorns in a small saucepan. Bring to the boil. Remove from heat and cool for 10 minutes. Strain, discarding the flavourings. Melt the butter in a small saucepan and stir in the flour. Cook, stirring, for 1 minute. Remove from the heat. Gradually stir in the strained milk until smooth. Return to the heat and stir constantly over medium heat until the sauce boils and thickens. Reduce heat and simmer for 3 minutes. Add cream and season. 3. To make the tomato sauce, put all the ingredients in a pan and bring to the boil. Reduce the heat and simmer for 5 minutes. Pipe the filling into cannelloni tubes. Spoon a little of the tomato sauce in the base of a large ovenproof dish. Arrange the cannelloni on top. Pour béchamel sauce over the cannelloni, followed by the remaining tomato sauce. Sprinkle the cheeses over the top. Bake for 30-35 minutes, or until golden.

1 tablespoon extra-virgin olive oil
1 medium yellow onion, diced
8 ounces sweet Italian sausage, casings removed or bulk sausage meat
1 (10-ounce) box frozen chopped spinach, thawed and squeezed dry
1 (15-ounce) container ricotta cheese
1 1/2 cups plus 1/2 cup freshly grated Parmesan cheese
3 large eggs
Salt and freshly ground black pepper
Fresh Pasta Dough, rolled out and cut into 6 by-7-inch rectangles, recipe follows
4 cups Simple Tomato Sauce, recipe follows
Fresh basil, for garnish
2 cups flour
3 eggs
1/2 teaspoon salt
1/2 teaspoon extra-virgin olive oil
1/4 cup extra-virgin olive oil
1 medium yellow onion, diced
3 garlic cloves, peeled and sliced
3 tablespoons chopped fresh basil or 1 tablespoon dried basil
2 (28-ounce) cans diced tomatoes
Salt and freshly ground black pepper

Steps:

  • In a large skillet, heat the olive oil over medium-high heat and saute the onion until fragrant and translucent. Add the Italian sausage meat, breaking it up with the back of a wooden spoon and brown it until no longer pink, about 10 to 12 minutes. Drain the excess fat from the sausage meat, and set aside to cool. In a large mixing bowl stir together the drained and squeeze-dried spinach, ricotta, 1 1/2 cups Parmesan, eggs, cooled Italian sausage and onion mixture, salt, and freshly ground black pepper, to taste. Place the oven rack in the center of the oven and preheat the oven to 400 degrees F. In a large pot of salted boiling water, cook the fresh pasta rectangles for 1 minute and remove with a slotted spatula. Set aside. In a 9 by 13-inch baking dish, spread 2 cups tomato sauce. Working with 1 pasta rectangle at a time, spread 6 tablespoons filling along one edge and roll the pasta sheet up tightly, leaving the ends open. Repeat until you have 8 cannelloni. Arrange the prepared cannelloni, seam-side down, in a single layer in the baking dish. Spoon the remaining 2 cups tomato sauce evenly over the cannelloni. Sprinkle the remaining 1/2 cup grated Parmesan over top. Bake the cannelloni for 20 minutes and let it stand for 10 minutes before serving. Serve the cannelloni with extra tomato sauce from the baking dish and garnish with fresh basil.
  • To make fresh pasta dough: Mound the flour on a clean work surface. Hollow out the center making a well in the middle of the flour with steep sides. Break the eggs into the well. Add the salt, and olive oil to the hollow center and gently mix together with a fork. Gradually start incorporating the flour by pulling in the flour from the sides of the well. As you incorporate more of the flour, the dough will start to take shape. With your hands or a bench scraper continue working the dough until it comes together. If the dough is too dry, add a little water; if too wet or sticky, add a little flour. Begin kneading the dough and keep kneading until it becomes smooth and elastic, about 8 to 10 minutes. At this point, set the dough aside, cover it with plastic, and let it rest for 15 to 20 minutes. You can store the dough in the refrigerator for up to 24 hours, but allow it to return to room temperature before rolling it out. Divide the pasta dough into 4 even sections. Keep each section covered with plastic wrap or a clean towel while you work with each one. Flour the dough, the rollers of a pasta roller (or your rolling pin), your hands, and the work surface. If using a pasta machine: Flatten 1 of the of the dough pieces between your hands or with a floured rolling pin until it forms a thick oval disk. Dust the disk, the roller, and your hands with additional flour. Flour a baking sheet to hold the rolled out finished pasta. With the roller on the widest setting, pass the pasta through the machine's rollers a few times until it is smooth. Fold the dough over into 1/3, and continue to pass through a few more times until the pasta is smooth again. Begin adjusting the pasta machine settings to become thinner, passing the dough through a few times at each setting. If rolling the pasta by hand: Flatten a dough piece into a thick oval disk with your hands. Flour a baking sheet for the rolled out finished pasta. Place the oval dough disk on a floured work surface, and sprinkle with additional flour. Begin rolling out the dough with a floured rolling pin working from the center of the dough outwards, constantly moving the dough and lifting it to make sure it's not sticking.
  • To make Simple Tomato Sauce: In a large saucepan, heat the olive oil over medium heat. Add the onion, and garlic and cook until soft and golden brown. Add the basil and cook for an additional 3 to 5 minutes. Add the canned tomatoes with their juices and bring to a boil, stirring often. Lower the heat and simmer for 15 to 20 minutes, until the sauce has thickened. With a potato masher, break up the tomatoes to achieve a sauce-like consistency. Season with salt and freshly ground black pepper and serve. Cook's Note: Tomato sauce will last 1 week in the refrigerator and up to 6 months in the freezer.

