2 cups cornmeal
1/4 teaspoon salt
1/4 cup self rising flour
1 cup water
1/4 cup bacon drippings or 1/4 cup cooking oil
1/2 cup milk or 1/2 cup buttermilk
1 egg

Steps:

  • Gently stir together all ingredients in a mixing bowl.
  • Drop batter with a large spoon onto a hot, well greased griddle.
  • Cook as you would for pancakes, turning to brown both sides.
  • Serve with butter.

This hot water cornbread is shaped into cakes and fried in hot fat in a skillet. This old-fashioned cornbread is similar to hoecakes or corn pone.

1 tablespoon shortening
1 cup cornmeal
1 scant teaspoon salt
1 cup boiling water
3 tablespoons vegetable shortening (or oil; for frying)

Steps:

  • Gather the ingredients.
  • In a heavy iron skillet , melt 1 tablespoon of shortening.
  • Place the cornmeal and salt in a bowl.
  • Pour boiling water over the cornmeal and salt.
  • Add the melted shortening and stir well.
  • When the mixture is cool enough to handle, after about 5 minutes, divide it into four portions.
  • Shape each portion into a cornbread cake about 3/4-inch thick.
  • Heat about 3 tablespoons of vegetable shortening or oil in the skillet over medium heat.
  • Place corn cakes in the hot oil and fry until browned, turning to brown both sides every 2 minutes, about 8 to 12 minutes total.

Sweet, soft and rich. I was looking for a good use for a jar of cane syrup and came up with this -- the whole family loved it.

Number Of Ingredients 8

1/2 cup whole wheat flour
1/2 cup unbleached white flour
1 cup yellow cornmeal
1 teaspoon baking soda
2 eggs
1/2 cup canola oil
3/4 cup cane syrup
1 cup fat-free buttermilk

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl, mix the flours, the corn meal and the baking soda.
  • Make a well in the middle of the bowl, crack in the eggs and beat them a little with a fork.
  • Add the oil, cane syrup and buttermilk to the well and stir all wet ingredients together well with the fork.
  • Mix with the dry ingredients.
  • Pour into 9-inch round pan that has been sprayed with cooking oil.
  • Bake for 30 - 35 minutes.
  • Serve warm.

1 1/4 cups all-purpose flour
1 cup cornmeal
2 teaspoons baking powder
1 teaspoon salt
1 egg
3/4 cup nonfat milk
1/2 cup maple syrup
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, cornmeal, baking powder and salt.
  • In a small bowl, whisk together the egg, milk, syrup and butter; stir into dry ingredients just until moistened.
  • Pour into a greased 9 inch square baking pan. Bake at 400°F for 15-20 minutes.
  • Serve warm.
