THE BEST OATMEAL COOKIE BARS
These are the BEST Oatmeal Cookie Bars you'll ever bake! Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required!

- Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
- In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
- Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
- Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
- Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
- Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

- Preheat oven to 300 degrees F (150 degrees C). Line cookie sheets with parchment paper.
- In a medium bowl, cream together the butter and brown sugar. Stir in the egg and vanilla until smooth. Sift together the flour, salt and baking soda, stir into the creamed mixture. Then stir in the rolled oats. Finally, stir in the pecans chopped candy bar pieces.
- Drop dough by rounded tablespoons onto the prepared cookie sheets, and flatten slightly. Bake for 10 to 18 minutes in the preheated oven. Cookies will have a dry appearance when finished baking.

- Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
- Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
- Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
- Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.
CHOCOLATE OATMEAL ALMOST-CANDY BARS

- Center rack in the oven and preheat the oven to 350 degrees. Butter a 9X13 inch pan and place the pan on a baking sheet.
- Whisk together the flour, baking soda, salt and cinnamon.
- Using an electric mixer, beat the butter on medium speed until it is soft and creamy. Add the brown sugar and beat for 2 minutes, then add the eggs one at a time, beating for a minute after each egg goes inches Beat in the vanilla. The mixture should be light and fluffy. Reduce the mixer speed to low and add the dry ingredients, mixing just until they disappear. Still on low speed, stir in the oats and 1 cup of the chopped walnuts.
- Set aside 1 1/2 to 2 cups of the mixture, then turn the remaining dough into the prepared 9X13 pan. Set aside while you prepare the next layer.
- Set a heat proof bowl over a saucepan of simmering water. Put the condensed milk, chocolate chips, butter and salt in the bowl and stir occasionally until the milk is warm and stir in the vanilla and 3/4 cup walnuts.
- Pour the warm chocolate over the oatmeal crust, then scatter the remaining oatmeal mixture over the top. Don't try to spread the oatmeal, and don't worry about getting the topping even. It will create a a pretty open lacy pattern as it bakes.
- Bake for 25 to 30 minutes, or until the topping is golden brown and the chocolate layer is dull and starting to come away from the sides of the pan. Transfer the baking pan to a cooling rack for about 2 hours.
- Run a blunt knife between the edges of the cookie and the pan and carefully turn the cookie out onto a rack. Turn right side up, then refrigerate for at least 1 hour before cutting. ( Ok so there was no way my fam could wait that long. I was able to cool it for 2 hours but that was it. It was fabulous a bit warm and also later when it was refrigerated!).

- 1. SPRAY AN 11x13 BAKING PAN. UNWRAP N CHOP ALL CANDIES.

- In large bowl, combine flour and sugar. With pastry blender or 2 knives, use in scissor fashion, cut in butter until mixture resembles coarse crumbs. Combine egg yolk and vanilla. Add to crumb mixture, stirring until dough holds together. Press into 15x20-inch jellyroll pan. Bake 15-20 minutes at 350F until lightly browned.

These cookies are absolutely amazing! My aunt made these one Christmas and I fell in love with them. They are so easy to make, and hey are always a party pleaser. You can also use any kind of mini candy bar. I have used mini Twix before. And I am sure 3 Musketeers and Milky Way are just as great! This original recipe was only for 24 cookies. So you can cut every thing in half.

- 1. Preheat oven to 350 degrees.
- 2. Cream together the butter and the sugars until fluffy, beat in the eggs and vanilla. Add the flour with the baking powder and salt mixed inches Stir until blended. Fold in gently the chopped candy bars. If desired, add a cup of chopped almonds, walnuts, pecans or other nut.
