Steps:
- In a cast-iron or other heavy skillet, cook bacon until crisp. Remove to paper towels to drain. In drippings, saute onion and potatoes until potatoes are browned, about 5 minutes. Push potato mixture from center to sides of pan. Pour eggs into center; cook and stir gently until eggs are set and cooked to desired doneness. Stir to combine eggs and potato mixture., Season with salt and pepper. Sprinkle with cheese and bacon; let stand until cheese melts.

This is a recipe my mother used to make when we were camping. It's warm, hearty, and a good way to start a cold day in the morning, camping or otherwise. Serve in a bowl with toast and coffee for a warming and hearty breakfast.

Steps:
- Cook and stir bacon in a skillet over medium heat until crispy, about 5 minutes. Transfer to a paper towel-lined plate to drain, discarding most of the grease.
- Return skillet to the stove and add olive oil; heat over medium heat. Add potatoes, salt, and pepper; cook and stir until browned and somewhat crispy, about 10 minutes.
- Mix onion into potatoes and cook until onion is translucent, about 5 minutes. Return bacon to the skillet; cook and stir until heated through, 1 to 2 minutes.
- Pour eggs over potato mixture; cook and stir until eggs are set, 5 to 6 minutes.

My grandmother used to make this for my granddad. She always believed in hearty breakfasts. I only make this about once a year because it is not very healthy but nonetheless, it is delicious.

Steps:
- Fry bacon in a medium skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet.
- Set bacon aside to drain on papertowels.
- Add green pepper, onion, and potatoes to skillet; cook over medium heat for about 5 minutes or until the potatoes are browned.
- Sprinkle cheese over potatoes, and stir until cheese melts.
- Pour eggs into skillet; cook over low heat, stirring gently, until done.
- Season to taste with salt and pepper.
- Sprinkle with bacon, and serve immediately.
CAMPING FARMERS BREAKFAST
When I was younger, I used to go camping with our church youth group and we would always make sure that this was included on the menu. It's one of those recipes that you know everyone would like. This is scaled down. Note, this is not a diet meal!

Steps:
- Cook potatoes with their skins in boiling salted water until done.
- Cool, peel or leave skins on, cube or slice.
- Cut bacon in small pieces and fry on medium heat to desired crispness. Drain on paper towel.
- Add aprox. 2 tbls. butter to the bacon fat and fry onions until transparent.
- Add the potatoes to the pan with the onions and fry until crust forms. Return bacon.
- Crack the eggs into the potatoes and scramble them around with everything. Salt and pepper to taste. Be careful with the salt, since the bacon is salty. Finish with parsley.
- Good as a side dish, breakfast of course, or as a main meal for 2 with a green salad.
- Cook time is after the potatoes have cooled.

- Camping Chilaquiles. There’s no shortage of ways to make this traditional Mexican dish, but this version from The Adventure Bite is tailor-made for camping.
- Johnny Apple Seed Oatmeal. There’s an overwhelming number of ways to prepare oatmeal, but Megan and Michael over at Fresh Off the Grid keep things simple and tasty with their Johnny Appleseed Oatmeal.
- Campfire Frittata. In order to get our toddlers to start eating frittatas, my wife and I referred to them as “egg pizzas.” It worked like a charm, and now there’s a small part of me that will always think of this recipe as a Campfire Egg Pizza.
- Farmer’s Breakfast Skillet. Nobody does breakfast like farmers, at least from what I’ve read in East of Eden, so it makes sense that a Farmer’s Skillet Breakfast would be ideal for camping.
- Campfire Potatoes. Potatoes are a quintessential camping meal that work for breakfast, lunch or dinner. In the morning they’re a nice substitute for thinner hash browns, and using Yukon Golds cut in half will help speed up the cooking process.
- 3-Ingredient Pancakes. Per our children, the dinner calendar on our fridge has “breakfast” scrawled on one day a week, and I’m not complaining. To take the routine on the road, we dig these 3-ingredient pancakes – eggs, milk, flour – for low-maintenance short stacks.
- Campfire Breakfast Burger. Made-from-scratch black pepper biscuit mix makes this breakfast burger an immediate winner in our book, but throw in an egg and sausage patty and now we’re wiping the drool off our beards.
- Maple Smoked Pumpkin Apple Cake. Here’s the deal: when you’re camping, desserts and breakfasts are pretty much the same thing. So we don’t feel bad about presenting Wildwood Grilling’s pumpkin apple cake as a legit morning option.
- Campfire French Toast. French toast is our standard go-to at local places like Chompie’s, and there’s no reason we can’t enjoy the same pleasure out in the wild.
- Breakfast Burritos. In Arizona, there’s a saying about breakfast burritos. I don’t remember what it is, but I know that growing up in the Southwest means breakfast burritos and a lot of them.
