CANADIAN BACON-APPLE PIZZA

Steps:
- Heat oven to 400°F. Spray or lightly grease large cookie sheet (use dark pan for thin crust). Sprinkle sesame seed on cookie sheet. Unroll dough; place over seed. Cover with waxed paper. With rolling pin, roll dough into 16x13-inch rectangle; remove paper.
- Spread mustard over dough; sprinkle evenly with thyme. Layer bacon, apples and cheese over mustard, covering entire surface.
- Bake classic crust 14 to 18 minutes, thin crust 12 to 16 minutes, or until crust is golden brown and cheese is melted. Cut into 4 rows by 4 rows.

CANADIAN BACON, SWEET ONION, AND APPLE PIZZA
Steps:
- Preheat oven to 450 degrees F. Lightly spray 1 baking sheet with olive oil cooking spray; set aside.
- Press dough into a rectangle on a floured surface. Cut into quarters and place on prepared baking sheet with floured fingers. Top with apple butter, cheese, onion, apple, and Canadian bacon. Bake in oven 12 to 17 minutes or until crust is golden brown.
- Slice and serve.
CARAMELIZED ONION, APPLE AND BACON FLATBREAD PIZZA

- To make the flatbread:
- To a mixing bowl, add the flour, baking powder, baking soda and salt, mix. Add the yogurt, sugar and oil. Start mixing with a fork and add a little water and mix until the dough forms a ball. Use as much water as you need to, but you don't want it sticky. Turn the dough onto a floured surface and knead until the dough is soft and stretchy. Rub the inside of the mixing bowl with a little oil. Place the dough in the bowl and cover with plastic wrap or a towel. Place in the oven or microwave (without turning it on) or a warm space for 30 minutes until the dough has increased in size.
- To make the toppings (while the dough is resting):Cook the onions until they start to brown, about 30 minutes, stirring every 5 minutes. Add a pinch of salt and stir. When they start to brown, removed from the heat and set aside.
- Preheat oven to 500°F/260°C. Line a large baking sheet with parchment paper.
- Place the dough onto a lightly floured surface. Use your hands to shape into a rectangle. You can also make it round. Place the dough onto the baking sheet, brush with olive oil and bake for 5 minutes until it starts to turn brown (you don't want it brown yet). If parts bubble up, don't worry, they will flatten when you remove from the oven. If you're using a dark pan, it will cook faster.
- Remove from the oven and add the toppings: grated cheese, onions, apples and bacon.
- Return to the oven and bake until the cheese is melted, about 8-10 minutes. Again, it will be faster if using a darker pan.
- Top with chopped Italian parsley (optional), slice and serve.

PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
CANDIED BACON
Steps:
- Preheat the oven to 375 degrees F. Set a wire rack over a baking sheet.
- Spread the brown sugar on a plate. Coat the bacon on both sides of with the brown sugar, pressing to adhere. Lay the slices on the rack.
- Bake until dark brown and almost completely crisp (the bacon will continue to crisp as it cools), 20 to 25 minutes. Transfer to paper towels to cool. Crumble or chop before using.
CANDIED BACON

- Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
- Separate the bacon into strips and blot each dry. Spread the sugar on a large plate. Press both sides of each bacon strip in the sugar. Arrange the coated bacon on the prepared baking sheets. Sprinkle with any remaining sugar.
