FRUITCAKE COOKIES
I make these cookies in place of Fruitcakes. They go much faster. These cookies will keep indefinitely in the refrigerator, or store in a closed tin after baking. They are better after several days. Best if made a week or two before Christmas, and hope some are left for Christmas

Steps:
- In a medium bowl, dredge candied fruit and raisins in 1 cup flour.
- In a large bowl, cream together brown sugar and butter. Beat in eggs. Gradually beat in bourbon and milk. Mix in remaining flour and spices. Stir in fruit and nuts. Refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C). Drop dough by teaspoonfuls, about 2 inches apart, onto ungreased cookie sheets.
- Bake for approximately 15 minutes. Remove from oven, and cool on wire racks.

- In a large bowl, mix the first five ingredients until blended. Divide mixture into three portions. Shape each portion into a 10x2-in. rectangle. Roll each rectangle in confectioners' sugar to coat. OATMEAL CANDIED FRUIT COOKIES

- Preheat oven to 350º.
- Beat together margarine and sugars until creamy; add eggs and vanilla, mix well. Add combined flour, baking soda, cinnamon, and mix well. Stir in oats, raisins, and candied fruit, mix well.

CANDIED FRUIT SLICES
This is a very prosaic name for a beautiful and delicious Christmas cookie, but it is the name Pillsbury, who originated the cookie, gave it. Candied cherries and nuts are added to a refrigerated cookie dough. When sliced, the fruit glistens in each slice. For the sake of appearance use equal parts of red and green cherries. You can even add candied yellow pineapple for more color in the cookies. I used to call these stained glass window cookies until a completely different cookie came out with that name (which tells you how old this recipe is!). But no matter what you call them, you'll enjoy their appearance on your cookie tray. Oh, you'll enjoy their taste, too! (Preparation time includes 4 hours chilling time.)

- Cream the butter. Gradually add the sifted confectioners' sugar, creaming well.
- Blend in the unbeaten egg and vanilla. Add the sifted flour; mix well.
- Stir in the pecan halves and cherry halves. (I like to substitute some yellow candied pineapple for a portion of the cherries to add more color to the cookies. Cut the pineapple into pieces about the size of the cherry halves.).
- Chill the dough 1 hour.
- Divide the dough into thirds. Shape into rolls 12 inches long. Wrap each roll in waxed paper or foil; chill at least 3 hours.
- Preheat oven to 325 degrees F. Cut each roll into slices 1/8th inch thick and place on ungreased cookie sheets.
- Bake in preheated oven for 13 to 15 minutes or until edges are delicately browned.

- In a large bowl, using an electric mixer on high, beat butter and sugar until light and fluffy, about 3 minutes. Beat in eggs yolks and vanilla. Reduce speed to low; add flour, baking powder, salt and dried fruit. Mix just until a stiff dough forms. Turn onto a floured work surface, cut dough into halves, and form each half into a 1½-inch thick log. Wrap in plastic and refrigerate at least 2 hours or up to 2 days.
- Preheat oven to 375F and line 2 large baking sheets with parchment paper.
- Cut logs into ¼-inch-thick slices and arrange about 1 inch apart on pans. Refrigerate 10 minutes, then bake until lightly browned around the edges and firm in the center, 12 to 15 minutes. - Preheat oven to 350 degrees F. Grease cookie sheets.
- In large mixing bowl, cream together eggs, butter and brown sugar. Mix baking soda with the milk and add to mixture. Stir in orange juice and bourbon. In a small bowl, lightly toss candied fruits with a small amount of flour until fruits separate easily. Add to mixture. Add flour, dates and pecans. Stir until well blended. Drop by teaspoons about 2 inches apart onto cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This is a great bread for tea at Christmas time when you don't like to make fruitcake. It is an old recipe that belonged to my mother, and really good.

- Grease an 8x5-inch loaf tin thoroughly. Preheat oven to 375 degrees F (190 degrees C).
- Beat eggs in a medium bowl. Add milk and melted butter; mix well.
- Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin. Let stand for 20 minutes.
- Place pan in center of oven on middle rack. Bake for 60 to 70 minutes. Turn out on wire rack, and allow to cool for several hours before slicing.

- Using the point of a sharp knife, cut the peels of the oranges, tangelos, or tangerines into quarters. Using the bowl of a spoon, loosen the peel from the pulp and membrane of the fruit, leaving the white pith attached to the peel. (Save the pulp of the fruit for another use.)
- Place the fruit peel in a 2-1/2-quart microwave-safe bowl Add enough cold water to the bowl to cover the fruit peel. Weight the peel down with a plate, if necessary, to keep the peel under the water. Let the fruit peel stand overnight weighted down in the cold water.
- Drain the fruit peel; rinse it thoroughly in cold water. Place the fruit peel in a 2-quart saucepan. Cover the fruit peel with fresh cold water and heat to boiling. Remove saucepan from heat; let stand 10 minutes. Drain fruit peel. Repeat the boiling and standing process three more times. (This help remove the bitter taste from the peel.) After draining the fruit peel for the last time, let it stand until thoroughly cooled.
- With kitchen scissors, cut the cooled fruit peel into strips about 1/4 inch wide. In a saucepan combine the 2 cups sugar and the 1/2 cup water. Cook over medium-high heat to boiling, stirring constantly with a wooden spoon to dissolve sugar. This should take 5 to 7 minutes. Carefully add the fruit peel strips to the saucepan.
