Mom passed this recipe on to me- much to my husband's delight! We like to take the flavorful nuts to all sorts of gatherings, from fancy holiday affairs to casual luncheons.

Ingredients

1 large egg white
2 teaspoons garlic powder
2 teaspoons celery salt
1/4 teaspoon salt
1/2 teaspoon liquid smoke
3 cups whole unblanched almonds, toasted and cooled

Steps:

In a bowl, whisk egg white until foamy. Add garlic powder, celery salt, salt and liquid smoke; stir until blended. Add almonds and stir until well coated. Evenly spread almonds in a 15x10x1-in. baking pan coated with cooking spray. , Bake at 300° for 30 minutes, stirring every 10 minutes. Cool. Store in an airtight container.

1/2 cup water
1 1/2 cups sugar
1 teaspoon cinnamon (or more to taste)
1 lb almonds, with skins

Steps:

Bring water, sugar and cinnamon to a boil;stirring constantly.
Add almonds and toss to coat.
Remove almonds with slotted spoon.
Arrange on greased baking pan.
Bake at 350 for 20 minutes, basting twice with reserved syrup.
Cool.
Store airtight.

2 tablespoons melted butter
1 1/2 teaspoons chili powder
1/2 teaspoon celery salt
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon basil
1/8 teaspoon onion powder
1/8 teaspoon cayenne
1 1/2 cups whole almonds (or both) or 1 1/2 cups pecan halves (or both)
1 tablespoon kosher salt

Steps:

Set oven to 350°F.
Mix all ingredients (first 9 ingredients) except the nuts and kosher salt; mix well.
Add nuts; toss to coat.
Arrange on cookie sheet.
Bake until nuts are toasted (watch closely as these will toast quickly!).
Toss with kosher salt (or 1/4 teaspoon or more regular table salt).
Store in an airtight container or freeze for up to 3 months.
