- Prepare mason jars, lids and rings; if you are unsure on how to do this, consult a preserving manual.
- In a heavy saucepan, begin to brown ground beef, then add onion and garlic; continue cooking until meat is browned.
- Drain off fat.
- In a mixing bowl, stir together the brown sugar and mustard, then add remaining ingredients to brown sugar mixture.
- Stir into beef and heat thoroughly.
- Now, carefully spoon this hot mixture into hot jars, leaving a one-inch headspace.
- Remove air bubbles with a (nonmetallic) spatula and wipe the rims of the jars clean of any food residue.
- Place lid on jar with sealing compound next to glass; screw band down evenly and firmly just until a point of resistance is met; this is called being fingertip-tight.
- Process for 75 minutes at 10 pounds pressure.
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

SALMON SLOPPY JOES
In search of another way to use canned salmon, I thought why not subsitute salmon for ground beef in sloppy joes. The result is interesting and worth a try at least once.

- In a large skillet, saute onion and bell pepper over medium heat until onion is soft.
- In a bowl, mix together ketchup, brown sugar, soy sauce, and cayenne pepper if using.

- Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; saute 3 minutes.
- Add meat to pan; cook 5 minutes or until browned, stirring to crumble.
- Stir in tomato paste; cook 2 minutes.
- Add chili powder, cumin, salt, and broth.
- Reduce heat, and simmer 12 minutes or until thickened, stirring occasionally.
- Stir in corn; cook for 2 minutes or until thoroughly heated.

The soup version of this favorite sandwich is less sloppy than the original, but every bit as delicious.

- Set a large soup pot over medium-high heat. Add vegetable oil and beef; cook, stirring occasionally, until meat is browned and cooked through, about 10 minutes.
- Remove meat from pot and set aside. Drain all but 2 tablespoons of grease from pot and discard.
- Add onion and green bell pepper; cook until softened, 8-10 minutes. Add garlic, thyme and cayenne pepper; cook just until fragrant, about 30 seconds.
- Add ketchup and cook, stirring, until it darkens in color, about 1 minute. Add tomato sauce, water, beef stock, Worcestershire sauce, apple cider vinegar and brown sugar.
- Sir well. Reduce heat to medium; add reserved ground beef. Simmer partially covered 15 minutes.
- Season to taste with salt and pepper. Serve with corn chips or toasted garlic bread.
