Candy canes add festive flavor to this classic white chocolate fudge.

4 cups marshmallows (about 36)
2 cups sugar
1 cup heavy cream
4 tablespoons unsalted butter
Pinch of kosher salt
3 cups white chocolate chips (about 18 ounces)
1 teaspoon pure vanilla extract
3 candy canes, crushed (about 1/4 cup)

Steps:

  • Line a 9-by-13-inch pan with foil. Bring the marshmallows, sugar, cream, butter and salt to a simmer in a medium saucepan over medium heat, stirring constantly. Continue to stir until the marshmallows melt and the sugar dissolves. Remove the saucepan from the heat, add the white chocolate chips and vanilla, and stir until the chips are completely melted.
  • Pour the mixture into the prepared pan and scatter the candy canes over the top. Let cool to room temperature, then wrap and refrigerate until chilled and firm, about 2 hours. Using the foil, lift the fudge from the pan and put on a cutting board. Cut the fudge into 1-inch squares.

6 cups pancake mix, such as Krusteaz
1/2 cup unsweetened cocoa powder
1/4 cup sugar
1 teaspoon pure vanilla extract
Vegetable oil, for pan
1 1/2 cups bittersweet chocolate chips
Two 8-ounce packages cream cheese, room temperature
4 tablespoons butter, room temperature
1 cup powdered sugar
3/4 teaspoon peppermint extract
1/4 teaspoon salt
1/4 cup whole milk, room temperature
3 candy canes, crushed
Mini meringue cookies, for garnish, optional

Steps:

  • In a large bowl, combine the pancake mix, cocoa powder, sugar, vanilla and 4 cups water. Whisk until just combined -- a few small lumps left is just fine.
  • Heat a 10-inch skillet over medium heat. Add 1/2 teaspoon vegetable oil to the pan and swirl to coat evenly. Add about 2 cups of batter to the pan to make the first pancake. Cook for 6 minutes on the first side, adjusting the heat as needed to cook gently without burning. When small bubbles start to burst on the surface, sprinkle over a few chocolate chips and slide the pancake onto a flat plate. Place the pan over the plate and flip the pancake back into the pan. Cook for an additional 2 minutes, then remove the pancake to a wire cooling rack to cool completely. Continue with the remaining batter, going down by about 1/2 cup or 1/4 cup for each pancake. When the pancakes get small enough, feel free to simply flip with a spatula. You should end up with about 8 pancakes.
  • Place the cream cheese, butter, sugar, peppermint extract, salt and milk in a large bowl. Beat with a handheld mixer on medium speed until fully combined and light and fluffy, 3 minutes. Set aside.
  • Place the largest pancake on a flat cake stand. Spread some of the frosting over the top of the pancake, leaving a 1/3-inch border on the outside. Sprinkle with some of the crushed candy canes. Continue stacking the pancakes with the frosting and the candy canes, going down in size as you stack. Insert a long skewer through the center of the cake to hold the layers in place. Trim the skewer so that the top is flush with the top of the cake, and cover with more frosting. Decorate with mini meringue cookies on top if desired.

This Christmas treat was published in the local paper 3 Xmas's ago along with other white chocolate recipes and for the next few days, you couldn't find white chocolate anywhere! These are incredibly easy and very tasty; looks great wrapped in cellophane and given as a little gift.

1 (170 g) package white chocolate baking squares, preferably baker's brand
2 red-and-white candy canes

Steps:

  • Break candy canes into 2 or 3 pieces and place in a plastic bag and close top; smash with kitchen mallet to take out your frustrations and pulverize the candy.
  • In a small bowl, melt chocolate in microwave oven with Medium-Low power, checking every 30 seconds or so; white chocolate burns easily even in the microwave so better safe than sorry.
  • Cover a cookie sheet with wax paper.
  • Stir candy cane crumbs into melted white chocolate and stir well to combine.
  • Pour chocolate mixture onto wax paper, spreading thin with a spatula.
  • Stash cookie sheet in fridge about an hour or until it hardens.
  • Hold wax paper by one corner and start peeling it back, breaking off pieces of the bark; store pieces in airtight container in fridge.
  • Keeps well.

I got this from the Kraft magazine..I made it for Christmas and it was a big hit!! I used a handful of chocolate chips instead of semi sweet chunks and used an entire tub of cool whip for the icing!

1 (18 ounce) package chocolate cake mix (2 layer)
1 (42 g) package instant chocolate pudding mix (enough for 4 portions)
4 eggs
1 cup sour cream
1/2 cup vegetable oil
1/2 cup water
4 semi-sweet chocolate baking squares (chopped)
1 cup candy cane (crushed)
3 cups Cool Whip

Steps:

  • Preheat oven to 350 Fahrenheit.
  • Grease 2 9" round cake pans.
  • Beat cake mix, pudding mix, eggs, sour cream, oil, and water in large bowl with electric mixer on low until just moist.
  • Beat on medium speed 2 minutes until well blended.
  • Stir in chopped chocolate and 2 Tablespoons of the crushed candy canes.
  • Spoon batter into pans.
  • Bake 50 minutes to 1 hour until toothpick comes out clean.
  • Cool in pan for 10 minutes then cool completely on wire rack.
  • Place one layer of the cake on a plate and spread evenly with 1 cup of cool whip.
  • Top with remaining cake layer and frost with the rest of the cool whip.
  • Garnish with crushed candy cane.

2 cups vanilla wafer crumbs (60 wafers or an 8 oz box minus 1/4 c)
6 tablespoons unsweetened cocoa
1/3 cup confectioners' sugar
6 tablespoons butter, melted
3 tablespoons water
3/4 cup chocolate chips
1 cup heavy cream (Note, when you purchase the cream remember you will need additional cream for the topping.)
1/2 cup confectioners' sugar
1 1/2 cups miniature marshmallows
1/4 cup milk
1 cup heavy cream (1/2 pint)
1/2 cup finely crushed candy cane (7 regular canes)
sweetened whipped cream, for toping

Steps:

  • Chocolate Crumb Crust: Combine crumbs, cocoa and sugar in a bowl.
  • Stir in butter.
  • Press mixture onto bottom and up sides of a 9" pie pan.
  • Bake at 350 degrees for 8 to 10 min.
  • Cool.
  • Chocolate Layer: Bring water to a boil in med mixing bowl.
  • Remove from heat; immediately add chips, stirring until melted (return to very low heat, stirring constantly, if needed).
  • Cool to room temperature.
  • In large mixing bowl (which has been chilled, along with beaters), whip heavy cream with confectioners sugar until stiff; fold into the chocolate mixture.
  • Spoon into crust; chill.
  • Peppermint Layer: Break candy canes into chunks; blend until finely crushed (resembles powder).
  • Combine marshmallows and milk in wok.
  • Cook, stirring constantly, over low heat until marshmallows are melted.
  • Cool to slightly warm or glops.
  • Prepare bowl as before, whip heavy cream until stiff; fold in crushed candy.
  • Stir gently into marshmallow mixture; chill 10 min.
  • Spoon onto chocolate layer; chill until set.
  • Freeze, if desired.
  • Top with Sweetened whipped cream.
  • Garnish with Peppermint chips or coarsely crushed candy canes just before serving.
  • May be served chilled or frozen.