1 large onion, finely chopped
2 garlic cloves, minced
1 sprig fresh thyme
1 bay leaf
1 lb ground beef
2/3 cup dry red wine
1 (28 ounce) can peeled whole tomatoes, coarsely crushed
salt and pepper
1 egg
1 bunch fresh spinach (or use frozen to save a step)
1 (15 ounce) container ricotta cheese
1/2 cup cheese, of your preference (I use shredded romano)
salt and pepper
2 tablespoons olive oil
1 shallot, finely chopped
2 garlic cloves, minced
1 cup fresh basil, chopped
1 bay leaf
1/2 cup dry white wine
1 1/2 lbs ripe tomatoes, coarsely chopped
salt and pepper
4 tablespoons butter
1/3 cup all-purpose flour
3 cups whole milk
nutmeg
salt and pepper
8 fresh lasagna sheets
1/3 cup parmesan cheese, freshly grated

Steps:

  • Make the beef ragu first, it's the longest step:.
  • Heat the oil over a medium heat. Add the onions and sauté for 2 minutes. Add the garlic, thyme and bay leaf and sauté for a further 5 minutes until the onions and garlic are soft but not browned.
  • Add the ground beef and sauté for 5 minutes until the beef is almost cooked through but still a bit pink. Stir in the red wine. Add the tomatoes with their juices and bring to a gentle simmer uncovered over medium to low heat, stirring occasionally, for 1 hour. Sauce should thicken. Remove bay leaf and thyme sprig and season to taste. Allow the ragu to cool before rolling it up in the lasagna sheets.
  • Next make the tomato sauce:.
  • Heat the oil over a medium heat. Add the shallots and garlic and sauté for 1 to 2 minutes or until tender. Add the thyme and bay leaf.
  • Add the white wine and tomatoes and bring to a simmer. Simmer uncovered over a medium to low heat, stirring occasionally, for 1 hour or until the tomatoes break down to form a chunky sauce (you may need to add a little water during the cooking process if the sauce thickens too much). Season the sauce to taste with salt and pepper.
  • To make the spinach filling:.
  • If you're using fresh spinach: rinse, drain, and do a quick blanch and squeeze out as much water as you can. If you're using frozen, just thaw and squeeze.
  • In a large bowl, whisk the egg. Add ricotta cheese, spinach, cheese of your choice and fold it all in until well combined. Season to taste with salt and pepper.
  • Stick in refrigerator for now.
  • To make the béchamel sauce:.
  • Melt the butter over medium to low heat. Add the flour and stir until thick. Slowly add the milk and stir constantly until the sauce is smooth. Bring the sauce to a simmer and cook for 5 minutes or until the sauce is smooth and thick. Season the sauce to taste with a little nutmeg, salt and pepper.
  • Now to assemble the cannelloni:.
  • Bring a large sauce pan of salt water to a boil. Working in batches, add the lasagna sheets and cook until the sheets soften slightly (time will depend on what type you use).
  • Transfer the lasagna sheets to a clean surface and let cool slightly.
  • Preheat the oven to 425°F
  • Spoon the tomato sauce over a 13x9" baking dish, covering the bottom. This is your base layer.
  • Lay one lasagna sheet on a work surface. Spoon about 1/2 cup of the beef ragu or spinach filling over one end of the lasagna sheet. Roll up the lasagna sheet and place the cannelloni seam side down over the tomato sauce. Repeat with the remaining lasagna sheets and filling, forming 8 cannelloni total.
  • Top with a thick layer of the béchamel sauce to coat the cannelloni completely. Top with parmesan cheese, creating a good layer of cheese over the sauce. Sprinkle some basil or thyme over the beef cannelloni to distinguish them from the spinach ones. Bake for 30 minutes or until the sauce bubbles and the cheese crusts/browns. Let the cannelloni stand for 10 minutes and serve.

