CAMPFIRE BANANA BOATS
These Banana Boats are stuffed with your favorite toppings, wrapped in foil, and cook right over your campfire for an easy, no-mess dessert!

Steps:
- Take a banana with its peel still on and cut it down the middle (along the concave side). Not all the way through, but until the tip of your knife just grazes the peel on the other side. Pull the peel and banana slightly apart.
- Stuff the chocolate and mini marshmallows (or other fillings, see notes) into the center of the banana.
- Wrap the banana in foil. Place on a campfire or grill until fillings have melted and banana has warmed through, about 10 minutes.
- Unwrap banana and top with crushed graham cracker. Enjoy!

- Place vegetables on three double thicknesses of heavy-duty foil (about 18 in. square). Top each with sausage, and dot with butter. Sprinkle with salt and pepper. Fold foil around each mixture; seal tightly. , Grill, covered, over medium heat 30 minutes. Turn and grill until vegetables are tender, about 30 minutes longer. Open foil carefully to allow steam to escape.

CAMPFIRE BANANA SPLITS
This was a recipe from my old Girl Scouting days. A very easy recipe for all ages that needs little adult supervision. Great for sleep-overs and backyard camping trips.

- Preheat the grill for high heat.
- Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray.
- Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later.
- Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired.
- Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon.

This was just an experimental recipe for a foil dessert bundle over a campfire one night. Lots of potential for variations but it's WONDERFUL just like this too.

- Tear off a large piece of foil. Spray the foil with the non-stick spray. Cut up banana and put into middle of foil. Cut up marshmellows and sprinkle over banana. Add peanut butter and chocolate chips. Bring up all corners of foil and create a small pouch. Throw on campfire and enjoy. Cooking times will vary depending on how close your pouch is to the flame.

CHOCOLATE BANANA BUNDLES
Another recipe I saved from my TOH Magazine (by Thomas Faglon), but I haven't tried it yet, posting for safe keeping. I think I would use the pre-made puff pastry shells and, therefore, slice the banana up before adding to the brown sugar/butter mixture, then add it to the shells and bake. You could even make this easier by using hot fudge topping.

- In a large skillet, melt butter over medium heat. Stir in brown sugar until blended. Add bananas; stir to coat. Remove from the heat; set aside.
- Unfold puff pastry. Cut into four rectangles. Place a halved banana in the center of each square. Overlap two opposite corners of pastry over banana; pinch tightly to seal. Place on parchment paper-lined baking sheets.
- Bake at 400° for 20-25 minutes or until golden brown. Drizzle with chocolate. Serve warm with ice cream and top with nuts if desired .
