- Preheat oven to 350°. Cut squash in half lengthwise; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. Arrange squash in a shallow baking pan; cover with foil. Bake until just tender, 25-30 minutes. , Combine sugar and butter; spread over squash. Bake, uncovered, 15-20 minutes longer, basting occasionally.

- Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 2 tablespoons of butter, and 2 tablespoons of brown sugar into the cavity of each half.
- Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking. When the flesh is soft, scoop out soft flesh with the sugar and butter, and place it in a bowl. Mash it a little to blend the ingredients. Serve in a bowl, or your could even serve it in the shells.

Steps:
- Preheat oven to 350 degrees F.
- Grease a baking sheet and a baking dish.
- Halve the squash lengthwise and clean.
- Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
- Don't turn off the oven.
- While the squash cooks, melt the butter, and stir in the remaining ingredients.
- Keep the mixture warm until it is needed.
- Arrange the squash, cut sides up, in the baking dish.
- Spoon the butter and seasonings equally over the sections.
- Bake the squash another 15 minutes, until it is very soft.
- Serve the squash hot.
DULCE DE ZAPALLO OR CANDIED SQUASH IN SPICED SYRUP
Steps:
- Wash the squash well, slice it open and remove all the seeds and membranes.
- Cut the squash into medium sized pieces and place them in a large pot with the chunks of panela and spices.
- Add the water and bring to a boil over medium heat, boil for about 30 minutes with the lid on.
- Uncover and simmer for about 1 hour or until the syrup thickens.
- Remove from heat.
- Can be served warm or room temperature with a slice of fresh cheese. Can also be used as a filling for empanadas and tarts or pies.
MICROWAVE ACORN SQUASH
Acorn squash never tasted so good. Acorn squash is microwaved then broiled with butter, brown sugar, and pumpkin pie spice.

- Use a heavy knife to cut the squash in half from the stem to the end of the squash. Use a spoon to scoop out and discard the seeds and the stringy bits from the squash.
- Place the squash cut side down in a microwave-safe baking dish. Add 1/2 cup water to the dish and microwave the squash for 15 to 20 minutes. The squash will be done when you can easily pierce it with a fork.
- Set your oven to broil.
- In the microwave or on the stovetop, melt the butter and stir in the brown sugar, pumpkin pie spice, and salt. Place the microwaved squash in an ovenproof dish, and drizzle the butter over the squash.
- Broil for 5 to 7 minutes. The butter will begin to bubble and the brown sugar will begin to caramelize. Serve immediately.

CANDIED ACORN SQUASH RINGS
Acorn squash is the only winter squash I have ever made. I guess I should try other ones. But, this one is plenty good! Choose from two toppings. Original recipes from Better Homes and Gardens New Cookbook 1978. Tweaked by me.

- 1. Rinse whole squash; dry. Prick skin with a fork, all over. Place in large baking dish, and cook in microwave oven for about 10 minutes, or until soft. Let stand 5 minutes.
- 2. Preheat stove oven to 350°F. Cut acorn squash in half, remove seeds and any stringy material from the insides. Discard seeds & ends of squash. Slice into 1 inch slices.
- 3. Return slices to baking dish. Season very lightly with salt. Combine brown sugar and butter. Spread on squash slices.
- 4. Bake, uncovered, in oven for 15-20 minutes, basting occasionally.
- 5. VARIATION: Mix maple flavored syrup, spices, and butter, (no brown sugar), together in a glass measuring cup. Microwave for 15 seconds. Pour over squash slices. Follow step #4.