Steps:

  • Preheat oven to 200°C/180°C fan/400°F/gas mark 6.
  • Add the olive oil to a large frying pan and gently fry the shallots and garlic until softened. Now add the mince and gently fry until browned, set aside to cool.
  • Place the spinach into a large bowl and cover with boiling water, drain and roughly chop, set aside.
  • In a large bowl add the ricotta, Parmesan and the cooled mince and spinach. Mix thoroughly and season to taste.
  • In a large deep baking tray drizzle some of the passata so that you lightly cover the base.
  • Take a sheet of pasta and place two heaped tablespoons at one end and roll to form a tube and place in the baking tray. Repeat the process until the baking tray is full and all the pasta sheets have been used.
  • Pour over the remaining passata and scatter with the basil leaves, drizzle over the cream and season with salt and pepper.
  • Finally drizzle over some extra virgin olive oil and place in the oven for 20 minutes. Cover with foil for the first 10 minutes and then remove for the final 10 minutes.
  • To serve, divide between the serving plates and top with shavings of parmesan, salad and pour yourself a glass of Italian red wine, enjoy!

3 tbsp olive oil
8 garlic cloves, crushed
3 tbsp caster sugar
2 tbsp red wine vinegar
4 x 400g cans chopped tomatoes
small bunch basil leaves
2 x 250g tubs mascarpone
3 tbsp milk
85g parmesan (or vegetarian alternative), grated
2 x 125g balls mozzarella, sliced
1kg spinach
100g parmesan (or vegetarian alternative), grated
3 x 250g tubs ricotta
large pinch grated nutmeg
400g dried cannelloni

Steps:

  • First make the tomato sauce. Heat the oil in a large pan and fry the garlic for 1 min. Add the sugar, vinegar, tomatoes and some seasoning and simmer for 20 mins, stirring occasionally, until thick. Add the basil and divide the sauce between 2 or more shallow ovenproof dishes (see Tips for freezing, below). Set aside. Make a sauce by beating the mascarpone with the milk until smooth, season, then set aside.
  • Put the spinach in a large colander and pour over a kettle of boiling water to wilt it (you may need to do this in batches). When cool enough to handle squeeze out the excess water. Roughly chop the spinach and mix in a large bowl with 100g Parmesan and ricotta. Season well with salt, pepper and the nutmeg.
  • Heat oven to 200C/180C fan/gas 6. Using a piping bag or plastic food bag with the corner snipped off, squeeze the filling into the cannelloni tubes. Lay the tubes, side by side, on top of the tomato sauce and spoon over the mascarpone sauce. Top with Parmesan and mozzarella. You can now freeze the cannelloni, uncooked, or you can cook it first and then freeze. Bake for 30-35 mins until golden and bubbling. Remove from oven and let stand for 5 mins before serving.

  • Bring a large pot of lightly salted water to a boil.
  • In a pan with olive oil fry minced garlic cloves for 1-2 minutes.
  • Add fresh spinach, cook 4-5 minutes. Remove from heat and let cool. When cooled chop the spinach.
  • In a large bowl mix together ricotta, chopped spinach, parmesan cheese, lemon zest, salt, pepper and nutmeg.
  • When the water in the pot is boiling add the cannelloni. Cook for 6-7 minutes and transfer to cold water.
  • Heat oven to 180C/360f.
  • Transfer the filling into piping bag and fill all cannelloni tubes.
  • Pour 4-6 tbsp of tomato sauce into the base of large baking dish (~20*30cm/8*12in). Lay the tubes, side by side. On top pour the reminding tomato sauce. And cover all with grated mozzarella cheese.
  • Cover baking dish with foil and bake for 15 min, after 15 minutes remove the foil and bake 15 minutes more.

This is fool proof (even I can make it!) and very delicious! It's really easy but no one will believe them if you tell them that! It's really important to use fresh spinach as frozen gets chewy. Use baby spinach if you can and pack the rolls really close together to ensure they don't fall apart whilst cooking. The mushrooms add a meaty texture to the sauce.

500 g ricotta cheese
600 g Baby Spinach (fresh)
400 -500 g fresh pasta, sheets (lasagne sheets)
2 (14 ounce) cans chopped tomatoes (14 oz cans i think)

1 onion
8 large mushrooms
4 tablespoons basil
4 tablespoons parsley
8 garlic cloves, crushed
250 g mozzarella cheese

Steps:

  • Wash the spinach and blend in the processor to finely chop it.
  • Mix the processed spinach, ricotta, half the garlic and season with salt.
  • Cut each lasagne sheet in half (along the shorter side).
  • Put about 2 tablespoons of filling on the end of each half and roll up to form a roll. It should be really full - doesn't matter if bits of filling fall out and you make a mess.
  • Put each roll straight into a greased lasagne type baking tin. Pack them really close together so they don't open whilst cooking!
  • Blend mushrooms, parsley and basil, and mix with tomatoes and the rest of the garlic.
  • Pour this sauce over the cannelloni and sprinkle over the cheese.
  • Bake for about 35 minutes on gas mark 6 or until golden brown and bubby on top.
  • Enjoy!
