This is a favorite with my father. They taste so good warm! Substitute any type of nuts you prefer.

½ cup water
1 cup white sugar
1 tablespoon ground cinnamon
2 cups whole almonds

Steps:

  • Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil; add the almonds. Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow to cool about 15 minutes.

Spiced Candied Almonds image

Peanut or canola oil
4 cups almonds
1 cup plus 1 tablespoon confectioners' sugar, sifted and divided
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1 tablespoon cocoa powder
Pinch salt, or more to taste
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large, heavy-bottomed skillet, heat about 1-inch of oil to 350 degrees F.
  • Bring a large pot of water to a boil. Add almonds and blanch for 30 seconds. Drain and transfer nuts to a medium bowl. While nuts are still hot and slightly wet, add 1 cup sugar and toss to coat nuts. Stir and toss until all the sugar has melted into the nuts; if bits of un-melted sugar remain on the nuts, they will not fry properly.
  • Stir the nuts again before frying. Using a large slotted spoon, transfer a few nuts to the hot oil, allowing the foam to subside before adding another spoonful. (Otherwise, the oil could foam over and burn you.) Fry in small batches until the nuts are medium brown, about 45 seconds; be careful not to overcook. Scatter on an unlined baking sheet to cool slightly.
  • In a small bowl, stir together cayenne, cinnamon, cocoa, remaining 1 tablespoon sugar, a pinch of salt, and pepper.
  • While the nuts are still warm, transfer them to a bowl and sprinkle evenly with about half of the spice mix. Toss well to distribute the spices and then taste a nut. Add more spice mix, to taste, and toss well after each addition. When cool, pack in an airtight jar. They will keep at room temperature for at least 2 weeks.

5 cups sliced almonds (1 pound package)
1/2 cup sugar
3 tablespoons butter
2 teaspoons cinnamon
1 teaspoon cumin
1 -1 1/2 teaspoon smoked paprika (mild or hot)
1 teaspoon vanilla
sea salt

Steps:

  • Place a large sheet of foil on a work surface. Spray with cooking spray or rub a teaspoon of oil over foil with a paper towel.
  • Place sugar in a large non-stick saute pan and heat over medium heat, occasionally tipping and swirling the sugar until it is all melted into a pale golden syrup.
  • Lower heat immediately and add butter, cinnamon, smoked paprika and vanilla. Stir until well combined and all butter is incorporated into the sugar syrup.
  • Add the nuts and stir gently to coat. Don't worry if you have some clumps of caramelized sugar. The clumps will melt as you continute to saute the almonds.
  • Cover and continue to cook on low, stirring every minute or so until almonds are a golden brown. Watch very carefully as they can go from beautiful to burned very quickly. Turn out onto prepared foil and sprinkle liberally with sea salt. Spread out on foil to cool.

3/4 cup sugar
3 tablespoons water
1 egg white, lightly beaten
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon allspice
1/4 teaspoon nutmeg
2 cups pecan halves
1 1/2 cups whole almonds

Steps:

  • Preheat oven to 250 degrees.
  • In a large bowl, mix together everything but nuts.
  • Add the nuts and stir until coated well.
  • Spread evenly onto a greased cookie sheet or baking pan.
  • Bake for 45 minutes, stirring every 15 minutes or so.
  • Spread out on waxed paper to cool.
  • Store in a zipper bag or airtight container.

This is my mom's recipe; I don't know where she got it, but she sent them to me in personal 'care packages' for many, many years. They are very quick and easy to make, and they taste delicious.

1 cup sugar
1 pinch salt
1/2 teaspoon ground cinnamon
6 tablespoons milk
1/2 teaspoon vanilla extract
2 -3 cups nutmeats (Best with walnuts! But works well with pecans or skin-on whole almonds)

Steps:

  • Combine sugar, salt, cinnamon and milk.
  • Cook slowly to soft ball stage (236-240 degF).
  • Remove from heat.
  • Immediately add vanilla and nuts.
  • Stir carefully until coating loses its gloss and is creamy.
  • Turn out on wax paper.
  • and spread out nuts using 2 forks, being careful not to get burned.
  • Cool to room temperature before storing.

  • Combine all ingredients in a medium size heavy skillet. Heat over medium-high heat to boiling.

  • Transfer to a non-stick baking sheet; break nuts apart while still warm. Let cool.
