QUICK & EASY CARAMELIZED PEARS

Steps:
- In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. Stir in vanilla and pinch of salt. Serve warm with ice cream.

GOAT'S CHEESE, PEAR & CANDIED PECAN SALAD
This extra-special vegetarian starter is bursting with contrasting flavours and textures, such as spiralized pear, crunchy roasted nuts and creamy cheese

- Heat oven to 200C/180C fan/gas 6 and put the pecans on a non-stick baking sheet. Sprinkle over the sugar and maple syrup, and toss to combine. Roast for 5-7 mins until golden, then leave to cool completely before roughly chopping.
- Meanwhile, make the dressing by combining the ingredients and seasoning well. In a large bowl, combine the pear with the rocket, and toss with a little of the dressing.
- Just before serving, blowtorch or grill the goat's cheese rounds until golden. To serve, put the remaining dressing in a squeezy bottle and swirl around the edge of the plate. Put the pear and rocket salad in the middle, scatter over the nuts and top with the goat's cheese.

CANDIED PEARS
This dish is really sweet, but oh so good. I loved it paired with some biscuits. But, this would be wonderful served alongside some pork too.

- 1. Peel and cut up a bunch of fresh pears. Measure them out to get 8 cups. Put them in a bowl and juice 1 fresh lemon on top of them. Stir til all are covered. Set aside.
- 2. Melt butter in medium size stick proof material pan.
- 3. Add sugar and water. Cook on med. high until all is blended and sugar is melted.
- 4. Then add pears and spices. Cook down on med for about 1 hour stirring constantly until tender. If they are harder cook longer. If they are softer cook less. You just need to get them to the consistancy that you like.
- 5. Put in Mason jars until 1" from the top. Cook in water bath to seal jars. Water bath is a super wide bottom pan that you fill about 2" tall in water. Then you put the mason jars down into already warm bath water and cook for approximately 10-15 min til it seals all jars.
SPINACH SALAD WITH CANDIED PEARS, PECANS AND BRIE
The combination of these ingredients is fantastic. The candied pecans give a nice little crunch to the salad. Add some seafood or grilled chicken and you have a full meal. To save time buy the prepackaged washed baby spinach. This recipe came from Rose Reisman's "Secrets for Permanent Weight Loss" cookbook.

- Preheat oven to 350 degrees. Spray baking sheet with vegetable spray.
- To make the candied pecans, rinse the pecans with cold water.
- Drain but do not let dry.
- In a small bowl, combine the icing sugar, cinnamon, allspice and nutmeg.
- Dip the pecans in this mixture to coat well.
- Spread them on the prepared baking sheet.
- Bake for 15 minutes.
- Cool and Chop.
- To make the salad, combine the spinach, radicchio, pear and brie in a large bowl.
- To make the dressing, whisk together the orange juice concentrate, olive oil, vinegar, garlic, honey and mustard.
- Pour over the salad and toss to coat.
- Garnish with the candied pecans and chicken/seafood (if using.).
