This is easy as pie... no pun intended. The smokey flavor from the wood fire puts a great twist on an old favorite and with the help of a pizza stone, doing this over an open fire is easier than you may think.

1 pound refrigerated pizza dough
¼ cup pizza sauce
½ cup shredded mozzarella cheese
½ cup sliced pepperoni

Steps:

  • Place pizza stone on grill directly over wood fire. You may need to begin by spreading out the wood if the flames are too tall. Roll out the pizza dough to desired thickness. Place it on the pizza stone and cook 10 minutes on one side until golden.
  • Remove from the fire and on the cooked side, spread the pizza sauce in an even layer over dough leaving about a half inch around the rim of the pizza dough bare. Sprinkle mozzarella cheese evenly on top of the sauce, followed by the pepperoni slices.
  • Place uncooked side down, back on the pizza stone. Cover with a foil tent and cook until cheese has melted, about 10 minutes more. Transfer pizza to a cutting board and let cool slightly before cutting and serving.

My kids used to love sitting around the campfire and making these things. They would have two pie irons going all the time. Often times we didn't have Pepperoni and they would use ham or other meats and mushroom pieces. Cooking time will vary from 3-5 minutes usually. Be sure to turn often and check the bread often after 2-3 minutes. Once your iron is hot they will cook quickly.

butter
mozzarella cheese
pizza sauce
pepperoni, sliced (or any type of sliced meat)

Steps:

  • Butter one side of two slices of bread.
  • Place one slice of bread on your pie iron with buttered side down.
  • Top with 1 1/2 tablespoons of pizza sauce, cheese and pepperoni.
  • Place other slice of bread on top with buttered side out.
  • Place pie iron on hot coals.
  • Turn often until bread is toasted.

15 flour tortillas (5-inch diameter)
2 tablespoons olive oil
1 cup pizza sauce, plus 1/2 cup
3 cups shredded mozzarella cheese, plus 1/2 cup
6 ounces pepperoni slices
3 cups roughly chopped spinach leaves
1/4 cup finely grated parmesan cheese, plus 2 tablespoons for topping
2 teaspoons italian seasoning
2 tablespoons finely chopped parsley

Steps:

  • Preheat oven to 400 degrees F. Place tortillas on a work surface and brush lightly with olive oil. Turn the tortillas over.
  • Spoon about 1 1/2 tablespoons pizza sauce into the center of each tortilla and use a spoon to spread into a circle, leaving a border of about 1 inch. Top the sauce with 1-2 tablespoons mozzarella then place 4 slices pepperoni in a row across the middle. The edges of the pepperoni can touch the edges of the tortilla. Top the pepperoni with spinach, a sprinkle of parmesan cheese and Italian seasoning.
  • Starting from the bottom of the tortilla, roll into a tight cylinder. Arrange the tortilla rolls in a circle in a 12-inch cast iron skillet with the rolls meeting at a point in the center. There should be a 1 1/2-2-inch space in the center.
  • Bake the pizza rolls until golden and crisp, about 20 minutes. Remove from oven and fill the center space with remaining 1/2 cup pizza sauce. Sprinkle 1/2 cup mozzarella over the rolls and return to the oven for another 5 minutes until cheese is melted and sauce is hot.
  • Garnish rolls with 2 tablespoons parmesan cheese and chopped parsley. Serve in the skillet.
